We had the most amazing dinner, best of Jordan, on our final night in Amman @ Fahkreldin. We started off with hummus and veggies, as well as, sautéed garlic mushrooms, which were both excellent. And then for mains, we had a meat and tomato pie covered with delicious bread pie crust, and kabob khishkhash which was also tomato covered meat. Both were excellent, but the pie (which was heavy on the garlic cloves) was really exceptional and special. We also had a couple beers. And for dessert, we washed it down with Arabic Ive Cream with honey, which is thick like cottage cheese. It was interesting, glad we got it, but not our fav. A good experience. After our best meal in Jordan, we retired to the hotel for a quick nap before headed I g early to the airport.
As we left the hotel this morning, we walked down the silly simulation of the Siq road to Petra on the way out of the W.

Egypt & Jordan 2021 - day 1
I arrived late last night, so I will say today is my official day one. My tour doesnât start officially till the group meeting tonight, so I booked a private tour to take me to the three oldest pyramids.
My hotel is not the greatest and certainly not as advertised. Hotel website shows a photo of the rooftop pool overlooking the pyramids - no pool and no view of the pyramids; I can however see the Nile from my balcony. The room smells of smoke, the drawers donât close, the plugs donât work and the bathroom is disgusting. Needless to say, I am only here two nights and will make due.
After breakfast at the hotel, I was picked up by my private tour guide for the day. We headed out of Cairo to Sakkara. Sakkara has the oldest of Egyptâs 97 pyramids - the Step Pyramid of Djoser. It is the first pyramid built in Egypt and while it is not a âtrue pyramidâ with smooth sides, instead it consists of the six distinct layers, or steps, of diminishing size built on top of one another. While at Sakkara, I also saw visited a small museum, and some smaller pyramids and tombs.
After Sakkara, we headed to Dahshur to see the Bent, Red and Chocolate Pyramids. The Bent Pyramid was the first of the smooth sided pyramids, but due to a miscalculation of the weight on the soft sand, the angle needed to be altered and has bent in its side (thus the name).
The next pyramid to be built was the Red Pyramid. Once completed, the pyramid was considered to be a success, as it was a fully constructed, smooth sided, and a free standing pyramid rising to a height of 341 feet. The Red Pyramidâs name reigns from the material that was used to construct the pyramid, red limestone. I climbed up to the middle of this pyramid and then traversed backward 65 meters to the middle of the pyramids to see the open spaces where the tombs once were. Unfortunately what goes down must come up, so I had to climb back up the same small tunnel. Also visible from the Bent and Step Pyramids was the Chocolate or Black Pyramid.
We then headed to Memphis - the first capital of Egypt. Memphis was completed flooded from the Nile hundreds of years ago, and the entire town were buried. Artifacts are now being found and preserved in a World Heritage Site and put in an open air museum. The highlights are a two giant statues of Ramses II and the alabaster Sphinx.
Following Memphis we headed to a papyrus factory to see how they make papyrus. Papyrus starts as a plant of the same name, and then cut and soaked before being weaves and pressed into paper. I am not good at haggling, so I am probably paid way too much for my glow in the dark souvenir.
The final stop on todayâs tour was lunch. I ordered an Egyptian Chicken Shawarma - delicious. They returned me to my hotel, and I had free time until my group tour meeting.
At my group tour meeting, we met our Chief Experience Officer and other tour mates. We discussed the options for the next few days. Unfortunately my hot-air balloon ride over Luxor is not in the cards. We had supper as a group, I had Shish Taouk (marinated chicken cooked on kabobs).
I now need to remove sand from everywhere.

