Once they all woke up you and the others are eating, chatting and once they all finished they put up the dishes for you to clean
"thanks mom for the food" Ashlyn said "please not you to Ashlyn" she just smiled and went to the living room
You always got used to them calling you mom for some reason and just accepted your fate being their mom
And at first they kind of didn't like the food but they start to like it now they're used to it
When it's lunch you cooked a bowl of rice, a bowl of soup or stew, and some side dishes as accompaniments and as always they liked it and "thanks mom" "whatever your welcome"
When it's dinner its just the typical Noodles they love you so much theyre glad your on their group

He loves to hear you explain your country's history, so it's not uncommon for him to randomly lie down with his head on your lap and ask you about marriage, economy, politics, and so on works there, all while you scratch his head and play with his hair;
Will suggest nonstop you guys take a hot air balloon ride in Van Vieng;
Before you meet your family you spend two days on Don Det Island and you can imagine Mick's reaction when you explain that bicycles were the only transport there - of course, he rented you guys one, and agreed to go back next year because the sunset there was unmatched;
You'll celebrate New Year's Eve with his family in Switzerland, and he'll celebrate the Water Festival in April with you and your family in your Lao home;
Mick is a curious guy and learning to play the guitar, so he'll definitely get interested in the khong vong going as far as asking a family member of yours to teach him;
He loves the way the Lao people use vegetables, herbs, and spices i the cuisine, and you guys will have tons of cooking dates. It's very relaxing and you get to remember your childhood and heritage;
Since Mick is not vegan or has allergies, his golden rule is: try first, ask second. That's how he ends up eating grasshoppers one day - he actually liked it, and then of course his athlete side-kicked in and you started talking about how a few insects had more proteins than chickens or cows and how this influenced climate change;
Conversations with Mick were always free of judgment. You could go from politics to the next Disney movie you wanted to watch;
He will post about Lao and will suggest you guys backpack around the continent once you're on vacation (he got curious about Thailand after you told a few curiosities about the country);
Loved to meet your family, and the elders absolutely adored him as well - he's a sweetheart after all;
Pretty much becomes a Lao honorary citizen as well;
Will suggest you guys vacation there whenever possible because according to him there's always something new to learn;
Pretty much in love with you and everything you are that includes, of course, your country and history.

A lightee ask than usual but do you have any food or eating habit thoughts?
Ooohooohh, I did a whole ass seminar on the history of food. Failed it because I almost bled to death but I got to keep all the material! I've got.... a lot of thoughts and feelings about food culture. Too goddamn many, tbh. This got really long so I'll have to do a part two for other characters if wanted but lol enjoy.
Alfred:
—Actually pretty gourmet little shit when he's got time and effort. He's made food Maria loves so often she has to give up on pretending she didn't enjoy it because fucking hell, he makes good chilaquiles after they've been drinking and fucking. There is, however, a non-zero chance he hasn't eaten a vegetable since the Nixon administration.
—With that combustion engine metabolism, he's also perpetually hungry, so he eats whatever is around him. His guts do not like this, especially when it's a lot of dairy.
—He has that kind of lactose intolerance that's tied to his health and stress, so if he's been particularly freaked out lately, he'll remind the world of his nuclear arsenal when he's got to use the toilet after that triple cheeseburger with a side of deep-fried cheese curds.
—He's a stress eater too. He eats every negative emotion he's ever had especially when he's trying not to binge drink or do drugs.
—He’s exceptionally food-motivated. They didn’t call one of his first major historical eras ‘the starving time’ without reason. He has preferences, but food is also food, and he’ll genuinely enjoy it in most forms as long as it's not rotten or otherwise godawful. Cowboy coffee and beans for ten days straight, and he will genuinely be the only man on that cow trail not sick of it by the end.
—This also goes into why he’s so generous with food. He’s big on homemade food. He’ll make a whole big ass batch of like some sort of mac and cheese, and all the neighbours will get a big ol’ bowl of it with an ‘oh just return the Tupperware whenever,’ and it will genuinely be one of the best things they’ve ever eaten in their lives. Europeans recoil in horror, but our portion sizes are almost never single servings. It’s a generosity and hospitality practice except drinks. He really will down like a 2 liter of Slurpee in a single sitting.
—He doesn’t mind eating alone. Actually prefers it sometimes. He loves eating in his car. American frontier culture, especially mountain men, had an often hyper-individualized, almost mythic culture of spending long periods alone in the woods and not being very sociable; thus a lot of situations where single servings were a thing, eating alone in quiet without something to do can be a real goddamn luxury.
—He’s a really big protein guy with his metabolism. Sometimes exists on protein shakes but is more often a beef or barbeque or ham or alligator jerky. And a somewhat chunky Alfred is a healthy Alfred. A perfectly cut no flab Alfred is an Alfred who might be severely dehydrated and on several kinds of uppers.
—He has better tastes than Arthur who didn't really realize food was supposed to taste good until like ten years ago but his combinations can be equally wild and unappetizing as they are batshit tasty.
—He loves spicy food. He's got so many opinions about hot sauces.
—He’s always hungry. If he isn’t hungry or turns down food, its genuinely a bad sign. If he turns down anything or just is just picking at it his food alarm bells should be sounding. He’s either about to declare war or puke all over the table or keel over dead. Peckish or food coma is his default state. Like if he was a smaller guy someone would say he’s got a binge disorder but he’s tall and beefy so he’s pretty okay.
—Incredibly adventurous eater too. People will assume since there’s that old school culture of Anglo-American who eats the same 7 meals every week and might keel over dead if the meatloaf is slightly different he’ll be a bit hard to please but then he’s absolutely charmed by everything from Korean kimchi to Lithuanian Lašiniai.
—He loves anyone who feeds him, just got to be a bit careful because he’s got surprisingly delicate stomach for the world superpower.
—That American obsession with authencity means he’s surprisingly good at remembering people’s food culture or eating norms. He figured out chopsticks in ten seconds and quickly picked up the cues and manners of eating in any given culture. Still struggles with modulating his voice and personality, so he can often come across as rude, but he's so excited to do so. It's almost frustrating how happy he is to try and adapt to people around him and how happy he can be to fit in.
Matt:
—He's a very good cook when he's putting in effort for other people, but he's not really like Alfred, who he'll make a whole ass meal for one just to relax on a Sunday.
—He does tend to eat more vegetables than Alfred, but only because his northern vitamin deficiency has him binging them when he can afford them or they're available during the summer.
—He can be weirdly picky on his own, but no one ever really needs to ask about his favourite food or how he likes anything because he always just goes with the flow around other people. “Just get me whatever you’re getting.” comes out of his mouth often.
—There's a lot of sour cream/crema and yoghurt/coconut milk involved when he eats Mexican or Indian food for as much as he loves it.
—Katya was singlehandedly responsible for his ability to maintain a normal weight during the 20th century by adding rye bread and perogies/vyrenki to his diet. He craves mushroom-umami flavours when he misses her, which is most of the time.
—When he’s normal and eating the Anglo-North American diet, but he isn’t always eating it, he gets some strong sugar cravings, especially when he’s west of Manitoba. He’s as fond of birch syrup as a flavour as he is maple; there’s just less production. But the kind of deprivation he got and his own tendencies to not eat sometimes cause white sugar to just straight-up burns.
—There's very much something of François to Matt's dietary habits, but less in his personal tastes and more in that he might be more sensitive to flavours. He has that kind of discerning and slightly oversensitive palate, but he’s a shitty perpetually broke frontier settler colony. He knows better/feels too guilty/is too embarrassed of himself to really indulge it.
—He kept too much of his peasant communalism in his eating habits. Where Anglo-American communities did have a lot of cooperation, communal eating was a special occasion. The norm was based on the individual household. In contrast, French Canadian habitants still technically lived on medieval land plots and owed labour to a lord while also having a culture of seasonal male work, so Matt grew up used to communal ovens and eating most of his meals around others. Later, in Arthur’s jurisdiction, it was usually the same. He got a plate of whatever he was given, and it wasn’t something he had ever had to initiate himself.
—Partially, he's sometimes exceptionally bad at eating when he has to choose to do it himself. Especially since the Americanization of the food culture took hold in the '80s and '90s. Whereas Alfred is food motivated from going without when he was little, Matt learned how to block out physical sensation until he collapsed because it was rare that someone, including himself, cared about what kind of state he was in. He just doesn’t eat at all when he’s stressed or anxious. And now it's his sole responsibility to do so as there aren’t the same community structures. He has a lot of Alfred’s abundance now, all the brunch and BBQ places anyone could ask for, but it hasn’t meshed with his eating habits. His people gave up so much of their communal eating in exchange for various choices and then wondered why they were so lonely. So he’ll just microwave a potato or a packet of Kraft dinner a day for a week straight and wonder why he feels dead because, technically, he did eat something. It’s seriously a miracle he got as tall as he did.
—Feed him nothing but hardtack for three years, and he won't complain until he's dropped dead of scurvy. If Arthur puts some sort of godforsaken mixture of plum sauce or gin-infused spag bol in front of him, he’ll compliment it before he disassociates to get at least some of it down.

