it’s the end of the year. time to share my favorites.
favorite food: for the longest time, I was one of those people who was like “I just like food” (and I do, even with my 100+ -pound weight loss, I like to eat), but I’ve decided it’s a Reuben sandwich. With pastrami, sauerkraut, thousand island dressing, on rye bread which is lightly toasted. I do like it with corned beef and sourdough bread, but I always go back to the classic pastrami and rye combination.
favorite cuisine: the Mediterranean, mainly because I’ve been familiar with Italian food my whole life but I have loved French and Basque food since I was about 16, and I love the flavor profiles all around.
favorite spice: cardamom. Peppery but subtle, like allspice but slightly to the left. Pairs really well with cinnamon and ginger, hence why I like putting it in my spice cake as well as my lentil soup—it makes cinnamon more “cinnamon-y” and ginger more “gingery.”
favorite seasoning: shawarma. I have always loved cumin, coriander, and turmeric, and it makes the house smell good.
favorite flavors: white chocolate, coffee, blackberry, and red wine. Very complex and I’d go so far to say sensual flavors.
favorite flavor combo: chocolate and coffee. The profile of my chocolate babka. I like chocolate and cherry, apple-cinnamon, and white chocolate and raspberry, too.
favorite protein: probably either beef or pork. Love cooking both, and the ground versions go with anything.
favorite soup: there’s three. My Israeli lentil soup (green lentils, basmati or jasmine rice, Israeli couscous, carrots, white onions, green onions, za’atar seasoning, cinnamon, cardamom, garlic, lemon zest, and pieces of chicken—I did make it with ham hocks the first time and I found them hard to eat and hella salty. Made it again with chicken and it was excellent). Chicken or beef pho (last time I had pho, it was wonderful). And coconut curry Thai soup (coconut milk, chicken stock, cream cheese, ramen noodles, green onions, bok choy, peanuts, carrots, curry, those little Thai chilies with the seeds removed and then sautéed so they’re sweet, and ground turkey).
favorite grain: Israeli couscous. I love those little pearls and how well they pair with veggies and different stocks.
favorite vegetables: forever carrots, ever since I was little. I like zucchini and mushrooms, too.
favorite vegetable to cook: chili peppers, mainly because I love how they smell. I love the smell of onions cooking, too.
favorite comfort food: my mac and cheese, mainly because I like to make it with chili peppers and sausage (I once made it with andouille and it was amazing).
favorite food that’s helped me lose weight: there have been several but I’m gonna say scrambled eggs, watermelon, and basic homemade white bread.
favorite bread: babka, of course~
favorite bread that isn’t babka: ciabatta, English muffins, and flatbreads.
favorite baked good: either bread or cookies.
favorite cookie: gingerbread or double chocolate
favorite cake: spice cake, red velvet cake, carrot cake, that chocolate and Irish cream cake I made for St. Paddy’s Day this year, New York cheesecake, German chocolate cake (and from someone who has never been a fan of coconut until recently, either!), Boston cream pie, devil’s food cake, tres leches cake, krantz cake (really similar to babka but it’s closer to a cake; I consider babka an enriched bread), tiramisu
favorite pie: blackberry, apple, and key lime
favorite traybake: forever blondies, specifically the ones with white chocolate.
favorite hellofresh kit: oh, so many! Figgy balsamic chicken, any of their rice bowls, banh mí meatballs, those poutine burgers from a while back, chili mac and cheese (which inspired by own chili mac and cheese), coconut Thai curry, roasted pork with Israeli couscous and sweet potatoes (I think that was my first favorite, iirc)
Now time for least favorites~
least favorite food: lima beans. They never feel right, even when mixed with something else. They’re like eating mushy old newspaper.
least favorite flavor: pumpkin. Never been a fan to begin with—I’ll have it, like how I made that pumpkin pie for Thanksgiving a couple of weeks ago, but i’m not a fan—but it’s literally everywhere. It’s in things it’s got no business being in, either, like milk, cereal, and fucking cheese (for real) of all things.
least favorite ingredient: PISTACHIOS. simply because they’ve been done to death at this point and they’ve always struck me as more of a savory ingredient, too, like I see them in a lot of Middle Eastern dishes. There, they’re fantastic. But in cake or cookies? No, stop it.
least favorite protein: fish… to cook, anyway. I actually really love fish and seafood: I love scallops, fish and chips, fish tacos, tuna casserole, sushi, and clam chowder, and after this year, I’ve been converted to shrimp; my favorite fish is probably either salmon or swordfish. But—because I’m a very sensual person—I cannot get past the smell (it’s why I usually like to bake it, because then you can cook it with vegetables like asparagus, lemon wheels, and good spices wrapped in tin foil). The one fish that doesn’t smell is mahi mahi and it’s been… a… a while since I’ve had that.
least favorite pie: rhubarb, mainly because it kind of scares me (uncooked rhubarb is toxic). Banana cream, too—I love bananas, and I’m curious about “banoffee” (banana toffee, I see it in British recipes a lot), but like peppermint, banana flavored anything never tastes right, either. I just think of banana-flavored Twinkies 🥴
least favorite hellofresh kit: there was this one dish, I forget what it was now, but it had cherry tomatoes, cucumber, pistachios, a couple of other things, and “grilling cheese.” First off, I fucked up the cheese—or maybe they did, I dunno. It was one of those cheeses that could stand up to high heat (like halloumi is like that, you can actually grill it!)… and then it melted. Second, it just wasn’t that good, and I remember being disappointed because I was actually looking forward to it, too. You know, “alright, something new!”
we also had a ravioli dish just last week, and it was ravioli (and there’s never enough ravioli in the package, either) and pan-cooked zucchini topped with parm and Italian seasoning. Salty as hell and it was missing some kind of sauce, like it was dry even by my standards. Zucchini was really good, though, like I was proud of that zucchini. But I’ve always loved ravioli, so it was a major letdown.
biggest vice in the kitchen: when I’m interrupted for any reason—seriously any reason, because, just like with my writing or drawing or working out, I get in the sense of “flow”. I get in the zone. Jarring me out of that leaves me miffed, every single time.
I like having my kitchen clean, too. I learned how to clean as I go from my dad when it was just me and him living together; I get why my mom always gets annoyed when the kitchen is a mess after someone else uses it.
I hate undercooking things, too. I’ve undercooked a quiche, chicken, and burgers so far. Former two have made me cry, the latter I only just started to master. I understand the risk that comes with undercooking things, too—I would much rather overcook something.