Itâs my momâs birthday and I feel really bad that weâre all under quarantine because she hasnât had a nice celebration of her birthday in a really long time. Itâs around the two year anniversary of Aunt Angela passing as well so itâs never really a good time. I decided to cut out some letters on construction paper and spell out happy birthday to hang up in the dining room, which took me a little bit but I just want her to feel special. Jordan and LeeAnn didnât come over because Jordan feels heâs been exposed to too many people and it made my mom sad because obviously she wants her [favorite] son there. Shayne came over and my dad grilled kabobs and we all ate dinner and drank and played games and it was a really fun day I think. I was pretty drunk I took the phone from my mom at one point and had a full on conversation with Linda which was sweet, I love her. By the end of the night we started a fire which I was falling asleep in the chair because I was up until 4 AM last night trying to figure out my new phone situation. I told them all I was going to lay down so I passed out pretty early but I hope my mom enjoyed her day, she really deserves it and I love her so much.

My hometown of Montreal is a very multicultural city. Â It is consider to be one of the many melting pots of Canada. Â At any given time I could be walking down the street and wouldnât understand a word of whatâs going on around me because of many different languages being spoken. Â Itâs one of my favorite aspects of the city. Â A bonus of multicultural city is the different ethnic cuisines. Â You name it and you can probably find it in Montreal. Â We have a very diverse Arab population. Â A lot of my friends came from Lebanon, Syria, Palestine, Iran and Jordan to study in Montreal. Â They introduced me to some of my favorite Mediterranean dishes. Â I had a craving for something fresh and flavorful so I decided to give a traditional Lebanese dish called kafta a try. Â I mixed lean ground beef, finely diced onions, minced garlic, fresh chopped parsley, all spice, paprika, cumin, salt and pepper until well combined. Â I broke off golf ball sized pieces of the mixture and press firmly around a wooden skewer that was soaked in water. Â I laid the skewers on a cooling rack on a cookie sheet and baked them at 350 degrees until the meat was cooked through, about 30 minutes rotating at the half way point. Â I finished them off under the broiler to give them a crisp outer texture. Â I served them hot with a garlic yogurt sauce, basmati rice and Greek salad with a lemon wedge. Â Delish!

Universal Orlando Resort â Tips for Muslim Travelers
We recently had the pleasure of visiting Universal Orlando Resort, an American theme park and entertainment complex in Orlando, Florida. Weâre huge fans of roller coasters and also couldnât wait to check out the newest addition to The Wizarding World of Harry Potter (Diagon Alley). Whether you prefer more mellow shows and attractions or stomach-dropping roller coasters, thereâs fun for all members of the family at these spectacular theme parks!
Universal Orlando Resort is comprised of three parks â Universal Studios Florida, Universalâs Islands of Adventure, and Volcano Bay. We visited the first two; Universal Studios Florida has fantastic rides and attractions based on pop culture icons, Hollywood blockbuster films, and hit television shows, and Universalâs Islands of Adventure features innovative rides and attractions on spectacularly themed islands. For Harry Potter fans, Diagon Alley is located in Universal Studios Florida and Hogsmeade is located in Universalâs Islands of Adventure. The Hogwarts Express train connects the two parks and is a fantastic attraction as well!
Hereâs what you need to know as a Muslim traveler before you visit:
Where can I pray? We recommend the following spots for prayer in each park. When we visited in early December, both spots were totally empty and private. Note that there may be music playing nearby.
Universal Studios Florida â There is a quiet space in the Central Park area near the lagoon â take the side path instead of the main path
Islands of Adventure â There is private, quiet space behind Mythos Restaurant facing the lagoon.
Here is a map showing the exact locations for prayer.
What can I bring inside the theme park? The parks allow bottled water, small snacks, any food required for medical purposes and medically-indicated nutritional supplements, any food for special dietary needs, baby food/baby formula, and soft-sided insulated bags no larger than 8.5 inches wide, 6 inches high and 6 inches deep. Full picnic lunches and food that requires heating or refrigeration are not permitted.
Where can I find halal food? We were excited to find out that the #1 theme park restaurant in the world, Mythos Restaurant, serves halal lamb! The restaurant offers a mix of Mediterranean, Asian and American fare and serves many seafood and vegetarian options as well. Note that you may need to make a reservation for this restaurant if you plan on coming during peak lunch hours or peak times for the parks (weekends and summer/winter holidays). Mythos Restaurant is located in Islands of Adventure close to The Wizarding World of Harry Potter â Hogsmeade.

