I think one of my favorite dynamics that I really need to write more about is Ema and Nahyuta. Nahyuta deeply respects Ema and her adherence to her principles (also they heard her infodump once and got a massive friend crush). However, their only reference for friendship is the palace and Dhurke/Datz, so in their mind friendship is either cold professionalism or really fucking gay
Naturally, when Nahyuta tries to be friendly it comes across as flirting, so Ema tries to make it known she is, in fact, a lesbian. Nahyuta mishears lesbian as Lebanese, which causes a whole Slew of miscommunication issues. At one point they mention wanting to share her culture with them so she takes them to a gay bar and they are extremely confused because they thought the two of them were going to get tabbouleh

what parts of your lebanese heritage did you grow up with?
Mostly? The food. I grew up eating kibe, hummus and sfiha, which are popular where i live, but also tabbouleh, mjadra, babaghanoush and labneh (very rarely, but I enjoyed it). i learned how to make kibe and tabbouleh with my mom, they are some of the few recipes that got passed down to us
besides that, i don't know how to explain it, but my family acts very differently from non-lebanese families, as i've come to realize, growing up around mainly european families (mostly german, italian and portuguese). i think we kept a lot of the customs and stereotypes despite everything. again, don't know how to explain, i just know it's similar.
other aspects were much harder because we live very far away from lebanon, like movies and music, and many don't get translated to here, but my family always loved when a fellow lebanese descendant was acting or singing on TV, syrians and palestinians as well. nowadays with the internet i'm trying to make up for this.

i'm sorry it's just so unfunny i had to rant to someone so you don't even need to post this but i got interested in a food review account and was binging their videos but when they came to this shawarma place in nyc they straight up said that they tossed in some 'israeli' salad when tabbouleh IS of lebanese origin (and just in general of levantine roots so you can't also pin it down to one specific place if someone would argue on that with me), and the fact that the owner is arab-'israeli' too breaks my heart because if they said jewish i wouldn't have blinked twice since you know how muslims, christians and jewish people all populate/populated the middle-eastern land but for him to straight up market and represent it as 'israeli' salad was so... it's just sad because i genuinely respect all the jewish/christian/muslim palestinians/arabs who stand against the injustice and brutality taking place, whether it's from a comment, as an owner of a business or trying to help out the most they can on-site
wait no i get what ur saying bc i 100% agree that the middle east has always been an incredible mix of cultures and peoples and thousands of years of history and the culture (and cuisine) was shared across the religions who have existed there for so long and most of the countries as we know them by modern day are pretty recent (like israel as a state came abt after wwii....) so u cant just go 'oh yes this is from so and so country' esp abt a country thats been around for less than a 100 years too....they say tabbouleh has been around since the mesopotamian days or the modern day regions of what is now lebanon and syria

I’ve had an uptick in struggling with food and haven’t been cooking much outside of my weekly batch of bits and bobs lentils for breakfast but this weekend I made vegan kibbeh and a big tabbouleh salad (which I took some liberty with by adding more veg and fruit like pomegranate arils, sliced shallot, fresh dill and coriander, radishes). I had a French Lebanese classmate in French class throughout childhood and rmbr kibbeh from his family (usually made with minced lamb & beef) - to veganise this version I used pumpkin and butternut squash for the top and bottom layers and the middle layer for the filling has mashed & whole chickpeas, fine bulgur, walnuts, red lentils, sesame seeds, grated orange peel and a bunch of spices. Usually it’s shaped into little ovals or balls but doing it in a layer in a square pan and scoring it is a much faster version assembly-wise

beef tongue. usually with mujadra on the side. my husband's favourite, i learned to make it from my MIL for him.
couscous. lots of work bc i make it from scratch but i do it every weekend without fail, always with a different side dish so its fun. the only thing in our house that everyone agrees on.
shakshuka! my go-to lazy meal when i don't feel like cooking. we eat it on bread with hummus and avocado and its. heavenly.
kibbeh and tabbouleh. my fav lebanese dish. my mum used to make it a lot when we were kids. taste of home.

as you said, within the Levant region recipes can vary. kibbeh, tabbouleh, hummus, falafel, these foods may have the same base idea and come from the same region, but each country has their own way of doing it (and it can differ between families. No offense to my friend Unori but my teta’s tabbouleh is better). I’m not gonna call the Palestinian way of making a manouche a Lebanese manouche. That’s fucking wrong
I do want to say re:food appropriation, for Palestinians it is a very very very sensitive issue. I don't know a single Palestinian who doesn't react vehemently to calling food "Israeli." One, because you have to recognize that this is within a larger pattern of completely erasing Palestinian identity, and two, because food is an essential core part of culture, where historical, familial instruction should be acknowledged.
I find it incredibly.... insulting to say "well food can be exchanged between cultures and people, so what's the big idea?" and neglect the fact that even within the Levant, there is a diverse array of cooking styles. To call certain dishes "Israeli" especially within the context of how the state of Israel was established, plays into the erasure of Palestinians.
It's often necessary to attribute the food we eat to specific cultures. For example, I, a Palestinian, would never claim ownership over Macarona Bil-Bashamil, or Yalenji, because they're "Arab." That's just not how food culture works. Different cultures, different climates, different environments all contribute to the food we eat and the clothes we wear. Food in itself is political because of how heavily it is tied to a location in which things are grown and raised.
Food is what builds community. Women, young and old, pass this knowledge throughout generations. And ESPECIALLY between peasant families that grow and raise the very flora and fauna we rely on in our dishes. This is a professional sort of knowledge that we celebrate and consider incredibly important. To strip our very food of our identity is not only insulting, but negates the centuries worth of food culture we've established in favor of homogenization. So yes, it IS possible to appropriate food, especially when you do not acknowledge the centuries worth of knowledge shared.
