Finding Korean food i can eat as a non-korean vegetarian living in Norway is a bit difficult. I am learning to make things from combos of online recipes and a lot of substitutions, conversions, and creativity. The results aren't Korean in any proper sense, but they are often very tasty.
Here is one of my favourites, generically called Korean-spiced chickpeas because i hacked together some recipes for jokbal (aka braised pigtrotters) but without meat, the name doesn't really make sense. (@drinkingcocoa-tpp and i talked through what i might call this mash up. here we are.)
The recipe as i have recorded for home use in the image. More normal version below.

Korean spiced chickpeas
500 g dried chickpeas, soaked overnight
6-10 cups water (top up as needed)
1/2 c each: mirin, soy sauce, brown sugar
2 tbsp deongjang (fermented bean paste)
2 tsp instant coffee
1 onion, quartered
1 apple, quartered
5 cloves of garlic, split
2 cm ginger root, sliced thick
2 bay leaves
1 cinnamon stick
and in a herb pouch: 5 cloves, 7 dried chilies, 5 star anis, 1 tbsp peppercorns
Most of the water and everything else goes into a big pot. Bring to a boil and simmer for 2-3 hours, topping up water as needed until chickpeas are cooked through, skimming foam as it accumulates. Remove surviving solids (herb pouch, bayleaves, what remains descernable of onion and apple) and simmer at medium/medium high for 20-30 minutes, till the broth is reduced to a thick sauce around the chickpeas.
Slow but simple.

These chickpeas are great to eat with lettuce (though they like to roll away so fold carefully) or with rice and whatever banchan. I've also had them wrapped in various flat breads because nothing is sacred in my humble kitchen.
And although i have listed proportions for the spices, this ends up on the mild side for me, given the ingredients as available. Maybe your dried chilies are more powerful.
Lastly, if anyone tried this, I'd love to hear how it went, or what you choose to modify. Like I added ssamjang instead of deongjang one desperate time when i couldn't find the latter, and that was hotter but still tasted good.

3. Bulgogi
Bulgogi is marinated beef that’s grilled or stir-fried, known for its sweet and savory flavor.
Easy Recipe: Slice beef thinly and marinate in a mixture of soy sauce, sugar, sesame oil, garlic, and pepper for at least 30 minutes. Stir-fry the marinated beef with sliced onions and carrots until cooked through. Serve with rice and lettuce leaves for wrapping.
4. Japchae
Japchae is a stir-fried glass noodle dish made with sweet potato noodles, vegetables, and sometimes meat.
Easy Recipe: Soak sweet potato noodles in hot water until soft, then drain. Stir-fry a mix of vegetables (like bell peppers, carrots, and spinach) in sesame oil, add the noodles, and season with soy sauce and sesame seeds. For added protein, toss in some beef or tofu.
5. Tteokbokki
Tteokbokki are spicy rice cakes that are chewy and satisfying, often found in street food stalls.
Easy Recipe: Boil water with gochujang and sugar to create a sauce. Add sliced rice cakes and fish cakes (optional), simmer until the sauce thickens, and garnish with chopped green onions and sesame seeds.

Kimchi omelette/scramble!
Still seeking ways to diversify with kimchi. This is recipe from a writer I found in Singapore. Love the addition of mirin; it perfectly balances the kimchi and gives it umami! You can add any vegetables – I added shitake mushrooms. Sad to say my omelette pan malfunctioned so it came out a mess of eggs but it was totally scrummy! I think the gentle heat advised is a problem in a stainless steel…

hello, i am a huge fan of your writing on asian queer media from queer perspective. i'm a lesbian who often enjoys BL but feel like it's hard to find one that i truly connect with, maybe because i'm looking for something different than the core audience - reading your post about The Knowing i realized that's exactly what it was. i feel like my whole life has been defined by this knowledge of being different, wrong, unable to truly connect. and seeing it unfold on the screen is some special kind of catharsis. since your last addition to the post, do you have some recommendations of new releases where The Knowing can be seen in the characters?

Last I remember, @/respectthepetty called out Zo in Hidden Agenda as one who experienced The Knowing, and I do have to agree. He was outed and made to suffer for it.

My boy Dynamite clearly experienced it, and Fire did, too. Still a fan of Cooking Crush.

I think Nomoto Yuki experiences a really compelling version of The Knowing complicated by the expectations of being a woman. Everyone should watch She Loves to Cook, and She Loves to Eat.

Xiao Yuan is a compelling example because of the complicated family dynamics. Despite specific qualms, I did really enjoy Unknown.

Tanaka Kazuhito from Living With Him (aka Kare no Iru Seikatsu) is probably my favorite Japanese BL example of the year, because he's conscious about it and resolved about how he will manage it.

My actual favorites of the year come from Don't Care For An Old Man's Underwear! (aka Ossan no Pants ga Nandatte Ii Janai ka!)It's almost unfair to the BL shows on this list, because this show is a different kind of drama. However, I will love Daichi for the rest of my life. I hope he and Madoka work through their issues and learn to communicate better.

My favorite Thai example of the year comes from Knock Knock, Boys! Peak's entire character arc is based on The Knowing.

The best Korean example this year comes from reigning champion Hwang Da Seul's Let Free The Curse of Taekwondo. Both of these boys are a mess because of it.

Mainland China is back in action and delivering with Blue Canvas of Youthful Days. Qi Lu definitely knows, and this one is not doing bromance.

But honestly, if you really need The Knowing, you should watch Love in the Big City. It's the most intensely personal and semi-autobiographical project of the year.
