I’m getting ready for a wood firing. It’s been a bunch of years since I’ve been able to get to one, and I really want to maximize my use of this super special way to fire. So I go down to the studio with the intention of throwing a variety of different forms. But really, all I want to make is bowls! So I throw some bowls, and then I come up to the kitchen to cook supper, and guess what I really want to eat? Bowls. Rice bowls, noodle bowls, big bowls of salad. Then I want yo sit on the porch with the bowl in my lap, and savor all the wonderful flavors and textures and sip some wine. This slow roasted salmon and clam barley bowl was inspired by a lunch at Dottie Audrey’s Bakery. There was sweet chili sauce accompanying the grain, veggies, and fish, that was so good I could eat it with a spoon. My approximation: chili garlic sauce, ketchup, lemon juice, and a dash of tapatio. Also in the bowls: lightly sautéed gorgeous spinach and garlic scapes from our csa, marinated raw first zucchini (csa), and avocado (a must with the silky salmon). El hongo langosta (hypomyces lactifluorum), también conocido como trompa de coche, es en realidad un parásito que cubre el cuerpo de otros hongos, usualmente lactarius (xara) o russula brevipes (pan o cabeza de chivo). El color interior depende del hongo infectado, que puede ser azul, blanco o naranja aunque el reconocimiento del cuerpo es visualmente imposible. Por la naturaleza del hongo, es relativamente escaso y sumamente valioso. Su sabor recuerda a los mariscos, tanto, que algunos veganos lo consideran el sustituto vegano de la langosta. 𝗗𝗼𝘂𝗴𝗵 𝗥𝗲𝗰𝗶𝗽𝗲:
• 200g self raising flour
• 50g Margarine
• 120ml milk
• Pinch of salt (if you want to make it sweet add 60g sugar)
𝙈𝙚𝙩𝙝𝙤𝙙 for the dough.
Measure everything out and mix the butter between your fingers to make a fine crumble, make a 'well' in the middle of the bowl then pour the milk in slowly to a dough consistency, take out the bowl and use flour if too sticky when rolling out.
𝗣𝗲𝗮𝗰𝗵 & 𝗠𝗮𝗻𝗴𝗼 𝗰𝗼𝗯𝗯𝗹𝗲𝗿 -
1) When you've made your dough you use a two-inch biscuit cutter.
2) As it's a sweet version I added chocolate chips but you could add cinnamon before baking too for a different flavour!
3) If you're using tinned fruit you can just add straight to your dish, drained, without prep but fresh fruit requires peeling.
4) Add your dough round the edge on top of the fruit and put in the oven for about 20 minutes - add a lil' sugar on top for je nais se quois 🤌
𝗣𝗶𝘇𝘇𝗮
1) Using the same dough (but without the sugar/chocolate chips) you roll it out to a thin layer (I prefer it thinner)
2) Add tomato puree and drained chopped tomatoes for the topping.
3) Basically use any topping you prefer - I used quarter of a pepper and 150g grated cheese but if you wanted Pepperoni etc then go for it.
4) If you fancy a stuffed crust you simply fold cheese over at the crust, if a calzone style you fold it in half and use a fork to pinch the edges together.
5) Cook for 25 minutes.