Diet. Workouts. Lifestyle
We are now entering a period wherein we adopt the culture of South Korean artists, especially their food, exercises, clothes, dramas, and music.
Have you ever wondered why K-pop idols and actors are so skinny?
K-idols and actors balance and are strict with their lifestyles, including their workouts and food intakes.
Who wouldn't like to be as skinny as them? Let's start to be fit before the year ends.
First, be determined to workout once or twice a week at your convenience for thirty minutes to one hour. There are a lot of workout exercises on YouTube right now; you just have to do them and make a choice on which exercise is best for you. For me, cardio workouts standing I usually do once a week. First year of pandemic, usually I do workouts every day. Yeah, I was satisfied. In two weeks, I did achieve abs and became skinnier. Some of us hit the gym to become fit, which is also good.
But let's see how K-pop idols and actors do their workouts. As they said, before you make your debut in a group, you must undergo a series of training sessions in proper exercise, diet, singing, dancing, etc. Let's focus on their workout.
4th Generation Le Sserafim workout routine: 100 jumping jacks, 4x25 burpees, 2x10 jump squats (holding ears), 1 song plank crawl, 2x10 plank up and down, 2x10 plank twist, and 75 crunches
Girls Generation leg workout routine: 15 thigh hovers, 20 squats, 10 side planks, 20 inner thigh lifts, 15 hip kicks, 15 high knees, 10 lunges, and 19 hip raises
Blackpink Jennie Kim does pilates exercise for one to two hours for five days in a week. This helps to be flexible, strengthen, and tone the body.
BTS’s Jungkook Workout Routine: Knowing Jk, he does boxing exercises in his Weverse Live, but he also does 20 squats, 20 pushups, 20 jump squats, 20 pike pushups, 10 planks, 20 mountain climbers, 15 burpees, 20 crunches, 20 leg raises, and 20 Superman’s exercises to achieve his amazing toned body.
Exercise has advantages; it helps our brains improve, helps us manage our weight, strengthens our bones and muscles, improves our daily activities, and has a low disease risk (don't abuse it too much because it may also have a great risk in our body).
Second is food. Who doesn't like food? Do you know kpop idols and actors are forbidden from eating condiments, sweets, fried chicken, tteokbokki, pastry, ice cream, noodles, hamburgers, and jokbal before they debut as artists because they need to have a slim or skinny figure? They undergo really strict diets.
In the Philippines, there are a lot of fast food chains and restaurants opening from time to time.
Salt is usually what we put in our food, but have you heard that if we intake too much salt, there is a bad risk to the body? Salt intake in excess can be associated with disease, weight gain, and much more, but for us Filipinos, we can't remove it from our foods. We are fond of eating noodles, junk foods, fast foods, and restaurants. I read a lot of articles about how some salty foods can cause swelling. Sweets can gain us weight, and articles show they tend to give us acne or pimples. As per my experience, I am very observant about it. Back when I was in high school, I loved eating sweets like chocolates, candies, and much more, which gave me acne on my face and on my back. In time, I stopped eating chocolate, any sweets, and milk too. It slowly disappears, but then again, consult a physician for more information. Meat is really delicious, but the fatty part is no good if eaten too much, especially if you are really on a diet. The breadings, sauces, and ingredients we put on them are sometimes bad for our health. chicken, preferably the breast part for those on a diet.
Let's see how K-pop artists eat.
For IU, apple, sweet potato, and protein shake for a day
Suzy Bae ate one chicken breast and a banana for breakfast and drank a glass of milk. For lunch, she ate brown rice and a small vegetable salad. She finished the day with two sweet potatoes.
Blackpink Jennie's low-sodium (salt) diet, detox juices, and salad with avocado
That’s why they could lose weight in a short period of time. Remember to drink water.
I'm not saying it is bad, but in moderation, did you know that home-cooked food is still the best for me because we can control it on our own? Eating vegetables and fruits can also help us in our diet, but it really depends on a person's lifestyle and diet. There are a lot of apps now that you could try to help us plan our meals and exercises. We just need the determination within ourselves.

