Carbondale Diaries - Quatro’s, Denny’s and Evenings
Good food makes great evenings. Great evenings make lasting relationships.
The time I spent during my Masters at Carbondale, a small town in Illinois is the most cherished one for varied reasons. Some of my loveliest moments were spent during the evenings. The mornings always symbolized the hustle, the compulsion to get out of your blanket’s comfort and go out to study or work. The afternoons felt like a buffer to rest after a good meal or to await the eventual evening. The evenings always meant for self and the people close to it. Just to put it in perspective, by evening I mean the time between 10 PM to till I go to bed. May be it is apt to call it late evening but nevertheless evening.
The above one is an actual picture of an university building known as Clock Tower though my friend JanakiRam would disagree by calling it a church. To add a small backstory, we are a group of four friends. Saketh, JanakiRam and I came together to the United States to pursue our Masters. Akshay too wanted to come at the same time but the US Embassy was smart enough to deny his visa. But, as it always happens, people’s smartness erodes over time and so did US Embassy’s and they have granted him the visa. We four, in the apartment one four ( FYI it is Apt 14).
And, two places in particular defined my evenings. Quatro’s and Denny’s.
QUATRO’S
Quatro’s is love. It is an Italian food place founded in 1975. It was open till 12 at midnight and very close to our place. Most of our Friday evenings were spent there. The pizza is the best I ever had, without an iota of doubt. Same goes with the Cheesy Garlic Bread, the pasta and the Lasagna. Because Akshay and I eat beef/bacon, we pretty much had the entire menu to choose from. Saketh is a vegetarian so he too had many options, two pizza choices, bread, water, soda, air, etc. JanakiRam is a non-vegetarian with multiple exceptions, so he had an extra option over Saketh.
We have also customized the Vegetable Lasagna by adding chicken to it. This customization plan was not easily comprehended by the assistants working there. But all this put aside, there was great solace in spending time there. We picked one particular slot by the window at a corner and always sat there. It says a lot about how we spent our majority of our time at Carbondale in general. I can never erase that image of us sitting by that window from my memory.
DENNY’S
If Quatro’s was reserved for Fridays, Denny’s was reserved for any random week-day when Akshay wants to. He proposes, to which Saketh and I promptly agree and JanakiRam didn’t really have an option to ditch though he wished to. Denny’s has American cuisine and Akshay loves and accepts anything American. We always think that he was actually born in the United States but got moved to India and got adopted by his present parents. We can get away by serving Dal ( Pappu ) to him labeling and describing it as Lentil soup in Hot Tomato sauce, just as how the Indian restaurants in US do for the stuff on their menu and he would be more excited and will consider it better than the regular Dal we make. If it sounds exaggerated, that is because you haven’t met him. But the food at Denny’s was indeed tasty, the ever-reliable Mango Slush, Oreo Milkshake, pancakes, the Mediterranean chicken, the southern slugger and lots of fried stuff ( an American Trademark).
A great thing about Denny’s is that it is open for full 24 hours. I remember one instance where it was very late around 1 AM and there was no cab service available and we had to walk around 2 miles to our home. Just as in case of Quatro’s, we always preferred a space by the window. Those rainy days by that window will be remembered.

Preparation of Chicken Senaga Pappu
Lets see how to make chicken curry with bengal gram
This curry tastes very good with chepathi or rice
Chicken and bengal gram are both high protein food
Here I took 1/2 kg chicken for this recipe
Soak the bengal gram for 30 minutes in water
Firstly, we need to boil bengal gram.
Add the soaked bengal gram along with the water to a cooker and cook for 2 whistles
If the bengal gram isn't soaked, then cook it for 3 whistles
Senaga Pappu Chicken Curry Preparation
Heat 2 tablespoons oil in pan
Add chopped onions and fry
Close lid and cook
Fry till they turn brown
Add 1/2 teaspoon turmeric powder, 1 teaspoon ginger garlic paste and mix
Now add cleaned chicken and cook till all the water seeping out of it boils away
Now add 2 diced tomatoes and mix
Then add 2 chopped green chillies and cook till tomatoes become soft
Close lid and cook
Add boiled bengal gram along with 2 teaspoon chilli powder, 1 teaspoon coriander seeds powder, 1/2 teaspoon cumin seeds powder, 1 1/2 teaspoon salt and mix
Add more water and close lid
Cook till gravy thickens
Sprinkle coriander leaves and cut off the stove
Serve hot with roti or rice!
