ESKİ İstanbul'a Yenİ Kahve
Kahve bizim memleketimizde, geleneksel ve kültürel bir olgudur, keyif işidir. Misafirperverliğin simgesi, sohbete davettir. Kız alırken dahi içine şeker yerine tuz konulmuş bir kahveyi içmek, sevginin göstergesidir. Kısık ateşte pişmiş, yoğun köpüğü ve ağır ağır salınan dumanıyla servis edilen bir Türk kahvesinin yerini hiçbirşey dolduramaz… mı acaba?
Bağdat Caddesi’ni kesen Noter Sokak’ta, bu yılın Mart ayında sessiz sedasız açıldı Drip Coffeeist, tanıtımsız, reklamsız. Sokağa yayılan kavrulan kahvenin iştah açıcı kokusuyla geldi önce çevre sakinleri. Gelenler, görenler, tadanlar arkadaşlarını getirdiler, ve benim de yolum bir arkadaşımın kolumdan tutmasıyla Drip’e düştü.
Daha önce hiç denemediğim ‘syphon’ tekniğiyle hazırlanmış bir El Salvador kahvesi sipariş ediyorum. Metal sapıyla cam bir fanusun içinde gelen kahve önce gözlerime, sonra burnuma hitap ediyor. Varolan uluslararası kahve zincirlerinde bulabileceğiniz single-origin kahvelerin aksine bu kahvenin rengi daha açık, daha transparan, daha az gövdeli. Çikolata kokuyor kahve, fındık kokuyor. Özel harman Rus çay karışımlarını hatırlatıyor bana. Damağımdaki tatlar burnumu onaylıyor. Ancak, yine diğer alışılagelmiş kahvelerin aksine syphon El Salvador kahvesinde bir gıdım acılık yok. İçimi kolay, yumuşak, neredeyse saten gibi.
Kahveyi bize Cenk Turna servis ediyor. Başlıyoruz konuşmaya. Konuşurken gelen müşterilerin neredeyse hepsini tek tek isimleriyle selamlıyor. Sipariş olduğunda kendi geçiyor tezgahın arkasına, kahveyi kendi hazırlıyor. Bu sırada dükkanın içinde bulunan köşedeki değirmende kahve çekirdekleri yavaş yavaş soğuyor.
Drip Coffeeist Sinan Eryentur, Selçuk Turunç ve Cenk Turna’nın ortak girişimi. Cenk Turna anlatıyor: “Ben 1987’den beri bu sektörde çalışıyorum. Benim ilgi alanım hep bardı. Aslında genelde barmenler kahveyi sevmezler, ama hep ilgimi çekti kahve.” Kendi çabalarıyla öğrendiği kahve konusunda bir dönem Mutfak Sanatları Akademisi’nde de ders veriyor Cenk Turna. Kahveye olan tutkusunun en son örneği de bu mekan. “Kahveyle ilgili hiçbir şekilde taviz vermem” diyor. Drip Coffeeist kullandığı kahveyi yeşil çekirdekten kendi kavuruyor, kendi öğütüyor. “Biz burada yirmiye yakın farklı cinste kahve kavuruyoruz, tabi bunların hepsi aynı anda hazır değil. Bunların her biri single-origin, yani farklı memleketlerin farklı bölgelerinin kahveleri. Örneğin Etiyopya’dan iki farklı cins kahvemiz var, Yirga Cheffee ve Sidamo. Kolombiya’dan da Excelso ve Supremo. Aynı ülkenin farklı bölgelerinden kahveler var, çünkü aralarında tat farkları var.”
Drip Coffeeist Robusta cinsi çekirdek kullanmıyor. Menüdeki tüm kahveler Robusta’dan daha az gövdeli ancak çok daha farklı ve derin aromalara sahip ve bir o kadar da narin bir üretim sürecinden geçen Arabica cinsinden yapılıyor. İçmekte olduğumuz kahve de bunu doğruluyor, zira Robusta’nın kattığı gövde ve topraksı tatların yerine çok daha zarif bir kahve bardağımdaki ve damağımdaki.
Demleme yöntemlerine gelince, Syphon, Hario Drip V-60, Aeropress, Mokka Pot, ya da Cold Brew gibi belki daha önce hiç duymamış olduğunuz, ve Espresso, Cappuccino ya da Latte gibi daha alışılagelmiş seçeneklerden birini isteyebiliyorsunuz. “Sizin sipariş verdiğiniz andan itibaren belirleyeceğiniz bir yöntemle sizin için kahve demliyoruz. Hazır demlenmiş bir kahveyi bardağa koyup getirmiyoruz” diyerek tamamlıyor sözünü Cenk Turna.
Hesabımız da Karayipler’e atıfta bulunan bir cigarillo kutusu içinde geliyor. Kalkarken üzerimdeki yorgunluğu tamamiyle atmış olduğumu tebessümle farkediyorum. Canınız şöyle mis kokulu bir yorgunluk kahvesi çektiğinde aklınızda bulunsun.