Christmas Food times
The Eve and the Day included an all-day snacking board. The Day also had a dinner meal proper, as the belly was too full on the Eve after the board.
Desserts:
- Stollen (https://www.daringgourmet.com/stollen-german-christmas-bread/; no marzipan because it could not be found locally; calvados-soaked fruits and peels for lack of rum)
- Lebkuchen (https://www.daringgourmet.com/traditional-nuernberger-elisenlebkuchen-german-lebkuchen/; only almond meal used because of hazlenut allergy)
- Tiramisu (https://www.williams-sonoma.com/recipe/tiramisu.html; cognac instead of rum, homemade ladyfingers (https://www.biggerbolderbaking.com/homemade-ladyfingers/; made in one large sheet and cut to size). Cutting the Tiramisu recipe by half (using 3 full eggs, separated) was perfect for a single batch of the ladyfingers, and everything fit perfectly into a tall 8 cup rectangular container)
- Candied orange/lemon/grapefruit peels (leftover from the stollen/lebkuchen; https://www.daringgourmet.com/how-to-make-candied-orange-and-lemon-peel/; made them in 3 separate pots to retrieve 3 citrus simple syrups; lemon and orange peels dried on counter for 2 days and grapefruit for 3)

- Sourdough bread (good amount of rye and whole wheat, a lazy bread so not much rising; used a long-refrigerated unfed starter and let rise over a day and a half; no fridge retardation due to lack of space; baked in dutch oven)

- Chicken pate (TJ’s)

Fancy Dinner
- Carrot-fennel soup (roasted carrot, fennel, an onion, some garlic; move to stovetop, cook with kombu/shiitake stock, puree everything, mix in rosemary olive oil and whatever other various spices)
- Baked salmon in parchment (inspired by https://www.foodandwine.com/recipes/coulibiac-salmon-with-pickled-beets-and-kale; Rice tossed with lemon juice. Salmon slathered in TJ’s dijon mustard. Kale tossed with lemon juice, olive oil, and chili flakes. Mushrooms quick sauteed with butter. Marinated red onions from the snacking board. Enclose in parchment paper, baked at 400 for 20m (slightly overcooked oops). Too bad the parchment paper wasn’t phyllo...would have been nice to eat.)
Wine: https://www.reversewinesnob.com/satis-dei-syrah-garnacha; purchased for the bottle...drinkable in general, but absolutely disgusting with the pate/meat/cheese on the snacking board.

