I've led a project like this and I've got two things to warn you about.
1. If you're not gonna follow the actual rules of heraldry, I would not call it a coat of arms. Pick literally any other term.
2. Designing coats of arms for pride flags is a pain in the ass because heraldry intentionally has a limited color palette and the queer community fucking loves to use a bunch of extremely modern colors.
Some examples from our project, most of which were emblazoned by @kleioscanvas 's partner (whose Tumblr I don't remember at the moment):
(ace, community, nonbinary, bi, intersex, lesbian, Achillean, and two variants for trans)
I can grab blazons for these but basically you get seven colors and then maybe three extra colors if you feel like stretching it (rose is the tincture name for pink, for example) but what looks like pink and sky blue on the trans arms is Gules (red) and Azure (blue). The pink in the intersex arms is rose, but that's a step out from standard practice.

So like... people have broached the idea of pride flags having dragons on them like heraldry, which is of course correct and just, but like... they shouldn't ALL have dragons, right? Or at least not the same dragon. Each flag should have its own heraldic beast, ideally one that relates to the orientation the flag represents.
Which begs the question of which heraldic beasts would best suit each color of the rainbow, as it were. I think the iconic four legged, two winged dragon makes sense for the main pride/rainbow flag, since dragons are often posited as, like, the pinnacle of monsters, and so feel best suited to be the one that encompasses the whole spectrum, but I'm kind of paralyzed by the options presented to pick out ones for the others.

Grieving Artemis retrieving Orion’s corpse, along with the accompanying hunters and nymphs 🍂🏹
According to several versions of the Greek myths that surrounded him originated in Boeotia of central Greece, knowing Orion’s intentions and desires to marry Artemis (as he had been serving as her hunting companion along with her mother Leto for some time now, either in the island of Delos or Crete), her brother, Apollon tricked the goddess into shooting Orion, as the giant huntsman swam far away from the shores. The giant’s drowned body was later retrieved and placed among the constellations, under Artemis’ request to her father, Zeus. (As Orion’s dog became the Sirius constellation; while the scorpion - that was sent by Gaia to kill him in some myths - were transformed into the constellation of Scorpio. Lesser-known myths of him were killed by Artemis including Orion either falling in love with the goddess of dawn, Eos, or assaulting one of Artemis’ accompanying nymph -which all break their vows/personal bonds and rules of chastity. )
