this may sound stupid but how does one make coconut rice?
my tried and tested recipe is as simple as soaking 1 and a half cups/roughly 500g of thai jasmine rice in (cold) water for half and hour to an hour (to remove the excess starch and make it softer and more absorbent), draining it, then putting it in a pan over a medium heat and adding a tin (400ml) of coconut milk and about a tablespoon of water, a teaspoon of salt, a teaspoon of soft brown sugar, and bringing that all to a boil (stirring regularly to prevent sticking) and then lowering the heat and letting it simmer (still stirring regularly) until most of the liquid is absorbed by the rice and the rice is soft and sticky but not soggy or chewy. that makes enough rice for 3 or 4 meals/people.
#you can vary the rice amount slightly but id say dont go over 500g or youll have too much rice and not enough liquid#if youre going to make more rice youll need to add more coconut milk#you can also substitute jasmine rice for thai sticky rice but i find that jasmine rice is the better of the two

finally decided to actually attempt The Famous Beans, but this one time my grocery store is apparently out of dill. goddammit.
#the recipe says you can use parsley but that really doesn't sound to me like a proper substitute#I'm not huge on fresh parsley tbh I'd rather wait until they get stock again#I will perhaps get the beans and coconut milk in the meantime#since they're not perishable. and I always hesitate about the price of coconut milk lol so if it's already here I'm more likely to make it#m#cooking

Made that Sri Lankan egg curry from the Tik Tok. I have some complaints about how the recipe was written but it looks/smells pretty good!
#my post#def didn't need to add the whole can of coconut milk#and some things were contradictory#but we made it work#i also added a red bell pepper because we had a ripe one in the garden

I think I’m having an allergic reaction but I have no idea to what????? All I’ve eaten today is a prepackaged breakfast sandwich that I eat all the time and an iced latte with none of my allergens in it.
#maybe cross contamination?#like they used the same shaker as something with coconut milk or pineapple juice in it?#but I’m usually not that sensitive??? I’ve never had an issue with cross contamination before#can allergies get worse with age? I thought it was the other way around#and during/after my shower this morning I ONLY used products I’ve used for YEARS and have had no issues with#but my tongue and throat are itchy & I can feel my tongue and throat swelling a bit#& I’m really stuffy#& I have some random hives on my arms and legs#I haven’t done or eaten ANYTHING different today#this is so weird#food

Started watching Dungeon Meshi, and I won't lie, there's a part of me that wants to try recreating IRL versions of the dishes. I've already seen someone successfully do a version of the sorbet, and it looked awesome -- though a nitpick is that I think they used rainbow sherbet. Then again, I imagine it'd be a pain to make rainbow sorbet.
Though... I imagine it'd be good. Could use coconut for the white, maybe taro for the purple (and it'd complement the coconut flavor), mango for the yellowy bit (would add some nice fruity zing)... Perhaps use pea flower tea for the blue (if it's as "green tea" flavored like as people claim in flavor, it could round out the flavors...). Hm.
ANYWAY, only a part of me is tempted. The rest of me is either too lazy, or too broke to pull something like that off. The cost of food... oof. The first dish, for example, would be pricey no matter how I slice it. I feel like the best dupe for the "huge scorpion" would be a lobster. (Okay, the real best substitute is giant scorpion, but that's too damn hard to track down fresh and requires too much effort to prepare -- the poison glands won't kill you, but you won't have a great time if you eat them.) The slime monster noodles would be cassava noodles, hands down. The rest is easy, standard ingredients.
Ah well, fun to imagine the ways to recreate the dishes.
#haldie rambles#dungeon meshi#hell if I know how one would do the treasure bugs#I can imagine VISUAL dupes given the existence of gold coin candy#but conceptually... hm#though I swear I'd seen a dish from some other country that was the eggs of an insect roasted on a stick that resembled what Senshi made#a good visual dupe for that though would probably be something like coconut milk popping boba in some extreme gooey sauce#stuck to a stick (maybe cookie stick?)

Been reading a book with my family recently and it’s a nice book but one thing we’ve noticed is that the author is basically using “vegan” as a synonym for “eco friendly.” Like they clearly have a solid understanding of what veganism is as a diet but they seem to be under the impression that it’s unilaterally the most environmentally conscious way to consume. Like the idea hasn’t been interrogated at all. Half this book takes place on a boat and there hasn’t been one fish dinner. Not all of those milk substitutes can be made from stuff native to Hawai’i some of it has to be imported. I’m losing my marbles
#bloomposting#local vegan place where I live (not Hawai’i) switched from almond milk to coconut milk because it was ‘more environmentally conscious’#(is it though?)#but sure you can have your ‘0 emissions’ eco scientist served both and more without comment#that doesn’t take me out of the narrative at all I swear 🤞

trying non-dairy milks cause potential health stuff and i hate to say it but oat milk kinda sucks :(
like it's not bad it's just also not great in my opinion. kinda dusty honestly. maybe that's my fault for trying it in pure cocoa powder hot chocolate first though. idk i'll give it some time to prove itself to me
#i'm gonna try almond milk next i think#or maybe coconut milk idk#i just wanted something that wasn't gonna be too sweet#rated my hot chocolate a 2/5 cause even with a bit of added honey it was still very mid#anyway#melk rambling again#also fun fact: all of the non-dairy milk in the supermarket i went to were labelled 'drikke' and not 'melk' so i don't think you can call -#- non-dairy milk milk in norway

So far I think the worst part of being 30 is I've developed a definitive opinion on alternative milks
#please feel free to ignore this#I like sweetened vanilla almond the best#I like oat milk for baking I think it gives things an interesting flavor#Coconut milk (not that kind) adds a nice flavor to coffee but can be overpowering for other stuff

I hate how coconut milk is becoming like THE milk replacement in health foods. Like bro what do I do if I'm lactose intolerant AND allergic to coconuts 😭 please just give me something I can eat
#'oh but soy milk contains estrogen—'#you are an idiot#'oh but oat milk has almost as many calories as regular milk—'#yes and i need nutrients. human bodies run on calories#'but people who are allergic to tree nuts like almonds and cashews can usually tolerate coconut—'#okay well im allergic to coconut and NOT allergic to tree nuts please give me like ONE option that wont cause a reaction#'what the hell even is rice milk or pea milk—'#hitting you and hitting you and hitting you#look its not even like i mind seeing coconut milk everywhere. i know its an uncommon allergy and i know it has good health benefits#im just sick of seeing it as the ONLY option in EVERYTHING and people acting like its some sort of universal solution everyone can drink#my bro. that is the ONLY milk substitute that i CANT drink. can you please just give me a SINGLE other option#why is EVERY SINGLE PRODUCT ON THIS 'GUT FRIENDLY' 'WHOLESOME' PROTEIN POWDER SITE IM LOOKING AT MADE WITH COCONUT#ITS NOT VERY GUT FRIENDLY FOR PEOPLE WITH ALLERGIES IF YOURE INCLUDING THE SAME POTENTIAL ALLERGEN IN LITERALLY EVERY OPTION#rambling#or alternatively: elliott has a Bad Time on their road to becoming a hippie#i made my throat bleed sampling the creamer and sugar from mud wtr#and when i went to get nondairy creamer from walmart instead i could only find one (1) option without coconut milk 😭#save me
