โ€ข 07.11.2017 : Tuesday : Soup Of The Day โ€ข Lotus root liu wei (ๅ…ญๅ‘ณ) ๐Ÿท pork rib soup ๐Ÿฒ #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿผ What goes into my soup pot: 2 sections lotus root (cut into big slices) 1 packet liu wei soup herb (rinsed) 300g pork rib (parboiled) 1.8l water Pinch it salt ___________________________________________ Method: 1. Put everything except for salt in pressure cooker, make sure pressure valve is in lock position. Select soup function, adjust timing Keep To Pressure 59 minutes. 2. When done, put a clean towel over the pressure valve and release pressure slowly. Be careful not to scald yourself. 3. Season with salt and serve hot. OR Put everything except for salt in a pot, bring to boil and lower heat to simmer for 2 hours. Season with salt. โ€ข Usually I prefer to make my soup the old school way on the stove and let it simmer for hours. However I didnโ€™t have the luxury of time today. We reached home passed midnight last night and everyone is beat from the trip. Had tons to unpack and clean in the morning. Iโ€™m amazed at myself I could still do a quick grocery shopping before attending the boyโ€™s classmateโ€™s birthday party lunch. โ€ข ๐Ÿ‘จ๐Ÿป๐Ÿ‘ฉ๐Ÿป๐Ÿ‘ฆ๐Ÿป โ€ข 07.11.2017 : Tuesday : Dinner : Homecook โ€ข Lotus root liu wei (ๅ…ญๅ‘ณ) ๐Ÿท pork rib soup ๐Ÿฒ Steamed Trio Egg ๐Ÿณ Stir Fried ๐Ÿฎ Beef with Black Bean Sauce and Asparagus ๐ŸŒฑ โ€ข Steamed Trio Eggs #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿผ Ingredients: 1/2 century egg (diced) 1 salted egg yolk (diced finely) 2 eggs 240ml chicken broth 1 tsp mirin 1 tsp soy sauce ___________________________________________ Method: 1. Crack eggs in a mixing bowl, lightly beat the eggs then add chicken broth, mirin and soy sauce. Continue to beat the egg until well combined. 2. Pour egg mixture into steaming bowl. Add century eggs and salted egg yolk. 3. Cover the steaming bowl/plate with cling wrap** and steam on medium high heat for 15 minutes. 4. Serve hot. **optional; wrapping with cling wrap will make the steam egg surface smoother. โ€ข Inspired by the steamed trio eggs we had at Tek Sen Restaurant in Penang which the boy absolutely love. I try to replicate it. โ€ข I usually use a ratio of 1 egg : 110ml water. My recipe is no different from others BUT if you read on below, youโ€™ll find a very lazy way of mine ๐Ÿ˜œ โ€ข Steamed Cod Fish with Soy Sauce #lifeasmrsyeocooksrecipe ๐Ÿ‘‡๐Ÿผ Ingredients: 1 cod steak (washed and pat dry) 1 tbsp soy sauce** 1 small cube cane sugar/rock sugar (optional) 1/2-1 tbsp garlic/shallot oil Spring onion (rinsed and cut to fit steaming plate) **i use Tai Huaโ€˜s Seafood Soy Sauce. โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”โ€”- Method: 1. Line steaming plate with spring onion. Place fish on spring onion. 2. Drizzle soy sauce and garlic/shallot oil on fish. Place cane/rock sugar beside fish. 3. Place fish on a steamer rack in a wok of boiling water. Cover and steam for 8 mins (depending on the size of the fish) 4. Garnish with shredded spring onion. Serve hot. โ€ข Note: 1. Usually oil is heated in a separate pan, to be drizzled on fish before serving. However, I am LAZY (read: like a pig) so I steam it together with the fish ๐Ÿ˜ 2. When fresh cod fish is used, thereโ€™s no need to drain away the steaming liquid. The juice from steaming a cod is very sweet!
