Hey sorry to bother you

Might have a small window of knowledge to help with the teriyaki from cooking technique to sauce drift? I’m Japanese-American and my family’s been in the US for over 100 years meaning our traditional family recipes are kind of frozen in time. For a good portion of my youth I only knew about teriyaki as a marinade then char-broil cooking technique and only found out about the sauce later on. I don’t know how much this helps, but the website Just One Cookbook is a reputable source for traditional Japanese stuff. It’s gotten the mark of approval from my grandmother so that’s something. Good luck on your quest!

oh my god that's actually a major help both in actual research but also confirming my own personal biases bc i love using Just One Cookbook to teach myself new dishes/as inspiration to mess around with. Nami is the OG

ok just thinking aloud — ive totally dropped my planned recipes list for the year lol i might go back, i might not. i think what i really need to ad to my repetoire is easy 30min type meals though ... so to that end i'd like to make:

donburi — joc has a whole article of these and oyakodon is a great and easy place to start imo, and gyudon also esp bc i want to practice cooking meat again esp thin-cut meat now that im ordering from weee! regularly

miso salmon via joc bc i fucking love salmon and i keep thinking about it

tiffycooks who i've started following on youtube has a tonnnnnnn of under 20(!!) min chinese recipes and that is pretty perfect for me! looking at seafood baked rice (i'd do salmon/scallops/shrimp), taiwanese night market style garlic mushroom sauce over tofu or chicken, creamy coconut chicken, scallion chicken, creamy miso mushroom pasta, mala ban, one pot mushroom chicken

one-pot meals — woks of life has an article about this and that looks like a great place to start! rice cooker meals is great subset of this also! or oven recipes ... i love doing prep and then waiting 40 min without doing much babysitting of the food! looking at clay pot chicken rice now that i own low sodium oyster sauce!

oh and i really want to make vegetable moo shoo bc it is so tasty and such an easy lunch since i always have hoisin sauce, if i get make or get mandarin pancakes to have on hand!

and sure ok miso ramen via tiffycooks and justonecookbook to compare, and if i can get a package of rice ramen noodles that'll be no sodium ramen noodles, awesome

bread pudding AKA Kiyo's Pudding! 🍞🍮

Pudding making 🍮

In a bowl, add 2 eggs and beat. Add 1/4 cup sugar and 1/8 tsp salt, and mix well until the sugar is completely dissolved. Next, add 1/2 tsp pure vanilla extract and gradually whisk in 1½ cups whole milk. Blend well together. Cut your bread into little cubes, then place into a casserole/baking dish. Pour half of the mixture into the dish, make sure the bread is soaked well for a few minutes (1-2 mins). Once absorbed, pour the rest in.

Place in an oven at 350ºF (18ºC) for 30–40 minutes/ until the pudding rises and puffs up and the top of the bread is slightly golden.

You can top however you like— caramel drizzle or ice creams, anything! 🍦

Time for my Joy of Cooking story! So in my family we have always referred to JoC as “Irma” as in Irma Rombauer. I thought it was just because my grandfather was Like That. (He absolutely was. He was constantly renaming things and inventing new idioms.) I was pushing 40 and he had been dead for over a decade when I found out that we do this because Irma Rombauer was one of his grandmother’s best friends, so when it came to the cookbook he really and truly was thinking of the person. So now when we use it (my husband basically learned to cook from it) I think of it as the ancestors watching over us.

Wait while we’re all being unhinged about, like, stew. We all obsessed over the Joy of Cooking as children right. Right

Rue boards in a house, where, they don’t ask too many questions, and just look for her to punch her mandated therapy cards night after night. It’s hard not to when London’s just a buffet of the lost and the lonely... all of them soaked in tears and regrets and anxieties about their future, the current political situation enough to get anybody all tied up in knots, and she isn’t even from here. No, Rue’s just a mother fucking tourist, unmoored and uncaring, just a handful of coke done off of someone’s stomach at another party, grinning; the ineffable American, awkward and tired and lanky and lost - and fucking high, almost certainly.

She doesn’t plan to run into Cook here, but of course he’s here, they’re always running into each other like this. Lost lambs, with, nobody to love them, she tells him during a bad acid trip about Gia, her sister... how Gia finds her like, totally fucked off of a bad batch of E that she’d gotten from somebody who wasn’t Fez, only because Fez was like, fucking busy that day and him and Ashtray had to do something with their grandma. And the E was a trip, like it’d been good but COMING TO in that hospital had been unexpected, the kind of poor ending that she felt, too hard, the regret swallowing her up like a hole in the fucking earth.