Well, a small mini bonus with the circus brothers. Since they are rodents, meat dishes are closed to them, they simply cannot digest them and their stomach rejects it, but at the same time they calmly eat eggs and dairy products.
Because of his depression, Oswald ate quite a bit and his relatives sometimes had to almost force him to eat at least a small piece. Contrary to stereotypes, the rabbit does not like carrots, or rather, he is indifferent to them and prefers celery to them. Favorite food: blueberries. Despite the fact that he is already recovering from his drooping state, he still eats little. As a rule, these are vegetable broths with glass (rice) noodles and mushrooms. He is close to Korean cuisine, which includes a lot of rice, all sorts of roots and vegetables (excluding all meat and seafood). It is difficult to associate him with establishments, since the rabbit likes to eat alone and in silence (which is quite difficult to do with a bunch of children) But if you choose, then these will be Asian establishments in a format where a stove is built into the table or a huge pot of broth is placed and the guest cooks for himself. {💜Kimchi Prep & Dish💜}
Korean readers need more representation. That's it. Also, if I ever offend any of you white people. Please, respectfully, get over it. No one has said anything(maybe because I haven't joked about it yet satirically) but I've had experience with people telling me the being racist to white people was a thing. And that they shouldn't be responsible for their ancestors actions. Then later on go to make racist jokes. Not saying I hate white people, I just don't immediately like you guys. The bar is not the hard to overcome anyway. Just don't be a racist biggot and we're good.
In Queens there was a small Korean restaurant with a pretty decent community filled with familiarity. Something that attracted a quartet of mutant turtles who were always longing for new experiences. And places like this were perfect.
The culture was unique, music was widespread, and people were of different variety and presentability. Proven especially with Iseul Ok(pronounced; 'Ock'). One of the daughters helping out at her grandfather's restaurant. The turtle brothers had saved the blind man before from some low lifer's and he repaid with food for life. No complaints were made, anything to stop eating pizza whenever they couldn't get any specific ingredients.
So when they told him about their situation, he told them to come after hours so they could eat in peace behind the building. Which turned to them meeting his youngest grandchild. She was really sweet. Shocked about their appearance at first but then quickly turned when she started cracking jokes with Mikey. So Donnie watched. Observed. Tried to make sense of her. Learn about her.
He gained an interest to learn about the culture of her and her family. Which turned to him asking about Kimchi. Since it had gained a lot of popularity on TikTok, and it reached his 'For You Page'. To say she was ecstatic was an understatement.
"Kimchi's really important to us. It's a national treasure. You know for some people it represents love and future?" She asked rhetorically, which made Donnie tilt his head to the side smiling. Listening to her ramble was something he found appealing. She wasn't ashamed for her culture, which sadly was something that happened to often in cultures who weren't colonizers.
"How come it's popular?"
"Our ancestors wanted to achieve balance between nutritional qualities and health. At first it was pretty bland. Some salted vegetables with Korean Radish. Later on spices were added. There's a lot versions of it now but they each have the same origin. At least 180 varieties."
"Damn! People sure love their food." Donnie mused as Iseul collided her hip with his playfully. After fully making it Iseul turned to Donnie with a weary smile. He smiled back at her nervously.
"Sorry, it's just,... usually for it to get good fermentation it should be stored for at least one or two days. Or sometimes two weeks. You can try it now and bring your brother's back so they can taste the good version."
"Whatever you think is best. I'm only just learning." Smiling, Iseul grabbed a piece that looked more covered in the spices and fed it too the 6'11 turtle. Who leaned to reach her 5'10 stature, which was taller than most women in her community. Older generations barely reaching 5'3.(Y'all are tiny, no offense)
Savoring the flavor, Donnie's eyes lit up at the texture and amount of flavor. He was so happy in fact, that he started churring. Shamelessly might I add. Which made her happy. It showed that he was comfortable around her and didn't try to mask himself to appear more "normal".
"It's delicious, can't wait to try it again in a few weeks." He smiled at Iseul and helped clean up the kitchen after putting the Kimchi away in storage.
"Remember to bring your brothers. I want them to get a good taste of it." Nodding in agreement, he left her apartment and arrived home around 2:30 am.

