Chocolate Chip Ice Cream Sandwiches Chocolate Chip Cookies - enough for 6 sandwiches Ingredients: 1 1/4 cups flour 1 1/8 tsp baking soada 1 1/8 tsp salt 1 stick unsalted butter, room temp 1/2 tsp pure vanilla extract 1/2 white sugar 1/2 cup light brown sugar 1 large egg, room temp 1 cup semisweet chocolate chips Vanilla ice Cream Recipe: -Sift the flour, baking soda and salt together, set aside. -In a bowled mixer add paddle attachment and cream together the butter, vanilla and sugars on med until light and fluffy about 3 mins. Add the egg, and blend. -On low add the dry ingredients in 2 additions, scraping the bowl after each, mix on low until blended, add the chocolate chips and mix until combined. -Using a 2 Tbsp cookie scoop, scoop batter into baking pan about 2 inches apart. Bake @350 degrees for 13-15 mins. The cookies should be golden brown around the edges but still light in center. Cool cookies on a wire rack. Once cooled lay out cookies on wax paper and start assembling the ice cream sandwiches. Turn over 1/2 the cookies and scoop a 1/4 cup ice cream scoop of vanilla ice cream on top of each bottom. All cooking for the week is now complete! Baked Ziti with Sausage and Ground Beef Ingredients: 2 tablespoons extra-virgin olive oil 1 pound sweet and or spicy Italian sausages, casing removed and crumbled 1/4 medium onion, diced (about 3 tablespoons) 3 cloves garlic, chopped 3 1/2 cups whole, peeled, canned tomatoes in puree, (one 28-ounce can), roughly chopped Sprig fresh thyme Sprig fresh basil 2 teaspoons kosher salt Freshly ground black pepper 1 pound dried ziti pasta Kosher salt 1 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced 3/4 cup freshly grated Parmesan 1/2 teaspoon freshly ground black pepper Pinch red pepper flakes Recipe: Pasta: Bring a large pot of water to a boil, salt generously, and boil the pasta until al dente, tender but still slightly firm. Drain. Sauce: Heat the oil in a medium saucepan over medium-high heat. Cook the sausage until beginning to brown, about 3 minutes. Add the onion and garlic, stirring, until lightly browned, about 3 minutes more. Add the tomatoes and the herb sprigs and bring to a boil. Lower the heat and simmer, covered, for 10 minutes. Remove and discard the herb sprigs. Stir in the salt and season with pepper, to taste. Toss the cooked pasta with the marinara sauce, cubed mozzarella, half the Parmesan cheese, black pepper, and pepper flakes. Transfer the pasta to an oiled 9 by 13-inch baking dish. Cover the top of the pasta with the sliced mozzarella, and sprinkle with the remaining Parmesan. Bake until lightly browned and hot, about 30 minutes. I had an epiphany while eating a mozzarella string cheese stick and here it is! Cheesesteak Stuffed Peppers Ingredients- 2 green bell peppers 8 slices of provolone cheese (or any cheese you like, (I used mozzarella) 1 medium onion, chopped 8 oz of roast beef, or steak meat of your choosing (I just used steak-ums and sliced them up) 2 Tbsp of unsalted butter 2Tbsp olive oil 3 cloves garlic dash of salt to taste dash of black pepper to taste Recipe- Preheat oven to 400. -Slice peppers in half lengthwise, remove ribs and seeds. -Slice onions and saute over medium heat with butter, olive oil, minced garlic and a little salt and pepper. Saute until onions are nice and caramelized. About 25-30 minutes. -Add meat and cook meat through. Drain juice when done cooking. -Line the inside of the pepper with a slice of cheese. Fill each pepper with meat mixture. -Cover each filled pepper with another slice of cheese. BBQ Pulled Pork, comfort food in full affect today! Ingredients • 3 TB (Tablespoon) paprika • 2 TB Kosher salt • 2 TS (Teaspoon) cayenne pepper • 2 TS black pepper • 2 TS garlic powder • 2 TS garlic salt with parsley • ½ TS thyme • ½ TS rosemary • 2 TB minced garlic • ½ cup honey • ¼ cup red wine vinegar • 3 TB olive oil • 1 medium onion • 3-3 ½ lbs pork shoulder Recipe: For the pork: In a medium bowl combine the paprika all the way through to the rosemary ingredients. In another medium bowl combine the minced garlic, honey, red wine vinegar, and olive oil, combine wet with dry ingredients to make a paste. Turn slow cooker on low, peel and cut the onion into quarters and place the onion quarters on the bottom of the crock pot. Trim some excess fat off pork shoulder, cut pork shoulder in half and place the halves in the crock pot. Rub pork shoulder halves with paste making sure all is covered, cook on low for 7-8 hours until fork tender. Shred pork in crock pot, cover pork with your favorite bbq sauce, let cook on low for 1 hour, spoon onto buns and you are ready to dive in! #kellyscountrykitchen #hangovercure #porkmetodeath #divingintogoodness #succulenteats

