I think one of my favorite dynamics that I really need to write more about is Ema and Nahyuta. Nahyuta deeply respects Ema and her adherence to her principles (also they heard her infodump once and got a massive friend crush). However, their only reference for friendship is the palace and Dhurke/Datz, so in their mind friendship is either cold professionalism or really fucking gay
Naturally, when Nahyuta tries to be friendly it comes across as flirting, so Ema tries to make it known she is, in fact, a lesbian. Nahyuta mishears lesbian as Lebanese, which causes a whole Slew of miscommunication issues. At one point they mention wanting to share her culture with them so she takes them to a gay bar and they are extremely confused because they thought the two of them were going to get tabbouleh

i'm sorry it's just so unfunny i had to rant to someone so you don't even need to post this but i got interested in a food review account and was binging their videos but when they came to this shawarma place in nyc they straight up said that they tossed in some 'israeli' salad when tabbouleh IS of lebanese origin (and just in general of levantine roots so you can't also pin it down to one specific place if someone would argue on that with me), and the fact that the owner is arab-'israeli' too breaks my heart because if they said jewish i wouldn't have blinked twice since you know how muslims, christians and jewish people all populate/populated the middle-eastern land but for him to straight up market and represent it as 'israeli' salad was so... it's just sad because i genuinely respect all the jewish/christian/muslim palestinians/arabs who stand against the injustice and brutality taking place, whether it's from a comment, as an owner of a business or trying to help out the most they can on-site
wait no i get what ur saying bc i 100% agree that the middle east has always been an incredible mix of cultures and peoples and thousands of years of history and the culture (and cuisine) was shared across the religions who have existed there for so long and most of the countries as we know them by modern day are pretty recent (like israel as a state came abt after wwii....) so u cant just go 'oh yes this is from so and so country' esp abt a country thats been around for less than a 100 years too....they say tabbouleh has been around since the mesopotamian days or the modern day regions of what is now lebanon and syria
#also i could feel like i could rant abt this further as a muslim but i do nawwwt want my words to be twisted or misinterpreted#answered

I’ve had an uptick in struggling with food and haven’t been cooking much outside of my weekly batch of bits and bobs lentils for breakfast but this weekend I made vegan kibbeh and a big tabbouleh salad (which I took some liberty with by adding more veg and fruit like pomegranate arils, sliced shallot, fresh dill and coriander, radishes). I had a French Lebanese classmate in French class throughout childhood and rmbr kibbeh from his family (usually made with minced lamb & beef) - to veganise this version I used pumpkin and butternut squash for the top and bottom layers and the middle layer for the filling has mashed & whole chickpeas, fine bulgur, walnuts, red lentils, sesame seeds, grated orange peel and a bunch of spices. Usually it’s shaped into little ovals or balls but doing it in a layer in a square pan and scoring it is a much faster version assembly-wise

as you said, within the Levant region recipes can vary. kibbeh, tabbouleh, hummus, falafel, these foods may have the same base idea and come from the same region, but each country has their own way of doing it (and it can differ between families. No offense to my friend Unori but my teta’s tabbouleh is better). I’m not gonna call the Palestinian way of making a manouche a Lebanese manouche. That’s fucking wrong
I do want to say re:food appropriation, for Palestinians it is a very very very sensitive issue. I don't know a single Palestinian who doesn't react vehemently to calling food "Israeli." One, because you have to recognize that this is within a larger pattern of completely erasing Palestinian identity, and two, because food is an essential core part of culture, where historical, familial instruction should be acknowledged.
I find it incredibly.... insulting to say "well food can be exchanged between cultures and people, so what's the big idea?" and neglect the fact that even within the Levant, there is a diverse array of cooking styles. To call certain dishes "Israeli" especially within the context of how the state of Israel was established, plays into the erasure of Palestinians.
It's often necessary to attribute the food we eat to specific cultures. For example, I, a Palestinian, would never claim ownership over Macarona Bil-Bashamil, or Yalenji, because they're "Arab." That's just not how food culture works. Different cultures, different climates, different environments all contribute to the food we eat and the clothes we wear. Food in itself is political because of how heavily it is tied to a location in which things are grown and raised.
Food is what builds community. Women, young and old, pass this knowledge throughout generations. And ESPECIALLY between peasant families that grow and raise the very flora and fauna we rely on in our dishes. This is a professional sort of knowledge that we celebrate and consider incredibly important. To strip our very food of our identity is not only insulting, but negates the centuries worth of food culture we've established in favor of homogenization. So yes, it IS possible to appropriate food, especially when you do not acknowledge the centuries worth of knowledge shared.

