✿ グヤーシュ | Gulyás ・牛肉や玉ねぎ、パプリカ,じゃがいもなどを煮込んだハンガリーのシチュー。その名称はハンガリー語で“Gulya(牛の群れ)”、“Gulyas(牛飼い)”を意味する言葉で、農夫の料理がルーツであるといわれています。 ・放牧や農作業をしていた大ハンガリー圏の人々が、わざわざ時間をかけて自宅で昼食をとる手間を省くため、外へ釜を作り大鍋で昼食用に作られたスープである釜煮グヤーシュ(ハンガリー語: bogrács gulyás)が起源。

German "Gulasch" and other Mitteleuropa variants are - thanks to the Austro-Hungarian Empire - based on Hungarian "gulyás", but have enough changes, including or especially an enormous reduction in quantity of paprika, to make them different dishes.
George (György) Lang's "Hungarian Cuisine" includes a paragraph or so of tongue-in-cheek scathing observation on what the addition of red wine, tomato purée and such-like "foreign" ingredients does to the authenticity of goulash.
He also gives an excellent recipe, but doesn't claim that it's THE recipe because even Hungarian goulash has as many variations as families have grannies, and of course each one's granny makes the best goulash ever...
Here's a fully authentic Ungarischer Kesselgulaschsuppe „Gulyásleves“ I enjoyed at a Hungarian owned, staffed and chef'd restaurant in Germany.
Its flavour was a delicious amalgam of beef, onions, garlic, caraway, paprika and vegetables and, to my great delight, it tasted almost exactly like the one from Lang's recipe that I make at home.

On the other hand, there's so-called American "goulash", so far removed from resemblance to any European version that it's on a different continent in more ways than one.
The description here sounds like a bastard version of spag bol made with clear-out-the-cupboard ingredients, but goulash?

The gulash is from Hungary? I thougth that is a dish from Germany, I ate the dish in a german restaurant.

Well, I can imagine that some German restaurants would also have goulash (=gulyás) on the menu, though at first glance, I wouldn't exactly call the dish on this picture goulash. Not the Hungarian-kind that's for sure. Goulash is supposed to be a soup, but there is also a version where it's served with some garnish. It's supposed to have vegetables in it too!
(But Goulash is considered a common food in Czechia as well, though the dish itself is mostly associated with Hungary. Germans might have adapted it too due to our influence.)
