4. Japchae
Japchae is a stir-fried glass noodle dish made with sweet potato noodles, vegetables, and sometimes meat.
Easy Recipe: Soak sweet potato noodles in hot water until soft, then drain. Stir-fry a mix of vegetables (like bell peppers, carrots, and spinach) in sesame oil, add the noodles, and season with soy sauce and sesame seeds. For added protein, toss in some beef or tofu.
5. Tteokbokki
Tteokbokki are spicy rice cakes that are chewy and satisfying, often found in street food stalls.
Easy Recipe: Boil water with gochujang and sugar to create a sauce. Add sliced rice cakes and fish cakes (optional), simmer until the sauce thickens, and garnish with chopped green onions and sesame seeds.

Finding Korean food i can eat as a non-korean vegetarian living in Norway is a bit difficult. I am learning to make things from combos of online recipes and a lot of substitutions, conversions, and creativity. The results aren't Korean in any proper sense, but they are often very tasty.
Here is one of my favourites, generically called Korean-spiced chickpeas because i hacked together some recipes for jokbal (aka braised pigtrotters) but without meat, the name doesn't really make sense. (@drinkingcocoa-tpp and i talked through what i might call this mash up. here we are.)
The recipe as i have recorded for home use in the image. More normal version below.

Korean spiced chickpeas
500 g dried chickpeas, soaked overnight
6-10 cups water (top up as needed)
1/2 c each: mirin, soy sauce, brown sugar
2 tbsp deongjang (fermented bean paste)
2 tsp instant coffee
1 onion, quartered
1 apple, quartered
5 cloves of garlic, split
2 cm ginger root, sliced thick
2 bay leaves
1 cinnamon stick
and in a herb pouch: 5 cloves, 7 dried chilies, 5 star anis, 1 tbsp peppercorns
Most of the water and everything else goes into a big pot. Bring to a boil and simmer for 2-3 hours, topping up water as needed until chickpeas are cooked through, skimming foam as it accumulates. Remove surviving solids (herb pouch, bayleaves, what remains descernable of onion and apple) and simmer at medium/medium high for 20-30 minutes, till the broth is reduced to a thick sauce around the chickpeas.
Slow but simple.


These chickpeas are great to eat with lettuce (though they like to roll away so fold carefully) or with rice and whatever banchan. I've also had them wrapped in various flat breads because nothing is sacred in my humble kitchen.
And although i have listed proportions for the spices, this ends up on the mild side for me, given the ingredients as available. Maybe your dried chilies are more powerful.
Lastly, if anyone tried this, I'd love to hear how it went, or what you choose to modify. Like I added ssamjang instead of deongjang one desperate time when i couldn't find the latter, and that was hotter but still tasted good.

Kimchi omelette/scramble!
Still seeking ways to diversify with kimchi. This is recipe from a writer I found in Singapore. Love the addition of mirin; it perfectly balances the kimchi and gives it umami! You can add any vegetables – I added shitake mushrooms. Sad to say my omelette pan malfunctioned so it came out a mess of eggs but it was totally scrummy! I think the gentle heat advised is a problem in a stainless steel…

imagine chef!character and you are both contestants on a cooking show. you've obviously heard of each other before and always thought the other was kinda cute but on the show you're pitted against each other early on and everyone can feel the sexual tension in the room (including the judges) and the internet kinda blows up, shipping the pair of you together.
truth is, the whole thing was scripted from the beginning, and you two actually kind of hate each other; sure, you think he's hot, but you also think he's ostentatious, and he thinks you're gorgeous but a stuck up snob, so when you're paired together for a "couple" challenge, to create the perfect "lovers dish" neither of you can help it when the tensions run a little bit high. he gets a little snippy and you'll be damned if you don't give as good as you get --
it ends up in a heated argument where you're standing way too close, in each others faces, breathing hard, and a part of you wonders if he's just doing this for the views, but you know that the way your heart is racing isn't part of the script. you say something just to tick him off, like -- i'd rather leave the show than put that on a plate.
to which he narrows his eyes, and for a second, you wonder briefly if he might actually punch you, but instead, he leans forward and grabs your jaw in his hand, tugging you in for a searing kiss. the entire set goes silent, and somewhere in the back of your head, you think ah... we're gonna trend on twitter again, huh.
before he pulls back, smirking, eyes flickering down to your kiss-bruised lips and says --
"why don't you put that on a plate and serve it."
