Took store bought basil and rocket leaves and set them in water and rosemary from a bush at the beach house and waited for them to sprout roots and then planted them. Previously did that with mint and have found an easy way to grow my own herbs. Most of the time the last few leaves in the pack goes to waste. Roasted chicory root from our "Adventures with #Herbs!" #homeherbalism class, a topic that came up in our gardening class yesterday. Roasted #chicory root has an aroma similar to coffee with a bit of cinnamon, but a surprising sweetness all its own. I've heard it said you simply dry the chicory for use in coffee, but it's customarily dry roasted as with coffee or malted barley. Yes, you can get technical about temperatures, etc. but for most people there's no need for fancy equipment. I enjoy pan-roasting these things in cast iron over medium high heat. There's a magic moment when the chicory begins to toast, and the aroma of coffee fills the air. The darker you roast, the more caramel and vanilla flavors come out, but also some sweetness is lost and some bitterness appears. To me, having only roasted it a few times, the color in this picture is ideal, no bitterness yet, but some biscuit aromas along with some nice vanilla, coffee and chocolate.