Traveling While Gluten (and dairy) Free: London
This will hopefully be the start of a usual travel/food segment. Being gluten and dairy free (due to intolerances) can and has made eating while traveling a tad frustrating - to say the least. I will say, I have yet to find a place that allows me the freedom to just stumble upon food that works for me (maybe there are more places and I am just not equipped to deal with the uncertainty). It isn’t ideal to have to plan at least most meals instead of being able to do things on a whim, my plans have to be… planned. London, with scheduling, proved to be overall very gluten and dairy free friendly or accommodating, and the places we went all seemed to have knowledgeable staff. Without further ado let’s get into the restaurants.
Leggaro
This dedicated gluten free Italian restaurant was great! To start I had a taste of the Homemade Bruschetta Trio, just the cherry tomato one (although one of the others were also dairy free). It was tasty but nothing too exciting. For my actual appetizer I ordered the lamb meatballs. Best decision I made that night! Not only was it cooked perfectly but the flavors were, honestly, amazing. My father and I were addicted. I could’ve ordered a bunch of those for my meal and been more than content. For the table we ordered Pinot Blush Rosé, we went through a few bottles - I am a pretty big rosé fan. For the main course most of us ordered the Tomato Pappardelle with Bolognese. The handmade pasta was delicious! I had never had handmade gluten free pasta before so this was a delightful experience. Finished off with (unfortunately struggling to find the official name) a truffle chocolate tasting. Honestly, they were mediocre compared to the otherwise wonderful meal I had. Overall I recommend it - do yourself a favor and get the lamb meatballs!
Niche
Another dedicated gluten free facility. There is something so freeing about not having to worry about cross-contamination. Side note - as I was checking their menu for reminders on what I ordered, I realized they also have a low-fodmap menu! I will include a link to my video about my struggles with SIBO and when I was on the low-fodmap diet (https://www.youtube.com/watch?v=qJFZPWjCTDA&t=54s). Anyway, for an appetizer we ordered bruschetta which I remember being a larger portion than expected - which was fine since we were sharing; nothing crazy but was a nice start to our meal. For my main course I had the Beer-braised Short Rib. Once I read that the meat was fresh from the butcher down the street I was sold. It was so juicy and absolutely hit the spot - I could not recommend it more! Somehow I still managed to have room for dessert; fairly certain we all have a separate dessert stomach which would explain so much. I had the Dark Chocolate and Orange Ganache. LOVED IT! I’m a big orange and chocolate flavor combo fan and this did not disappoint. Other members of my family had the Tiramisu which they were not too happy with unfortunately. Otherwise, I highly recommend Niche for all your courses. Should also mention that the staff was hysterical, warm, and added to the fabulous time we had.
Indigo at One Aldwych
This one was a bit of a splurge! We went to Indigo for their afternoon tea (what would a trip to London be without afternoon tea?). Make sure to book well in advance if you have allergies as they even stipulate on their site that they can accommodate anyone with enough notice! My only real disappointment was that this afternoon tea did not come out on those tri-layer displays - obviously this is just me being nit picky in terms of aesthetic expectations. We each ordered tea - I had the Lemon Sherbet which really needed a sugar cube or two - which I added. As we sipped and enjoyed the comfort of the tea, we had time to just relax and take in each other’s company before our first course. For the savories I had the Smoked Salmon and Chive Quiche. Turned out to be a tad dry but tasty, still surprised it wasn’t crumbly without cheese or something extra to help hold it together. As a table we all agreed that the Coronation Chicken mini sandwiches were hands down best bite of food we had at this tea (we ended up ordering more of them). There was a roasted pepper