The History of Lebanese Food and Its Influence on Modern-Day Flavours
Lebanese cuisine is a vibrant and intricate tapestry woven from centuries of tradition, culture, and regional influences. The journey of Lebanese food from its ancient roots to its present-day flavours showcases the rich culinary heritage and how it has adapted to modern tastes. This article explores the history of Lebanese cuisine and its profound influence on contemporary dining experiences.
A Historical Overview of Lebanese Cuisine
The Ancient Foundations of Lebanese Food
The origins of Lebanese cuisine can be traced back thousands of years to the Phoenicians, an ancient civilisation that inhabited the region now known as Lebanon. The Phoenicians were seafarers and traders, introducing spices, herbs, and grains to their culinary practices. Their diet consisted of barley, wheat, olives, and figs, all of which remain staples in Lebanese cuisine today.
Roman and Ottoman Influences
Lebanon's strategic location in the Mediterranean brought it under the influence of numerous empires, including the Romans and Ottomans. Roman rule introduced wine, bread-making techniques, and olive oil production, while the Ottoman Empire added complex spices, pickled vegetables, and slow-cooked meats. Dishes like kibbeh and stuffed vine leaves evolved during this era, laying the groundwork for the bold flavours we associate with Lebanese food today.
Key Elements of Traditional Lebanese Cuisine
Fresh Ingredients and Seasonal Eating
The emphasis on fresh, locally sourced ingredients is a hallmark of traditional Lebanese food. From sun-ripened tomatoes to fragrant herbs like parsley and mint, the ingredients have always been tied to the land and seasons. This connection to nature ensures Lebanese dishes burst with freshness and vibrancy.
Spices and Aromatics
Spices such as sumac, cumin, cinnamon, and za’atar are central to Lebanese cooking. These flavours not only add depth but also reflect the cultural exchanges Lebanon experienced over centuries.
Mezze Culture: A Social Affair
Mezze, the small plates of appetisers shared among family and friends, is one of the most defining aspects of Lebanese cuisine. From creamy hummus to smoky baba ghanoush, mezze celebrates variety, balance, and the joy of communal dining.
The Modern Adaptations of Lebanese Food
Globalisation and the Diaspora
As Lebanese migrants settled worldwide, including Australia, they brought their culinary traditions with them. In cities like Newtown, Lebanese food has become a cherished part of the multicultural dining scene. The diaspora introduced traditional dishes while adapting them to local ingredients and dietary preferences, resulting in a fusion of old and new.
Health-Conscious Trends
Modern Lebanese cuisine has seamlessly aligned with health-conscious trends. The use of olive oil, legumes, lean meats, and fresh vegetables has made it popular among those seeking nutritious yet flavourful meals. Dishes like fattoush and tabbouleh are celebrated not only for their taste but also for their health benefits.
Plant-Based Variations
With the rise of vegetarianism and veganism, many traditional Lebanese dishes have been adapted to suit plant-based diets. Lentil-based stews, chickpea falafels, and grilled eggplant dishes are examples of how Lebanese cuisine caters to evolving dietary preferences without compromising flavour.
The Role of Lebanese Food in Newtown’s Culinary Scene
A Cultural and Culinary Hub
Newtown’s vibrant food culture is a reflection of Australia’s diverse culinary landscape. Lebanese food in Newtown stands out for its ability to bridge tradition and modernity. Restaurants in this area focus on preserving authentic flavours while embracing innovation to cater to contemporary diners.
Fusion and Creativity
In Newtown, Lebanese dishes are often reimagined to include Australian native ingredients or presented in ways that appeal to a global palate. This fusion not only enhances the appeal of traditional dishes but also demonstrates how Lebanese cuisine evolves without losing its roots.
Preserving Heritage Through Food
Lebanese cuisine is more than just a collection of recipes; it is a story of resilience, adaptability, and cultural pride. The traditional techniques of baking flatbreads, fermenting pickles, and grilling meats continue to be passed down through generations, ensuring that the soul of Lebanese food remains intact.
At the same time, the modern-day adaptations of these techniques and ingredients demonstrate how food can be both a nod to the past and a response to present-day needs.
A Timeless Culinary Tradition
The history of Lebanese food is deeply embedded in its modern-day flavours, creating a unique blend of tradition and innovation. Its evolution over centuries—from Phoenician roots to its presence in Newtown’s culinary scene—showcases its adaptability and enduring appeal.
For those exploring Lebanese food Newtown, the cuisine offers more than just a meal; it offers a journey through time, culture, and flavour. Whether it's the simplicity of mezze, the boldness of spices, or the health-conscious adaptations, Lebanese cuisine remains a testament to the timeless art of cooking.