A few weeks later the brothers were headed to Iseul's apartment to try out the infamous food Donatello had been hyping up. Smirking in amusement Raph nudged his older brother who returned the emotion and turned to his nerdy brother.
"Question. How long have you been waiting for this?"
"Not long, like two weeks. Only because it makes the flavor set in more." Nodding at the explanation Leo glanced at his other two brothers and looked back to Donnie.
"And you're sure it isn't because we haven't been able to see her that you're so excited?" Rolling his eyes, Donnie turned away from his leader.
"I have no idea what you're talking about." A small laugh came from Mikey as he walked up to his brother in purple coloration.
"Bro, if we were messing with you, you could tell. Be honest now,.." A pause fell over the turtles waiting for the youngest one to finish his sentence, "Have y'all kissed yet? Ow-!"
Getting hit by a pebble to the noggin wasn't fun. Especially when it was thrown slightly faster than usual by the most yolked out of the ninja quartet. Glaring at his little brother, Raph turned to his twin brother.
"Ignore him, let's just go. But D, seriously. Just ask Ise out man. Her family already knows about you. Not much stopping you," Donnie went to open his mouth to retort but was shut down by Raph. "Cept for losing the friend-ship, and yadda yadda."
"We'll make give Donnie advice later. We gotta hurry before Iseul starts spamming our phones." Leo told the others before running off with the three in tow.
Arriving at the apartment, Iseul opened the window for them to come in and made sure no one was watching. Setting their weapons down somewhere safe the brothers went to relax on the couch and started the Nintendo to play Mario Party. All of them except for Donnie and Iseul who was getting the giant container of Kimchi out.
"Feast your eyes, Dontron." She said while lightly pushing it towards the turtle. The food was bubbling and making noises. Eagerly Donnie grabbed a piece of cabbage ate it. Eyes lighting up in enthusiasm. Turning his head to the tall girl next to him.(Who was still small compared to Paul Bunyan over here.)
"It's even better than before! You have to let me take some for Splinter. Guys get in here!" With a few seconds the turtles and Iseul were snacking on the Kimchi while also enjoying video games and at some point a movie. After some talking the brothers got ready to leave. All but one.
"You guys get going. I'll catch up." He said handing Leo the bag containing a portion of Kimchi for their master. Agreeing, the three turtles left through the window and headed up to the roof. Iseul looked at Donnie confused. That is till he pulled her into a hug, which she reciprocated, and began talking.
"This is really hard to say and get off my chest. I know we're best friends and we don't keep secrets from each other and you've said before that you can tell me anything,.." Taking a pause after putting the girl down and looking at the ground to avoid eye contact he barely lifted them to see her face. She caught on to what he was saying. "But that's also why I'm not as nervous to tell you this because I know that you're not someone to shut out others who are emotional or don't think before acting. Something I admire about you the most."
At that point Iseul got on her tip toes and kissed him on his cheek. Standing there in shock and lifting a hand to touch the area she kissed. Hearing a click they both turned to the window and saw Mikey laughing and running back onto the roof. Groaning Donnie looked back to Iseul and smiled.
"Let's make this official tomorrow. My grandpa is making a giant buffet for the community and he wants all of you to come. Could also give them a chance to meet Splinter." Nodding, Donnie leaned down slightly and kissed her forehead and ran out the window.
Jumping up to the roof ignoring his shit-head brothers staring him down after smiling at the pictures the youngest turtle took.

3 Ships You Like: I'm all about the polycules lately -- so 3zun, Liansanjiao AKA Difanghua, and whatever it is that Lan Jue and his harem of guys from "A League of Nobleman" have going on.
First Ship Ever: That would have been Teja and Totila from "A Struggle for Rome", a rather stuffy 19th century historical novel that I read in my early teens. I am the fourth generation in my family to love that book, and Teja is something of a hereditary family blorbo.
Last Song You Heard: Caravanseray by Kitaro, from the 'Silk Road' sound track. I read a brilliant fanfic about Wangxian in Dunhuang, and remembered that documentary series. It's on YouTube in its entirety, ripped from Korean DVDs about ten years ago. It was very seminal for me, back when it was on the telly.