It’s why she can’t really blame them for sending her away. Strike one, shame on you, strike two... shame on me. They’d given her all the time in the world to change, but it felt fucking impossible to, when you were STRUCK WITH ADDICTION, be it drugs, or love... Jules had felt like that. Like a fucking high that she’d never been able to recreate since. He’s smoking out front, Cook, with a pretty little thing that’s sauntering past her into the party, giving her a look that says, you’re no threat, but she isn’t, really. Not when she’s in board shorts and a baggy t-shirt that almost runs out to the same length, she’s shapeless, and, she’s fine like that, stealing his cigarette for herself as the cool air hits her, sweet relief after the heat she’s survived inside. “What you doing here anyways? Your new thing trying to drag you around to show off or what?” The nervous twitch of a grin, her pupils already wide, she’s fucked off her rocker already.

For me this is firmly a demonstration of "You don't know what you don't know".

I make scones; I make pretty damned good scones, even. I used the recipe found in Joy of Cooking, which is a classic cookbook. In my experience it's not exceptionally authentic nor terrifically inauthentic: it's a compendium of recipes gathered by the authors, rather than ones they've made themselves, so it's as accurate as the recipes submitted. The chicken curry is... not great. But it has some other astonishingly niche recipes which clearly came from someone's grandmother from the Old Country.

So, you know, the scones in JoC are the triangular, sweet, usually have some fruit in them, American type. And the funny thing is, I almost always encounter that type in restaurants and the like. The two times I've encountered round, unflavored things referred to as scones, they were NOT in a setting which was explicitly or even implicitly British.

So, I would have rather confidently told you I was making, well, scones. I knew I was at times being very experimental: I make scones with maple and walnut, ones with rosemary and cheddar, and most recently I made apple oatmeal scones; I knew these were not faithfully classic scones, but I would have certainly said they were recognizably scones.

And the funny thing is, in most contexts I'd have been dismissive of criticism that they are not like the British ones. They are like the ones from the recipes I've found, they are like the ones I find in bakeries and coffee shops; they are even like the ones I made using a mix someone brought home from a trip to London! If someone had said "These are good but they're not scones" I'd have treated it in the same way I would a Texan who told me I can't make chili. If you're not familiar - to a Texan, your chili is awful. It's not really chili. Doesn't matter if you're following a recipe handed down for generations. Doesn't matter if it's an award-winning chili. Doesn't matter if you learned how to make chili directly from Frank Tolbert. The problem is, you're not Texan. And therefore your chili is Bad and Wrong and there's nothing you can do to make it better, because you're never ever going to be a Texan so you just can't make good chili.

People get weird about their regional and ethnic food, and they can't or won't communicate actual, tangible stuff because the identity and cultural implications are too important.

So I'd honestly never encountered the idea that the British approach to scones and the American approach is different. I'd never even considered that there was such a thing as an American scone.

not bad!! did half tare and half salt, surprisingly liked plain salt better than the sauce glaze. really not that hard, to my surprise — just cut up chicken thigh — the skin does make it harder to stab thru so use kitchen scissors to nip it — and scallion and then stick it in the broiler. really delicious WOW even tho there was no smoky taste … maybe will experiment w liquid smoke in the future until i can get a grill. but wow this was such a success i am really like … READY to cook a bunch of other food on sticks! like CUMIN LAMB or BEIJING CHASHU PORK HELLO!! yummmmm grilled MEAT!

one.   following the idea that everyone thinks freddie will never wake up, i thought it would still make sense to give cook the rise storyline. i didn’t want to change that... but then when freddie recovers he would go looking for his friend. he either spends ages picking up the smallest traces or he’s not able to, but then he runs into him by chance. in manchester ... or london. whereever. they can’t quite get back to how they were, but freddie wants answers and won’t leave cook’s side until he understands what went down.

two.   cook finds freddie at the crime scene, almost gone. he’s the one that gets him to the hospital and freddie spends his last breath awake asking him not to do something stupid. instead of going after john foster, cook waits for freddie to wake up. when freddie then wakes up they both do everything they can to take down john and freddie acts as the voice to do so (so that cook won’t be locked up, since he’s already on the run then). after that, they both decide to leave bristol together, not before making amends with jj first of course.

three.   as teens, cook and freddie are babysitting cook’s little brother. however, after taking him downtown, they somehow lose him and now they have to find him before cook gets more trouble with his mother than he already (always) has. cook and freddie run around the city, bumping into more and more unfortunate trouble along the way and by the end of it they’re running from more trouble themselves than cook’s little brother. inspired by gen3, when liv and matty do drugs and rob a costume shop.
