Vegan Hot Cross Buns 🧑‍🍳 Makes - 12 Prep Time - 40 minutes + 3hours Cook Time - 20-25 minutes Ingredients Dough 500g strong flour 75g caster sugar 2 tsp ground cinnamon 2 tsp mixed spice 1 tsp salt 1 orange or lemon, zested 10g instant/fast action yeast 80g vegan block butter 300ml non-dairy milk 200g sultanas 50g candied mixed peel Crosses 50g plain flour 60ml water Maple or golden syrup to glaze Method 1. Tip the flour into the bowl of a stand mixer fitted with a dough hook. Add the sugar, cinnamon, mixed spice, salt & orange or lemon zest to one side of the bowl & the yeast to the other, then mix well to combine. 2. Heat the butter in a pan over a low heat until it is melted, then remove & stir in the milk. 3. Pour the butter mixture into the bowl of flour & mix, then knead the dough for 5-10 minutes until it is smooth, elastic & pulls away from the sides of bowl. 4. Place the kneaded dough in a lightly oiled bowl, cover & set aside for 11/2-2 hours in a warm place to rise. 5. Once the dough has risen, knead to knock it back, flatten out into a rectangle & scatter over the sultanas & mixed peel, roll it up & knead well to evenly distribute the fruit. 6. Divide the dough into twelve portions, roll into balls & place on a baking tray lined with baking parchment, leaving a 1-1.5cm gap between each one. 7. Cover the tray & set aside to rise for 45-50 minutes or until doubled in size, touching each other. 8. Preheat the oven to 200°C/180°fan/400°F/gas mark 6 & prepare the paste for the crosses. 9. Place the flour in a bowl & stir in enough water to form a thick but paste, then spoon into a piping bag fitted with a small round nozzle. 10. Once the buns have risen, pipe a cross on top of each one, then bake for 20-25 minutes until deep golden. 11. I've been giving away sourdough starter all month, and people have been making gorgeous loaves with it. But some are worried about what will happen if they stop using their starter for a while. So I'm starting a #forlornsourdough thread. On 12.20.18, I put a small amount of starter in the back of my fridge. Here's what it looks like today: dried out, with a little dark liquid (hooch) on the edges. No fuzzy mold, no pink or ornage streaking. If this was my primary starter, I'd bring it to room temperature, feed it, and use it. But instead I'm going to shove it back in the fridge and keep updating you on how it looks.