The worst recipe for Kimchi I've ever seen.
So I'm a food nerd, if the love of Anthropology of food isn't self-evident enough in the 50 page doc on the history of food and food Anthropology based on Subsistence. lol
And I'm a super food nerd when it comes to kimchi. I've tried almost all the varieties of vegetables one can kimchi and learned their mush points. And this, by far is one of the worst recipes of kimchi I've ever, ever read. And being a food nerd, I'll break it down for you.
Don't worry, it's not made by a Korean--it's made by someone white, but I am Korean. And before someone chases me down, "You're an adoptee" I grew up in Korea for the first 5 years and have been tracking down Eomma's kimchi recipe after I semi-remembered the flavor. TT Covid stopped me from going overseas to test it out.
I know when you think of kimchi, you most likely think of the spicy cabbage variety, but I'll inform you that I've made a lot of types of kimchi. I made the Dae Jang Geum Kimchi after a lot of research and digging around. I made kimchi in plastic that never turned out well. I've taken out ingredients and put them back in. I've made kimchi out of different vegetables, and I famously got cited by my own city for making Eomma's kimchi, which BTW, has raw clams and mussels in it.
I've made monk Kimchi too, and gave those tips off to Maangchi.
I'm like kimchi geek over here. I can tell you all different facets of kimchi. Maybe because I tend to hyper focus on things, and I definitely hyperfocused on kimchi.
So I definitely can say the above is not kimchi.
Let's define Kimchi:
Kimchi is an aerobic lacto-fermetation process that is usually balanced with a protein in order to preserve mainly vegetables/vegetation, but sometimes seafood or other seafood matter.
Why is this not a kimchi?
1 Chinese cabbage
3 garlic cloves, crushed
2.5cm/1in piece ginger, grated
2 tbsp fish sauce (optional)
2 tbsp sriracha chilli sauce or chilli paste (see below)
1 tbsp golden caster sugar
3 tbsp rice vinegar
8 radishes, coarsely grated
2 carrots, cut into matchsticks or coarsely grated
4 spring onions, finely shredded
Chinese cabbage is not the same as napa. Chinese cabbage is longer than napa. Does it look similar, yes. Have I attempted to make kimchi out of it yes. Did it have the same properties? No.
But forgive the white person for not knowing that. Chinese cabbage has more water content than your average large head of Napa.
3 Garlic cloves is laughable. It won't preserve for a year like kimchi is supposed to.
1 thumb of ginger? No. No. No. That's not enough.
The fish sauce is not optional. You need that to even out the lactobacilli. If you're not going to use fish sauce, then up the protein content with barley. I really do swear after messing up kimchi on purpose the fish sauce does have a FUNCTION not just a taste.
BTW, more than fish sauce goes into kimchi, though. Usually depending on the region you might get shrimp paste, mussels, clams, crab, octopus, squid, oysters. These pretty much ceviche in the liquid over time.
My favorite is Eomma's recipe with katuggi. ^^;; But I suppose that would anger both my parents. Hers I'm fairly sure had mussels, clams and maybe crab? And yellow corvina fish sauce.
Anyway... Sriracha is made up of red jalapenos, which do not belong in kimchi. Kochu is special. BTW, this already has sugar in it. Kochu is designed to stain on purpose. See the slurry portion below.
golden caster sugar isn't something that came about until industrialization.
rice vinegar is a totally different process of fermentation than kimchi. It won't render the same results.
European radishes don't belong in kimchi. Have I tried it? Yes. Did I regret it? 100%. TT There isn't really a substitute for Mu. Daikon is a distant second. European radishes are when you're dying in a desert and there is a gun to your head to make the kimchi with them and you have no other choice. Get this: Koreans who moved to Brazil, rather cut out the radish component completely, use European cabbages than use European radish. It's just nasty to bite into as a kimchi. Mu has less water content and is far denser than your average daikon and definitely over European radish. I'd choose watermelon radish over European radishes. (Have I made that into kimchi? Yes.)
Carrots do sometimes go into kimchi, but I don't think that's why it's there. This is more a Jeolla thing though.
You're not supposed to shred green onion for any dish I know... and I'm thinking of things like pajeon and green onion soup. Where is the slurry? ALL Korean Kimchi has a slurry, if it has sweet rice flour, whole wheat flour or Barley flour. It has to have a slurry. The slurry has a function. It's there to make sure the ingredients distribute evenly.
Lactobacilli aren't going to act in ONE day. This brings the health benefits of kimchi.
The food science:
Since the majority of Korean fermentation lives on the wild side and likes things like air and sun, often the "weird" ingredients in kimchi that foreigners hate are there to MAKE SURE YOU DON'T DIE when you eat it. Stop trying to cut it out without understanding its function.
Got it? Now stop doing this crap and actually understand the food science of things like the anti-bacterial properties of garlic. How lacto fermentation is good for you, so you don't leave it out for only one day.
Koreans boast their heads off about the health benefits of kimchi as passed down from our ancestors for thousands of years. Why mess with a good thing without understanding why our ancestors made it that way?

Okay, to update on the "will I make them found family bros or a polycule" sitch with the nightmare gang, they are in fact brothers, and that decision was made for two reasons:
One) the relationship they have with Thei and with each other that ive written so far, is very brotherly, to me at least haha
Two) I was reminded of RottenCrop and then got brainslapped by Outer/Horror and decided, WHAT IF ALL OF THE ABOVE?
So now they're a lil polycule of their own and I love them dearly just from what I've written so far akenekf

I love the design for Star's jacket that I made, plus his shoesssss~
Star is at least autistic in this multiverse, if not AuDHD, but I'm not sure yet. He hyperfixates on stars, of course, and giving star-related things to people is his top love language. He also is very understimulated easily, and loves touch to the point he (like K) will regularly drape himself on top of Rust for comfort, as well as randomly climb under him and use him as a blanket like he's not twice/thrice his size lol
He also regularly picks up Sage and plops down with him in his lap to cuddle, which usually includes him massaging different areas while telling them (both Sage and Rust) what he loves about that area of them. (Ex, I love your hands because they're rough from work but still so gentle, or I love your shoulder blades because they peek out when you turn and you look like you're gonna sprout wings hehe)
Star can NOT wear pants, he hates pants and will shred them if they're put near him (much like Rust with shoes)
Star lives in the Castle with the gang part time, but spends a lot of time in his own AU as well, as he's still a scientist and keeps things going there, plus his brother still lives there. His Paps is his twin, and lives with Mettaton, Alphys, and Undyne in a big house now. (Papyton, baybee)
(Sage will pack fruits/veggies/meats for Star to take home for everyone)
Star is very extroverted on the Sans Scale, but despite being understimulated most of the time, he's easy to overstimulate when it comes to noise, seeing as he lived in space his whole life. Even when you could hear others it wasn't super loud, you know? He'll typically go mute or will get clearly agitated when this happens, or both.
He also covers any room he may sleep in (which includes the den of the Castle as well) in glow stars, from the walls to the ceiling. He hates the dark and will break down in it. He loves any and all vegetable (especially how Sage makes them) and will not touch soup with a ten foot pole (soup is so unsafe, you don't know what'll be in it and one little change and it's all different, and the temperature could be all wacky, and the textures-) (I'm projecting lol)

Sage, or Farmer, was a bit difficult to decide on how I wanted to portray him, because I've seen him as Korean, as Japanese, and more. Oira is such a cute name, so despite choosing for him to be Korean in this world (though he's fluent in Japanese and English and learning Russian for Dust), I kept the name Oira as an option. He just has many options :) Ink calls him Parky because he saw his family name ONCE and jumped on it. K calls him Petals because he's always wearing floral pants and K jumps at the chance for wacky nicknames (like how he calls Thei Fishnets from time to time).
Sage is from a "Genocide" timeline, which for him just means they got booted from their land. He and his Paps (who I can't decide a name for yet, maybe Kale?) live in the Castle and run a farm for the guys (Sage on garden, (Kale) on animals. Sage also cook when Rust doesn't, as it's absolutely Sage's love language to make food for people as well as take care of them. He's regularly making or getting things he thinks will benefit his partners, including every star themed item he ever sees for Star and all the blue things for Rust and Ink. He picks up books for Dust and Night, and will hunt down weird/wacky clothes for K because K loves to have stupid t-shirts or skirts with shitty patterns on them.
He is a gift giver, a carer, and an incredibly loving person that shows his emotions much more healthily than most other Sanses.