Hereâs the tender and juicy lamb burger we tried. The staff cooks the meat to the doneness you prefer (we asked for medium-well done). The feta-olive aioli drizzled on the lamb was the perfect topping and overall, the meal was excellent. Another halal option is the Mediterranean lamb meatball appetizer. Another great option for halal food is NBC Sports Grill & Brew. All of the burgers, the 12 oz. New York Sirloin Strip Steak, and the 10 oz. Top Sirloin Steak are made with Creekstone Farms beef which is certified halal. The restaurant is located in Universal CityWalk right outside of the parks. You do not need an admission ticket to access this restaurant. Beautiful views, especially at night!

Another halal option for Harry Potter fans in Universal Studios Florida is the fish and chips served at the Leaky Cauldron:

In addition to the halal meat and plentiful seafood options available throughout the park, Universal Orlando Resort also provides kosher menu options which include chicken, Salisbury steak, and salmon. You can find more information on how to request kosher meals here.
And finally, the chefs at the restaurants throughout Universal Orlando Resort are very accommodating. All you need to do is tell your server of your dietary restrictions when ordering and they will offer plenty of options and information.
Other tips for visiting Universal Orlando Resort Get there as early as you can to beat the crowds. At The Wizarding World of Harry Potter â Diagon Alley, keep an eye on the dragon atop Gringotts â it breathes fire! Hint: The dragon will growl three times before it spits fire, giving you just enough time to grab your camera. The timing is usually every 10 minutes starting at noon, unless the winds are too strong.
Be sure to try the delicious butterbeer at The Wizarding World of Harry Potter. Itâs unlike anything weâve ever had before and is the #1 activity that people do when they visit! No alcohol, we promise â itâs a butterscotch-flavored drink.
We also loved the butterbeer-flavored ice cream at Florean Fortescueâs Ice Cream Parlour in Diagon Alley. Again, itâs alcohol free and was absolutely divine!
If you are going to Universalâs Islands of Adventure and want to ride the three wet rides, make sure you bring an extra pair of clothes or wear quick dry clothing. You will get drenched on some of these rides!
Should I get a 2-park 1-day pass or a 2-park 2-day pass? We recommend two days to experience both parks fully at a leisurely pace. If you are tight on budget and can plan well, then you can get a 2-park 1-day pass to experience both parks, but be sure to focus on the attractions you are most interested in and also get an Express Pass to minimize your wait times. NOTE: Many rides do not allow bags to be taken inside the line. You do get free lockers for a limited time to place your belongings in.
 Should I get an Express Pass? Yes, if you are coming at peak times â summer/winter vacation and spring break are the most crowded times. An Express Pass not only lets you skip the long line but also provides the best seats for that particular ride. For example, the best way to experience the Skull Island: Reign of Kong ride at is actually in the back seats!
 Where is the best halal food nearby outside of the park? If you are willing to drive, we recommend Hot Krust Panini Kitchen. Itâs owned by a Muslim brother from Trinidad, and everything on their menu is halal except the chili. Be sure to try the variety of homemade sauces they offer. The staff was friendly and the service was quick. Note that this restaurant closes early (8PM most nights).
 We also highly recommend Flame Kabob. The cook is from Jordan and the owners are Palestinian so you know this food is authentic! The staff was friendly, the service was very quick, and the portions were generous. The food itself was excellent. Itâs open late, too.
We also recommend Merguez for halal Moroccan food. The food is fantastic and the prices are very reasonable. We enjoyed the kefta tagine and chicken bastilla (a sweet and salty chicken pastry which weâd never tried anywhere else before). It was excellent!
