first off, dont apologize, it’s cool.
Secondly, since this is getting off the ground again (idk which one of y’all reblogged it but hey, it’s back and im inspired) here are my thoughts:
Mace excells as using his speed and strength in tandem, while Depa uses her speed and smaller stature to unbalanced opponents. As you stated, Vaapad uses hand-to-hand, so it makes sense that the two would be very good at using it— Caleb is picking up some things as well, though isn’t as good yet.
Obi-Wan is good at street fighting and is a mixed bag. He picked up some things from Vos, some from Siri, learned on the fly, and sat in on some of Cin’s lesser attended classes.
Luke is a street fighter, learned from growing up in Tatooine. Knows how to hold his own in scraps and small fights, but wouldn’t be able to hold up against a formal master.
Here’s where more thoughts come in:
Shaak Ti is a right monster when it comes to hand to hand. As are Agen Kolar, Eeth Koth, Kit Fisto, Voovlif Monn, Oppo Rancisis, and all three Koons. 
Granted, there is the upper hand of not being human. But as Master Ip said, it’s not about gender, age, or race but about the person themselves to show their prowess. 
Shaak Ti is graceful and powerful, quick and deadly. She’s not nicknamed as the Council’s strongest for no reason, after all. 
Agen and Eeth are Zabrak. We all know how Maul and Savage fight, now lets add in some elegance.
Eeth, much like Depa, uses his smaller stature to get the upepr hand. Striking from below and quickly. Agen is taller than Eeth, so he uses that to his advantage. The two are a deadly pair both together and against one another, and it’s gonna take a lot more to take them down than it is to knock a human out. 
Kit Fisto i personally see as a practitioner of Teräs Käsi, much like his Uncle, Neaed. According to the wiki, the basic translation means “Steel hand” and was renown throughout the galaxy for its lethality. We’ve all seen how built Kit Fisto is, we know he’s strong in general. And we’ve seen him move quickly. He’s got the strength, speed, and formal teachings to absolutely obliterate someone.
Voolvif Monn and Oppo Rancisis are a bit different. They’re further from human than the others in form and senses.
Voolvif is a Shistavanen, a natural preadator with more animalistic qualities than Kit Fisto or Shaak Ti or the Zabraks would have. His first tactic is fear. Shistavanens are known for being rarely seen across the Galaxy, and as per SW Canon/Legends, Voolvif is the only Shistavanen jedi pre and during the Clone Wars (that I know of at least). Safe to say, he just puts people on edge. And then getting into a fight? He’s got keen instincts, and is a natural born hunter. Stamina, strength, speed— he’s a tough opponent and hits hard. 
Oppo is just as fast and just as strong, but you have to watch out because he has four arms and a strong tail. You get whipped by that upside the head and you will be down. Oppo is old and patient, he’s been in a fight or two before without his lightsaber.
The Three Koons are... another case like Kit Fisto. 
We know canonically, Plo Koon is a Baran Do Sage. While not required, the Baran Do did have “the option of learning certain martial arts, though the only weapon they commonly trained in was a simple wooden staff”. I like to think that Plo learned and mastered the art— perfected it, and mixed it with other martial arts he knew. Remember, Plo Koon is just like Oppo Rancisis, he’s old, and he’s patient. And he’s fast. We’ve seen him in battle with a lightsaber, we’ve seen how fast he can move. He strikes hard, and strikes fast.
And so Sha and Plo’s Uncle? Sha, I headcanon, learned from her uncle and great uncle. She’s fast, she’s powerful, and she’s smart. She knows where to look for weaknesses. 
Uncle Koon I also headcanon was a Sage as well. So just like Plo, he learend the Baran Do’s martial arts. Just as fast, just as quick, but he’s less likely to pick a fight now than he was when he was younger.
“But Kiwi, what about other humans?”
Well, I’m getting there.
Anakin has next to no skill in martial arts. Yeah, he can throw a punch, he can do street fighting, but had no patience to learn the full extent and dicipline. 
The ones you really want to watch out for, though. That would be Bultar Swan, Micah Giiett (may he rest in peace), Tholme, Dooku, Cin Drallig, and Sera Keto.
Bultar Swan was Micah Giiett’s student before she was Plo’s— and Micah actively encouraged her not to rely only on her Lightsaber. In fact, Bultar prefered unarmed combat and had never taken a life up unti Geonosis. She would use her saber if needed, but prefered to fight hand to hand. Hell, she learned Teräs Käsi and the Verdanaian "sliding hands" under Micah and later blended the two together. 
So yeah, she’s strong and she’ll use her small size to kick your ass.
(Ever seen a tiny asian woman kick someone’s ass? Same vibe. And I mean it. Bultar is the Asian Rep of the Jedi Order because [incomprehensable grumbling about how Lucas took culture but didn’t get asian actors really])
(And Lissarkh’s hella good too because no way was she gonna get one-upped by Bultar. Lissarkh’s got the instinct, the predatory talent, the strength and the ambition to rise up. She has the patience to learn and the skill to rival her friend and sister)
And we know Micah’s strong as hell just based off of that.
Tholme canonically is very powerful in his own right. He’s a powerful saber duelist and also trained in the ways of the Anzati assassintion. But more importantly, Tholme is a healer. He knows the body, knows how to heal it, but also knows how to undo that. Knows your pressure points, knows how bones break the easiest and people underestimate him because he prefers to work behind the scenes as a mastermind of events, rather than a diplomat or a warrior. He uses that to his advantage— and his kicks hurt like hell after his encounter with Dooku. Shit hurts when you’ve been axe kicked by a metal prosthetic. Besides, someine had to teach Quinlan his skills as well.
(Quinlan’s also good but like, these are the folks i wanna focus on)
Dooku is a perfectionist. A strong mind equals a strong body, and the stronger the body the more fluid the saber style. I belive makashi is based off of fencing and idk about y’all but fencing is hard. There’s balance, there’s more than just smacking a sword around— no. Dooku strove for elegance, and there’s elegance to Martial arts. 
Also he didn’t want to keep getting the daylights knocked out of him when Cin and him fought over the last bit of Caf.
Cin’s the battlemaster. And the head of the Guard. To be the strongest defense, you have to understand and know offense. Sabers can  be taken, lost, thrown out of reach— you need to be able to defend yourself then. And Cin does just that. He’s the one who teaches the children how to do hand to hand basics, how to throw a punch without injury. He’s the one to watch out for. And mostly it started because Dooku left an empty carton of juice in the fridge.
Canonically, Cin developed his own unique styles of lightsaber combat that were based upon on enhanced speed and unconventional and unpredictable movements, and throwing a fist in the middle of a saber fight is certainly unconventional. 
And it would make sense that Serra, Cin’s student, would follow suit. She followed his teachings, was attentative to his training— she’s fast, unpredictable, and unconventional, not to mention very inclined acrobatics. She’ll hit hard where it hurts before creating distance with a back handspring while kicking you in the jaw.
