Healthy Peanut Butter Stuffed Dates Dipped in Chocolate

I am always looking for healthy snack options. But healthy doesn't mean it can't taste great! Instead of a chocolate bar, try these peanut butter stuffed dates dipped in dark chocolate, so decadent and so delicious they will keep you coming back for more!

INGREDIENTS:

12 large dates

1/2 cup of unsweetend peanut butter

1/2 cup of semi-sweet chocolate chips

1 tsp of coconut oil

1/4 cup of chopped peanuts

INSTRUCTIONS:

Using a small pearing knife cut open a small section (lengthwise) just enough to remove the pit of the date. Repeat until all the dates have the pits removed.

measure out 1/2 cup of unsweetened peanut butter into a pipping bag (or zip lock bag works too). I put it in the fridge for an hour to set since I use organic peanut butter which is more liquidy than tranditional peanut butter.

Once peanut butter is set, remove from fridge and pipe into the opening of the pitted date. Repeat until each date is filled with peanut butter.

Top with chopped peanuts on top of the peanut butter filling and set aside.

In a small sauce pan, on low heat, heat the chocolate chips add in the coconut oil and stir until fully melted. Once melted remove from heat.

Using a tooth pick, pierce into the stuffed date and dip in the melted chocolate. Coat each date fully and set onto a tray lined with parchament paper.

Once all the dates are covered in chocolate top with chopped peanuts and set in the fridge for 2-3 hours before eating. Enjoy!