Long night out calls for Carbs today! Loaded Baked Potato Casserole is a wonderful satisfying indulgence. Loaded Baked Potato Casserole Ingredients: 3 pound bag of red potatoes 6 slices bacon, cooked and crumbled 6 tablespoons butter, melted 1 cup sour cream 2/3 cup of cream ½ teaspoon salt ½ teaspoon black pepper 3 green onions, chopped 2 cups shredded Cheddar cheese Recipe: Preheat oven to 350 degrees. -Wash and dry potatoes and prick all over with a fork. Arrange potatoes on a rimmed baking sheet and bake for 40-60 minutes or until tender. Remove from oven and let cool. -After potatoes have cooled, cut them into large bite-size chunks and place them in a large bowl. -In a separate bowl, combine melted butter, sour cream, cream, salt, pepper, all but 1 tablespoon of the green onions, half of the bacon, and half of the shredded cheese. -Pour the mixture over the potatoes and stir to combine. -Spray a casserole dish with non-stick cooking spray. Transfer the potatoes into the prepared casserole dish. -Top with remaining cheese. Sprinkle with reserved green onions and bacon. My first attempt a Whoopie Pies. They taste great but I need to work on making the cakes smoother and cleaner looking. INGREDIENTS 1 cup all-purpose flour 1/4 cup unsweetened cocoa powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup sugar 1/4 cup vegetable shortening 1 egg white 1/2 cup 1% low-fat milk 3/4 cup marshmallow cream Recipe: Preheat oven to 425°F. -Combine the flour, cocoa, baking soda and salt in a small bowl. -With an electric mixer on medium speed, beat the sugar, shortening and egg white in a medium bowl until fluffy and well blended (about 2 minutes). -Stir in the flour mixture, then the milk until just blended. -Drop the dough by spoonfuls onto large, ungreased baking sheets, making 36 cookies. -Bake until top springs back when lightly touched (5-7 minutes). -Cool completely on the sheets on a rack. -Spoon 2 tsp marshmallow spread on the bottoms of half of the cookies. -Top with remaining cookies. #kellyscountrykitchen #bakingbeauty #domesticgoddess #lovebakingandcooking #theywereamazing

Meatball Parmesan Sliders, it's what's for lunch! To get all my recipes Follow my FB Foodie Page at www.facebook.com/kellyscountrykitchen Meatball Parmesan Sliders Ingredients: 1 pound ground beef (I use 93% fat free meat) ½ cup Panko bread crumbs 2 cloves garlic, minced ¼ cup parmesan cheese 1 teaspoon italian seasoning salt & pepper (few shakes of each) 2 tablespoons olive oil ½ medium sized onion, diced 1 jar marinara sauce 12 whole Dinner Rolls 6 slices mozzarella cheese (or you can shred it) Recipe: -In a large bowl, combine the ground beef, bread crumbs, garlic, cheese, and spices. -Roll them into small meatballs, slightly flatten them. -In a large skillet, heat the olive oil and onions over medium-high heat. -Add the meatballs and let them cook for a few minutes until browned. Flip them over. Lower heat to medium. Add the jar of marinara sauce, cover the skillet and simmer for 20 minutes. -Take the slices of cheese and cut them into quarters. Slice your dinner roles in half and place 1 slice of cheese on the top roll and 1 slice of cheese on the bottom half of the roll. -When the meatballs are finished cooking, carefully spoon one meatball per roll (drizzle a little sauce on top of the meatball) and serve. #kellyscountrykitchen #domesticgoddess #ilovecookingandbaking #hotcook

Grilled Peaches with Brown Sugar and Gorgonzola Cheese. Recipe: Slice peaches in half and remove the seed. Brush the cut side of peaches lightly with olive oil. Place peaches face down on grill and cook 1-2 minutes. Flip peaches over, so the cut side of the peach is up. Fill the seed hole with gorgonzola cheese (crumble it) Drizzle with honey and sprinkle with brown sugar. Now drizzle with balsamic vinegar. Close the grill lid and let the peaches cook until they are soft (about 5 mins) and they are done. You can mash them up and put a scoop of vanilla ice cream on top as well, which I did and it was AMAZING! #kellyscountrykitchen #grillinggoddess #sweetandsaucyeats

Homemade Cinnamon Sticky Buns!! ❤️🍴😬 This does require a little bit of work but I promise it is so worth it when you sink your teeth into one! Heaven in your mouth is the only way I can describe it! Ingredients: 2 pkg active dry yeast 1/2 cup warm water 2 cup milk, scalded 1/2 cup sugar or 1/4 cup honey 1/2 cup coconut oil 1 tsp salt 7 cups sifted all-purpose flour 2 eggs Cinnamon Sugar Filling ingredients: 1/2 cup sugar 1/4 cup melted butter 2 tsp cinnamon 1/2 cup raisins (optional) Recipe: -Scald the milk. (Scalding means to heat just below boiling, until little bubbles form around the edge of the pan.) -Move milk from pan into a large mixing bowl and let cool and add the coconut oil now to help cool the milk and also to melt the coconut oil. -When the milk has cooled, add a little sifted flour to it, approximately 1 – 2 cups, stirring as you add. When that flour is mixed in well add the salt and sugar or honey. Then the water, egg and yeast. Mix everything together well. -Keep adding the rest of the sifted flour, a little at a time until you get a nice soft dough. -Roll the dough out in a rectangle shape. Roll onto a lightly floured surface. -Pour melted butter over dough and sprinkle with part of the sugar. Sprinkle cinnamon evenly over dough, then sprinkle the remaining sugar on. Roll the dough lengthwise like a jelly roll. -Cut into desired size slices and place in oiled baking dish, I use coconut oil. Leave plenty of room to allow them to spread. Cover with a clean kitchen towel and set aside to rise, 30 -40 minutes. When they are the size you want, pop them into a 375* oven for 20 – 25 minutes. -Remove and immediately frost with icing or sprinkle with powdered sugar. My favorite icing is simply powdered sugar, thinned to a thicker consistency with warm water. I also add a little of the cinnamon & sugar filling to the glaze also.