sandwich , though I am failing to remember what else was in it, the one bite was all I really wanted of it. The beet wrap would have been better if they either balanced out the beets with something else or packed the wrap a bit less because all you got was a strong beet taste (and I eat beets). The Scones with Bacon and Toffee Jam were unlike anything I’d ever had - and I happily ordered another tray of them as well. Then it was time for wha we all had been waiting for, the very extravagant Charlie and The Chocolate Factory inspired sweets. The pictured treats explains for itself why we are here (for the experience). Loompaland Lemon Floss (AKA cotton candy for us simpletons) was way too lemony for my pallet and was nicer to look at than eat. I shot back the Banana and Chocolate Milkshake which didn’t taste anything like banana for me and seemed more like watered down chocolate. My family said their’s was too banana-y so I am wondering if the dairy vs dairy free versions were very different for this dessert. While I was looking forward to the Chocolate Cacao Bean Financiers they were dry and pretty flavorless. Similar in appearance to a strawberry shortcake was the Whipped Strawberry Mess which was pretty good, nothing insane and I honestly could only stomach a few bites, may have been due to the flavor being too artificial or sweet - granted, my father devoured his happily. My favorite items were the Violet Lemon Cake, which was so delicious and not too heavy but still left me content, Cream Chocolate and Orange Mousse (seems to be a sage bet for me apparently), and yet again the scones with jam, while appearing to be innocuous and not special on paper were still a delight. With all that being said - if you are looking for the tastiest meal you’ve ever had then I can’t recommend Indigo, but if you are here for the experience (as we were) then don’t shy away from the fun and enjoy the moment with those closest to you.
Hobson’s
For a truly tasty and fried meal I highly recommend checking out Hobson’s Fish & Chips. I had the fried cod while my family members all had the haddock. All of the fish came out nice and flaky, cooked perfectly, and were healthy portions. To add to the fried indulgence my sister and I split an order of fries and onion rings! I don’t know the last time I had onion rings before this, needless to say I was in heaven. The batter was addicting and everything was still somehow flavored individually and did not feel like the batter overpowered the meal, but was a nice compliment. I was so full by the end of it that I had to take a decent amount of the fries and onion rings home to finish, they were a pretty nice snack the following day.
Bella Italia
Bella Italia was not planned like the other meals and was found by googling gluten free restaurant options in the area, glad it worked out for what we needed but of all the meals we had it was the least exciting and was more like checking a box than being noteworthy. For some reason I ordered Sicilian Olives as a “while you wait” (almost like a bread basket substitute)- there were way too many for one individual to have, even an olive connoisseur would have felt an olive overload. Then, instead of having a full meal I only found myself hungry enough for a starter. The adult in me then ordered Sweet & Sour Chick Wings which hit the spot and were exactly what I had been craving. So while this was by no means the most extravagant meal we had if you are in a pinch and need to find a place that can accommodate allergies then check out Bella Italia, it’s a chain so you should also luck out in finding a location near you as well (making it the most convenient of the ones on this list).
Beyond Bread
Unlike the other items on this list we did not sit down to eat here and just picked up food options for breakfast and to make sandwiches for days where we were out for a while (I.e. our 11 hour bus tour). However, it is important to note that it is a dedicated gluten free bakery! I had their blueberry and chocolate muffins most mornings and we purchased a few giant rolls of sourdough bread for the longer days. I was happy with everything I ate from there, my only regret is not having purchased more things to try!