Rust is one of my favourite characters to write so far in just the little bit I've had of him. Rust is a big softie type, but can and will throw someone (and has). Rust is almost fully nonverbal, but he'll talk rarely or make noises to enunciate his thoughts as he signs. This is mainly because the hole in his skull causes him some issues, and he gets extremely frustrated to the point of self hatred about his stutter, slurring, and struggle to find words. Signing is easier for him in general. He has a prosthetic arm, but it's linked to his magic so he can use it to sign as well, it basically functions as a normal arm no issue. But, when it's off for repairs or something, he tends to get frustrated signing one handed so will either be completely nonverbal entirely or if need be will write things.
His Paps, Paprika, lives in the Castle as well, as their world was destroyed very early on. Paprika cleans mainly, and Rust helps a lot, especially with dishes and laundry. Paprika also helps in the garden because she wants to learn, and she's going to uni in the OT for psychology :) (is called Rika by Ink when he's very young and it awakens something, she's trans mtf) (Rika to most everyone, but still loves being called Paps or Papy by her brother)
He loves blue because Ink loves blue, and Ink is his buddy. He babysits Ink more than any of the other brothers, because Dust can't handle it just yet and K is usually running around too much to keep an eye on a kid, and Thei is Dealing With Alot™. Sage and Star help as well, and Ink has many many many Star gifts he keeps in his room.
He loves food, of course, and he loves cuddles. He was not at all a touch person before Star, and Star opened him up a lot, but when Sage came along it really helped him learn that touch can be safe and even helpful and necessary, and he's now the snuggliest bug. He will randomly put (part of) his weight on people or pick them up and put them on his shoulder/back. (K realises this and immediately is always using him for transportation haha)
He hates the dark so appreciates Star's glow stars, and hates shoes with a burning passion. He has claws for feet and will use them against shoes. He wears loose slippers if he needs to, but hates it.
He watches telenovelas and other dramas because he knows Puppette wants someone to talk to about them, and he keeps a notebook of everyone's interests, favourite foods, colours, things, etc bc his memory is bad. He also lets Puppette cheat off it bc of his own memory being even worse.
All in all he just loves showing people he appreciates them, and he loves making sure that people are cared for. He loves giving long, soft, "you better know how much your loved" hugs.

Firsts and Seconds by Skerb is my favourite RottenCrops fic (even if it's not done) so essentially, that's the plot of how Rust and Sage meet, in my mind. Sage ends up more than half dead in the fields, is nursed back to health slowly by Sage and with help from his brother, and they fall in love. Star is in desperate search for him while he's gone, and doesn't find him until Farmtale is Genocided and then destroyed, where Core takes them to the OT and Star and Rust reunite. They have an open relationship (or maybe not open, but fairly lenient, is the right words) then so all is good, and eventually Star and Sage decide to date as well after falling in love. The three of them close things up as a lil polycule :)
They don't have any plans to move out, or have kids, or anything like that just yet, they're just vibing. They probably won't eave the castle, as it's just home to them, and Nightmare adores having them there, despite how little he may say so. Their main goal is growing and helping raise Ink, and helping family.

The more I get into Asian cooking, the more I grow to love it.
One thing I'm finding is that Asian food can be even healthier than I thought it was (and I already thought it was much better than American food in that regard), and still be incredibly fucking tasty! For instance, kimchi is AMAZING for your gut health (I started eating it recently and my stomach is thanking me for it). There are tons of ways to prepare and incorporate vegetables into your food as well that makes them enjoyable. There are also plenty of ways to flavor your rice (I found a Korean flavoring paste that I now decided I can't live without). The snacks and desserts can also have a surprisingly high fiber content, are low on added sugars, and have no artificial sweeteners. Not to mention, lots of Asian food is made with rice flour, such as the noodles. That's so much better than wheat flour (and kind of works for me as I'm starting to wonder if I have gluten intolerance).
Also, I personally find that it's very easy to prepare a lot of these dishes. But maybe that's just because I gravitate towards rice, noodle, and soup dishes.

Hello Japan
June 28, 2023.
Today was a travel day - but it was a short travel day, relatively speaking with a 2 hour flight to Japan - and just like that we were closer to home.
Japan is a LOT bigger than South Korea but Seoul with 25 million people is a lot bigger than Tokyo with 12 million. Both of those cities have more people than live in the entire state of Michigan since we have under 10 million. PHEW!!
Take a look at Japan transposed on Michigan. If you were to start in at the Mackinac Bridge and start driving you would be in Mexico before you got to the end of Japan territory. Surprised? So Japan is 51% bigger in land mass that Michigan but they has 144 MILLION more people that Michigan.
The first day we were here we just moved into our hotel in downtown Tokyo and had a lovely dinner to get to know our new guide, Ken-san. Tokyo feels different than Seoul and is not an vertical.

It is vertical - don't get me wrong - but there are more old "high rise" buildings of 10 - 15 stories and more old with the new. But this is really just a first impression.

Day 2 - June 29, 2023
Today we visited a Suma Wrestling facility. This is NOT a sport that I would EVER seek out - but now that I know more - I have to confess, I am kind of interested. - although NOT even close enough to attend an event. NO EVEN CLOSE!!! We spent an hour with Bungonishiki while he showed us some of his exercises.


He is retired and now trying to keep the sport alive working with youth. He was willing to help us understand this ancient sport. He was a very nice man.
The average match is 7 second - FYI! The wrestlers live in a dorm like setting and eat an enormous amount of calories every day while training several hours.
The top 70 wrestlers earn an very good living and the top make a VERY good living - I'm talking FOUR million dollars a year.

