These easy gluten-free vegan gingerbread men are a must-have for Christmas. They are perfectly spiced and have a delightful texture, making them a hit with vegans and non-vegans alike.
Ingredients: 2 cups gluten-free all-purpose flour. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 2 teaspoons ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 cup coconut oil, melted. 1/2 cup molasses. 1/2 cup brown sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract.
Instructions: Preheat oven to 350F 175C. In a bowl, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg. In another bowl, mix coconut oil, molasses, brown sugar, applesauce, and vanilla extract. Gradually add dry ingredients to wet ingredients, stirring until combined. Wrap dough in plastic wrap and refrigerate for 30 minutes. Roll out dough between two sheets of parchment paper until about 1/4 inch thick. Use gingerbread man cookie cutter to cut out shapes and transfer to a baking sheet lined with parchment paper. Bake for 10-12 minutes or until edges are firm. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Decorate as desired with icing or chocolate.

Enjoy these tasty Hazelnut Teff Cookies that are gluten-free and vegan. They are dipped in rich dairy-free chocolate and topped with flaky sea salt. A delicious treat for any event!
Ingredients: 1 cup teff flour. 1/2 cup hazelnut meal. 1/4 cup cocoa powder. 1/2 cup coconut sugar. 1/4 teaspoon salt. 1/2 teaspoon baking soda. 1/2 cup coconut oil, melted. 1/4 cup almond milk. 1 teaspoon vanilla extract. 1/2 cup dairy-free chocolate chips. 1/4 cup chopped hazelnuts. Flaky sea salt, for sprinkling.
Instructions: Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Put the hazelnut meal, cocoa powder, salt, baking soda, and teff flour in a bowl and mix them together. Melt the coconut oil and mix it with the almond milk and vanilla extract in a different bowl. Mix the dry and wet ingredients together until a dough forms. Add the dairy-free chocolate chips and chopped hazelnuts and mix them in well. Take tablespoon-sized chunks of dough and use your hands to shape them into cookies. Cover the baking sheet with foil and put them on it. Put it in the oven for 12 to 15 minutes, or until the edges are set. They should cool for a few minutes on the baking sheet before being moved to a wire rack to cool all the way down. To make the cookies even more delicious, melt some more dairy-free chocolate and dip half of each cookie into it. Before you put the cookies back on the parchment paper, sprinkle them with flaky sea salt. This will help the chocolate stay wet. After the chocolate sets, your gluten-free and vegan Hazelnut Teff Cookies are ready to eat.

A luscious vegan and gluten-free tart featuring a coconut-infused cream filling atop a crunchy oat and coconut crust, finished with a decadent drizzle of dark chocolate.
Ingredients: 1 cup gluten-free rolled oats. 1/2 cup shredded coconut. 1/4 cup almond flour. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 can 14 oz coconut cream. 1/4 cup coconut sugar. 2 tablespoons cornstarch. 1 teaspoon vanilla extract. 1/2 cup dark chocolate chips. 2 tablespoons coconut oil.
Instructions: Warm the oven up to 175F 350C. Pulse rolled oats, coconut shreds, and almond flour in a food processor until the mixture is very fine. Melt the coconut oil and add the maple syrup. Pulse the food processor until the mixture looks like big crumbs. Fill a tart pan with the dough and press it into the bottom and up the sides. After 10 to 12 minutes, the crust should be lightly golden. Allow to cool. Over medium heat, mix coconut cream, coconut sugar, and cornstarch in a saucepan. Keep stirring the mixture as it cooks for about 5 to 7 minutes, or until it gets thicker. It's time to take it off the heat, add the vanilla extract, and let it cool down a bit. Spread out the coconut cream mixture in the crust that has been left to cool. As you go, melt the dark chocolate chips and coconut oil in 30 second bursts in a bowl that can go in the microwave. Pour melted chocolate over the layer of coconut cream. Put the tart in the fridge for at least two hours, or until it sets. Cut it up and serve it cold.

Ingredients: 1 can white beans, drained and rinsed. 1 tablespoon sesame oil. 3 cloves garlic, minced. 1 tablespoon fresh ginger, minced. 1 red bell pepper, diced. 1/2 cup roasted peanuts. 3 green onions, sliced. 2 tablespoons soy sauce or tamari. 2 tablespoons rice vinegar. 1 tablespoon maple syrup or agave nectar. 1 tablespoon cornstarch mixed with 2 tablespoons water. 1 teaspoon crushed red pepper flakes adjust to taste. Cooked rice, for serving. Fresh cilantro, for garnish.
Instructions: Heat sesame oil in a large skillet over medium heat. Add minced garlic and ginger, saut for 1-2 minutes until fragrant. Add diced red bell pepper and cook for another 2-3 minutes until softened. Stir in drained and rinsed white beans, roasted peanuts, and sliced green onions. In a small bowl, whisk together soy sauce, rice vinegar, maple syrup, and cornstarch slurry. Pour the sauce over the bean mixture in the skillet and stir well to coat evenly. Add crushed red pepper flakes to taste, and cook for an additional 3-5 minutes until the sauce thickens and everything is heated through. Serve hot over cooked rice, garnished with fresh cilantro. Enjoy your vegan Kung Pao white beans!

Thai Curry Sauce is made with only plant-based ingredients and konjac noodles, a low-carb, gluten-free alternative to traditional soba noodles. You may make a Thai red curry sauce or a Thai green curry sauce with this low-carb sauce recipe. It has healthy fats from coconut and macadamia nuts and is keto-friendly.
Toss in some sesame seeds or broken walnuts to give the noodles a crunch.
