You can eat this Grilled Chicken Panini with Greek Yogurt Pesto Spread for lunch or dinner. It tastes great and fills you up. The tangy and herbaceous Greek yogurt pesto spread goes well with the grilled chicken and melted mozzarella cheese.
Ingredients: 2 boneless, skinless chicken breasts. 1/4 cup Greek yogurt. 2 tablespoons pesto sauce. 4 slices of your favorite bread. 2 slices of mozzarella cheese. 1/2 red bell pepper, thinly sliced. 1/2 red onion, thinly sliced. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: Preheat your grill or grill pan over medium-high heat. Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Grill the chicken for about 5-6 minutes per side, or until fully cooked and nicely charred. Remove from heat and let it rest for a few minutes before slicing. In a small bowl, mix Greek yogurt and pesto sauce to make the spread. Spread the yogurt-pesto mixture on two slices of bread. Layer the sliced grilled chicken, mozzarella cheese, red bell pepper, and red onion on the bread slices. Top with the remaining bread slices to create sandwiches. Brush the outside of the sandwiches with olive oil. Place the sandwiches in a panini press or on a grill pan. Grill for 3-4 minutes, or until the bread is toasted, and the cheese is melted. Slice the paninis in half and serve hot. Enjoy your delicious Grilled Chicken Panini with Greek Yogurt Pesto Spread!

Flour Bakery + Cafe will grow once again this summer. Founder Joanne Chang announced plans for a new bakery in Boston’s Seaport District, and the Boston Globe confirms that the space will house both a cafe and an overall production space for the Flour brand.
The new Flour bakery will move into the Innovation and Design Building (1 Design Center Pl.)— which will also become home to Ted Kilpatrick and John DaSilva’s Chickadee this summer. Chang told the Globe that this expansion would be “a huge move” for Flour that could lead to the opening of more bakeries in Boston. Eater has reached out for more information on what a further Flour expansion could look like and will provide updates as soon as they’re available.

dinner // august 31, 2015 // grilled chicken panini’s 
this is a meal my mother made for my family quite a bit. it’s funny because she didn’t have a panini press, so she used the bottom of a metal tea pot to press the panini’s -- it has ridges like a press. 
I started with the chicken breast, thawing it in a marinade: salt, pepper, and Black Cherry Balsamic Vinegar. After the chicken was thawed, I put butter + some of the vinegar, salt + pepper into the pan and set the heat on Medium. I cut the chicken into smaller strips and laid them in the pan. 
When the chicken was mostly cooked, I took another pan, put butter in it, and a little of the vinegar. I placed bread into the pan, putting mozzarella cheese and provolone on each side. I sliced up a tomato and placed it on top of the cheeses. I also put a few leaves of spinach on the bread. 
After the chicken finished cooking completely, I added the strips to the bread, flipping the bread over to make each side a golden brown. I added some chips as a side and voila! Grilled chicken panini’s for my husband + I.

Even I surprised myself one night when I went out for dinner and decided to have ... a sandwich ...technically. Actually tho, it's a #GrilledChickenPanini from #BayhouseRestaurant at #Tradewinds. It was actually my first time having a panini in #Antigua and I wasn't disappointed. *The basil pesto and roasted red onions give it a really nice all round flavour. Served with salad and fries/wedges