We watched a couple of videos of matches including one with a guy who weighed 600 lbs and I am still trying to figure out how to "UNSEE" that. OMG!!! Later we went to see a Sumo ring. Before your match you fling a little salt to honor the gods. Who is the god of Sumo? you ask. No flipping idea.

This sport is old - it is kinda' like the jousting idiocy for Japan. Each kingdom or shogunate (this might not be the right word) had a bunch of the guys and they would challenge the group from another kingdom./shogunate. Now these guys have sponsors - like McDonalds - and I am not kidding. The grand champion (also not the right word) was sponsored by a Russian yogurt company. The skirt below (again - not the right word ) was the company that sponsored our friend.

On to lunch... We went to this delightful place where we had to remove our shoes - VERY COMMON PRACTICE - and then each of us had a little cast iron pot filled with broth, vegetable and chicken., called "nabe." or "hot pot." The flame will last long enough to cook everything in the pot. I thought the process was pretty cool and the food was delicious. Our little group of 11 were in two different rooms.


Next we took a walk and ended up in a pachinko parlor. I read the book "Pachinko" but I never actually understood what the parlor looked like nor how the game was played. But now I do.

The book was about WAY more than the Pachinko parlor however and we asked Ken-san about the current treatment of Korean heritage people living in Japan and he said it was much better now than before, I'm not sure what "before" covered but during "before" this people - no matter how many generations of their family had lived in Japan had no nationality. They were not permitted to have employment in high esteemed professions and had no voting or passport rights. A Pachinko parlor - because it is a gambling establishment - was considered "dirty" or "unworthy" (probably not the right word but you get the picture.). The Korean heritage people were permitted to work in Pachinko parlors. And although the gambling and the establishments are "dirty" they are used by everyone regardless of heritage.
We wanted to give it a try so Anson tried it and SURPRISE lost my money.

It may have had something to do with not having a clue what he was doing - but let's face it the house always wins.
From there we headed to a Bonsai shop. That entire process is remarkable!

My biggest surprise was to discover that these trees grow this way "in the wild" on different mountains. My second surprise was that these tiny and beautiful trees go through the entire season cycle. For example if you have a bonsai weeping cherry in the spring it will bloom, just like the one in my front yard. A flowering crabapple will bloom and produce teeny tiny apples.
Anyway one of the apprentices, who work 6 years, 7 days a week, 12 to 15 hours a day for room, board and training took us on a little tour of the place and showed us some of the techniques used by the gardeners to keep these trees looking beautiful.

The apprentice referred many times to “my Master” and it creeped me out. We got to meet his Master and he signed a book about Bonsai that Shannon and Jim purchased.
We discovered that these trees either flow left or right and owner needs to know that so that it can be placed correctly. If not - a person can ruin the feng shui of the entire home, business or organization. The tree below flows left.

It turns out that the gardener actually “freezes” (again - wrong word) the growth. An example is that tree that is 800 years old.

See the white wood. That is dead - but no more of the tree with die provided the caretaker knows what they are doing. Let in it natural habitat the tree would continue to di. These trees are beautiful and very, very pricey. Not to mention that you better have enough money to hire a gardener to take care of it. Check out the pic below - clearly they are flowing right. (I'm a quick study!)

We headed back to the hotel but before we knew it it was time to eat - AGAIN. This time we took a taxi.

Ken-san has told me that he feared this particular meal would be a little “wheat -heavy” so he had purchased a lovely salad for me while everyone else enjoyed the “gluten-FULL” meal. While it all looked good to me - I can say I did love the salad.


We opted for the subway on the way home and it was a delightful trip - with the exception that many of the stations are not very assessable. Mark and Jay are both using a cane and have become great buddies scoping out benches together. They are also both troopers but an escalator or an elevator would be nice. The subway stations and cars - like everything here - are immaculate.

We have a station right by our hotel - so super easy peasy. See...

大家好! After embracing my heritage this CNY and eating lots of la mian, I still crave noodles. Time to spread the love to other Asian ones. Returning to the Korean diner near home on a WFH afternoon, I ordered their warm soya sauce noodles again. The dish kinda reminds me of zha jiang mian (noodles with pork and bean sauce) except they include more veggies as well as a clear soup with soya bean sprouts. All this wholesome fresh goodness for $8.90? I'm so coming back. Many Korean dishes, like fried chicken and BBQ meals, tend to be zhong kou wei (very rich); I prefer lighter dishes like these noodles, samgyetang (ginseng chicken soup), soupy mandu (dumplings) and bibimbap.

I fell in love with salmon soup udon served at a food court near the office. This steaming huge bowl full of salmon, seaweed, onions, tofu and bouncy noodles was priced at $7.90. I'll revisit the stall just for this; there's so much nutrition and the piping hot broth was very comforting on a chilly afternoon. At a time when so many dining establishments are increasing prices willy nilly, food businesses which continue to deliver high nutritional value to their customers deserve our support. Seems like not only I think this way; this stall does very brisk business and many diners place orders of multiple bowls with good reason. YUM! I polished off the entire bowl. It was delicious.

I'm still eating more red meat until the weather turns warmer. Rendang, a spicy dish featuring mutton or chicken, believed to have originated from Indonesia, is very popular here. This refers to a slow cooking process, resulting in juicy, fall off the bone tender meat. To keep warm, I had mutton rendang, salted egg yolk prawns, mixed vegetables and rice. One bite of the rendang and I understood why colleagues rave about it. It was flavourful, tender and delicious! Whilst I prefer the prawns, the rendang comes a close second. I won't mind having this again, perhaps once every 2 - 3 months, because I don't eat red meat or spicy foods often when the weather is hot.