Specialty Dining onboard Symphony of the Seas- Jamie’s Italian
The term "foodie" is tossed around a lot, and I never thought of myself as one unless it means someone who likes to eat a lot of good food then heck yea I am a "foodie." Do I know the science of food, recipes, and what ingredients are in a dish just by tasting it? Of course not, but put a spread in front of me that looks like I am going to be in a food coma in under an hour and I am going to tell the world about it.

As a born and raised New Englander, I have dined in some pretty fantastic restaurants in Boston Massachusetts, New York City, Portland Maine, and Providence Rhode Island all of which are very well known to have some of the best food in the country so my expectations are always very high regardless of where I am.

Being an avid cruiser since 2000, I have experienced the complementary food being incredible to horrible, and back to incredible so there is some fluctuation in the complimentary dining. Where I have only experienced absolutely fantastic food and service consistently? The specialty dining experiences offered. It is not a secret that specialty dining is becoming very popular amongst the cruise lines and the more time goes on, the more options we have. That being said, sailing aboard the world's largest cruise ship gives you plenty of specialty dining options.
Let's take an overall look at the specialty dining currently offered onboard Symphony of the Seas.
Specialty dining onboard Symphony: Hooked Seafood, Playmakers Sports bar & Arcade, Izumi, Johnny Rockets, Wonderland, 150 Central Park, Chops Grille, Jamie's Italian, and Coastal Kitchen (for Suite Guest only).
Unfortunately, I was not able to get to every restaurant but picked the ones I was most curious about, Jamie's Italian, Wonderland, and Playmakers!

Jamie's Italian:
From celebrity British chef Jamie Oliver comes Jamie's Italian. Found on multiple Royal Caribbean ships across the fleet and coming to more, Jamie's Italian caught my attention on numerous Royal Caribbean Ships, but I was finally able to enjoy this venue onboard the beautiful Symphony of the Seas. Located amongst 12,000 live plans in Central Park on deck eight, Jamie's is tucked away directly across from Park Cafe, so dining alfresco is limited but available. I was lucky enough to have the chef bring out some of the best dishes, because why not ask the guy in charge.

We started with the "Classic Meat Plank," and the "Crispy Squid." The plank came with Fennel salami, pistachio mortadella, San Daniele prosciutto & schiacciata piccante with mini buffalo mozzarella, pecorino & chilli jam, pickles, olives. & rainbow slaw. The mini buffalo mozzarella, being my favorite type of cheese, was the first thing on my fork and the flavor of the topping of an Italian fig brought a sweetness that made me realize buffalo mozzarella can be even better than it already is. The crispy squid (calamari) was fried to perfection and had a light crunch to it paired with a garlicky mayo dipping sauce.

Next, the Bruschettas, one "Tomato," and one "Avocado and Crab." The tomato bruschetta with roasted cherry tomatoes, whipped ricotta cheese, basil, and olive oil was the perfect amount of a sweet creamy crunch that just drove my taste buds to a level I never thought possible. The avocado and fresh crab bruschetta with apples, yogurt, and chili was the perfect blend of the sweetness from the crab, the thickness of the avocado and crunchiness from the apples but surprisingly not spicy even with the chili.

Now onto pasta and lucky for me the chef must have known that I am a seafood lover because he chose the "Prawn Linguine." The linguini with garlicky prawns, fennel tomatoes, chili and topped with a peppery arugula dressed with olive oil. Without question one of the best pasta dishes, I have ever had the pleasure to enjoy with the perfect blend of garlic, sweet tomato sauce, and pepper.

The main course, "Lamb Chops Scottadito." Now I am not typically a lamb fan but my mind has been changed. These artisan, free-range lamb chops are cooked to a perfect medium-rare that just melts in your mouth paired with agrodolce peppers and balsamic basil pesto, that is enough to make anyone into a fan of lamb!

Now, last and best, "Jamie's Dessert Plank." Yes, a dessert plank because why have just one when you can have a plank. This amazing plank comes with four different amazing homemade desserts, an "Epic Chocolate Brownie," "Raspberry Pavlova," "Amalfi Lemon Meringue Cheesecake," and "Tiramisu."

The brownie is made with 70% dark chocolate and topped with caramelized amaretto popcorn and chocolate syrup.

Next, the Raspberry Pavlova, a raspberry meringue cookie topped with honeycomb and raspberry syrup, proved to me that I need to have pavlovas in my life daily.

The Amalfi Lemon Meringue Cheesecake was the biggest explosion of flavors I have ever experience from a dessert, and I teared up a little after tasting this.

Finally, Tiramisu but this is not just any tiramisu, this is a Jamie Oliver tiramisu, so let's take ladyfingers throw them away and then replace them with sponge cake and then realize everything you know about Italian desserts should be changed! Jamie's Italian is open daily for lunch ($25.00) and dinner ($34.99), lunch and price can vary per cruise.
