Making Normandy Crêpes For Pancake Day
Did you know that France celebrates Pancake Day twice? The first time is on 2nd February and is the equivalent of Candelmas in the UK. The celebration is known as La Chandeleur. Candles are blessed at church and pancakes, known as crêpes, are eaten. The second time is for Mardi Gras which will be celebrated on 5th March in 2019. This is the same as Shrove Tuesday in the UK.
How lucky is France to have two days to celebrate? Crêpes are very popular in France. Because of this you can find a crêperie (pancake house) in most larger towns.
I've seen that one of my local boulangeries is making crêpes this morning. I'm sure they'll be eagerly consumed by people visiting the Saturday morning market. The boulangerie is Les Délices de Gavray and the address is 3 Place du Dr Beck, 50450 Gavray.
The Recipe
A traditional French recipe for sweet pancakes involves
200 g of flour
3 eggs
25 g of sugar
50 g of melted butter
60 cl of milk
5 cl of rum
Extra oil or butter for the pan.

Regional Variations and Toppings
There are regional variations. To make Normandy crêpes you replace the rum with calvados which is an apple brandy. You can also add grated apple to the batter or you can caramelise some apples in a little butter and sugar. Normandy butter and milk are key ingredients to the batter. The result is a light and very delicious crêpe.
Other variations include adding beer to the batter and replacing some of the flour with cocoa powder. Other toppings might include nutella, jam, lemon and sugar, caramel sauce, fruit, chantilly cream. So you have lots of possibilities. However you eat them be sure to enjoy a crêpe on La Chandeleur.

Es ist wieder Maria Lichtmess – in Frankreich La Chandeleur. Die Tage werden ab jetzt wieder spürbar länger und in Frankreich gibt es zu diesem Tag Pfannkuchen. Wie jedes Jahr, habe ich mir auch wieder ein Pfannkuchenrezept rausgesucht. Heute gibt es mal eines mit bunter Polenta (Maisgries).

Oh hell YES! Invited to the press launch of #bonnemaman fruit conserves and got to try my hand at making crepes for #chandeleur and I made the BEST #crepe of the day - GO ME! . So as I was with Bonne Maman I thought I’d take the opportunity to request some salted caramel sauce which is DIVINE! I cannot find it locally (either they hide it or don’t stock it) and as I was getting a jar LOOK at what they created for #lachandeleur 🤤 . They of course do all things sweet but they also made me a savoury crepe with goats cheese and their fig conservative and it was magical! So delicious I ate all of it! . So these amazing salted caramel crepes are easy to replicate if you have a few minutes and a jar of salted caramel sauce! . Just make 10 traditional crepes: 125g plain flour Pinch of salt 1 tbsp caster sugar 2 eggs beaten 25g melted butter plus extra for cooking 250ml semi-skim milk 3 tbsp cold water . Method: Add dry ingredients into a bowl and make a well in the centre. Add the beaten eggs to the well. Whisk slowly with a balloon whisk and as you do, add in the melted butter, milk and water. Whisk briskly into a thin batter. Heat a pan and wipe a little melted butter over the base. A crepe pan works best though. Drop a ladle full of batter and swirl around pan to thinly coat base. Cook for 2 mins until underside golden, then flip and cook other side. Because it will be mostly cooked, you can fold to flip. Cook for 1 more minute. . Stack the 10 crepes one by one, melting a 4 tbsp of salted caramel sauce and spreading a little between each layer. On the top, drizzle the remaining salted caramel over the top.
