this may sound stupid but how does one make coconut rice?
my tried and tested recipe is as simple as soaking 1 and a half cups/roughly 500g of thai jasmine rice in (cold) water for half and hour to an hour (to remove the excess starch and make it softer and more absorbent), draining it, then putting it in a pan over a medium heat and adding a tin (400ml) of coconut milk and about a tablespoon of water, a teaspoon of salt, a teaspoon of soft brown sugar, and bringing that all to a boil (stirring regularly to prevent sticking) and then lowering the heat and letting it simmer (still stirring regularly) until most of the liquid is absorbed by the rice and the rice is soft and sticky but not soggy or chewy. that makes enough rice for 3 or 4 meals/people.

Started watching Dungeon Meshi, and I won't lie, there's a part of me that wants to try recreating IRL versions of the dishes. I've already seen someone successfully do a version of the sorbet, and it looked awesome -- though a nitpick is that I think they used rainbow sherbet. Then again, I imagine it'd be a pain to make rainbow sorbet.
Though... I imagine it'd be good. Could use coconut for the white, maybe taro for the purple (and it'd complement the coconut flavor), mango for the yellowy bit (would add some nice fruity zing)... Perhaps use pea flower tea for the blue (if it's as "green tea" flavored like as people claim in flavor, it could round out the flavors...). Hm.
ANYWAY, only a part of me is tempted. The rest of me is either too lazy, or too broke to pull something like that off. The cost of food... oof. The first dish, for example, would be pricey no matter how I slice it. I feel like the best dupe for the "huge scorpion" would be a lobster. (Okay, the real best substitute is giant scorpion, but that's too damn hard to track down fresh and requires too much effort to prepare -- the poison glands won't kill you, but you won't have a great time if you eat them.) The slime monster noodles would be cassava noodles, hands down. The rest is easy, standard ingredients.
Ah well, fun to imagine the ways to recreate the dishes.

Been reading a book with my family recently and it’s a nice book but one thing we’ve noticed is that the author is basically using “vegan” as a synonym for “eco friendly.” Like they clearly have a solid understanding of what veganism is as a diet but they seem to be under the impression that it’s unilaterally the most environmentally conscious way to consume. Like the idea hasn’t been interrogated at all. Half this book takes place on a boat and there hasn’t been one fish dinner. Not all of those milk substitutes can be made from stuff native to Hawai’i some of it has to be imported. I’m losing my marbles

trying non-dairy milks cause potential health stuff and i hate to say it but oat milk kinda sucks :(
like it's not bad it's just also not great in my opinion. kinda dusty honestly. maybe that's my fault for trying it in pure cocoa powder hot chocolate first though. idk i'll give it some time to prove itself to me