Pa asked me to teach him how to make basic sardine and cannellini bean sandwiches. So on Sunday, when he'd bought sourdough bread and cucumber, I went over after our lunch and coffee and showed him how easy and quick it is to make a delicious basic sandwich, this time, with hummus. He ate 1 of them on the spot 😅 For parents' latest healthy sandwich, I mashed up red salmon, added chia seeds, mixed herbs, dried parsley and white pepper and folded in coriander hummus. On 9-grain bread, I spread on a thick layer of grated celery, then piled on the salmon mix. The bread was rendered almost invisible! Parents loved this, so it will also be on rotation, probably once a month.

CY and I will make basic sardine and cannellini beans sandwiches for lunch when we return to office soon. I'll share how it went and whether she liked it. After we made our first tuna and hummus sandwiches, CY is keen to try new recipes. After that, she introduces them to her husband. This makes mealtimes fun, just like it is for parents and me and it saves them money because they don't have to spend on overpriced sandwiches at cafes. It's nutritious, delicious, healthy, economical and easy to prepare. I'm also quite flexible with CY so she determines the quantities of fish, beans, veggies and either tzatziki or hummus to be used and I roll along with it. Why stifle creativity when healthy meals should be fun? 下次见!

Korean Bulgogi & Japchae
Bulgogi

Meat
1.5lb Boneless Beef Ribeye Steak - wrapped in plastic wrap and frozen for ~30 min, still firm, then sliced as thinly as possible (against the grain)
Marinade
1 Asian Pear (peeled, roughly chopped)
3T sesame oil (toasted)
8T Coconut Aminos
4 Cloves Garlic, grated
2.5T Apple Cider Vinegar
1.5" fresh ginger, peeled
Heaping 1/2 tsp salt (feel free to toss some MSG in as well)
(optional) 1/2t Gochugaru (Korean chili powder)
Make the Marinade
Wrap steak in cellophane and stick it in the freezer for about 30-40 min, until it's firm(ish) to the touch. Remove it and slice it as thinly as possible (against the grain). Set aside in a bowl large enough for it and the marinade.
Combine the marinade ingredients in a blender or food processor, until as smooth as possible.
(Optional) use cheese cloth to strain the mixture and get out all of the pulp.
Pour the mixture over the meat, and leave it covered in the fridge for minimum 1hr– ideally overnight. (Even longer is okay!)
Cooking
When you're ready to cook, either use a grill (traditional and best if available) or a pan on the highest heat possible. If you're going to make the Japchae portion of this recipe, do that FIRST.
Cook on high heat with a little oil, several at a time– being careful not to overcrowd the pan. Transfer them to a plate, or on top of the rest of your pre-prepared Japchae stuff.
Alternately, you can simply prep these veggies and cook them directly in the pan with the beef. Here's instructions for that:
1 medium onion, sliced
2 green onions, sliced into 1″ pieces
1 large carrot, shaved and thinly sliced
1 tablespoon olive oil
1 tablespoon sesame seeds, for garnish
Heat the olive oil over high heat in a 10″ cast iron skillet. Working in batches so you don’t overcrowd the pan, add the beef and vegetables and stir-fry until the meat is browned and cooked through, 5-7 minutes.
Transfer the beef to a serving bowl, and sprinkle with toasted sesame seeds before serving. Enjoy on its own, over cauliflower rice, or in lettuce wraps with Ssamjang dipping sauce.

Japchae
Noodles:
1-2 packs of Kelp Noodles (something like this) - can also use Shirataki Noodles, though I haven't tried them. Glass noodles are traditional, so that's an option as well.
Noodles Dressing:
Personally, I love the beef marinade. Try pouring the marinade out of the beef bowl when you're ready to cook, and heat it in a pan to kill anything. I've not tried this yet, but I suspect it'd be great! Otherwise, here's a dressing to try:
1/4 cup soy sauce
2 tsp white sugar
1/2 tsp finely minced garlic – I found this to have a lot of bite. My first time I put too much in. Either be careful to not put more than 1/2 tsp, or try gently cooking it (constantly stirring) on low heat for a few minutes to soften the bite and tease out some sweetness.
1 1/2 tbsp sesame oil
1/2 tsp cooking/kosher salt
1/2 tsp black pepper
Notes: I made this while on whole thirty and subbed the soy sauce for coconut aminos, and left the sugar out. I found the sauce to be a bit one-note. Try adding some vinegar to balance it out, and maybe a bit less aminos since they are very sweet.
Veggies:
4 tbsp neutral oil
1 onion, peeled, halved, sliced into 6mm/1/4″ wedges
3 green onion stems, cut into 5cm / 2″ lengths, white & green parts separated
200g/7oz fresh shiitake mushrooms, stem removed, cut into 5mm/1/5″ slices (Note 4)
2 carrots, peeled, cut into 3mm / 1/8" batons (slice at an agle to get a nice oval shape.)
1 red bell pepper, cut into 0.5cm / 1/5″ slices
4 1/2 cups (tightly packed) baby spinach
2 tbsp white sesame seeds
Cooking
Make the noodles (cooking if needed, or softening them according to the instructions if using Kelp noodles.
Make the sauce and pour it over the kelp noodles in a large bowl. Don't mix this up! (not sure why).
Batch 1 – Heat 1-2 tablespoons of oil in a large pan (30cm/12") over high heat. Cook the onion, white part of green onion and shiitake mushrooms, seasoning with salt once they just begin to soften. Cook for 2 1/2 to 3 minutes, stirring constantly, just until starting to soften but not going golden. Pour on top of the noodles – don't mix yet
Batch 2 – Using the same pan still on high heat, heat more oil as needed, and cook the carrot and capsicum for 1 1/2 minutes, constantly stirring. Add spinach, green onion and the final 1/2 tsp salt. Keep cooking for 1 1/2 minutes until the spinach is wilted. Transfer into the noodle bowl – still don't mix!
Cook beef – In the same pan, heat a bit more oil (if needed) still on high heat. Add beef and cook for 1 1/2 minutes until very lightly golden and just cooked through. Add to the noodle bowl. Don't mix! – OR use a grill.
Mix everything together and add sesame seeds as a garnish,
