Eggplant and tunafish croquettes
Longtime is gone since I last wrote a recipe……but now I’m back!
This recipe is a variation of the old one that my granny used to cook. The original one was just with tunafish and smashed potatoes.
As I really love eggplants I thought a good idea adding it to make it tastier and healthier and the result is marvelous.

This salad is an excellent side dish. It is tasty but also very healthy, the best on the winter season. A full vitamin recharge.
Ingredients: 2 Grapefruits 1 Lemon 1 ripe avocado 1 Fennel Extra virgin oil Salt and pepper

Tuccu, Genoese meat sauce for tagliatelle and ravioli
Ingredients:
1 kg. Beef Throat
1 piece celeri
1 carrot
1 onion
1 small rosemary branch
1 leaf laurel
Oil 30 ml
Butter 60 g.
1 glass red wine
Tomato puree 500 gr.
Cut the vegetable in small pieces, then put the butter, the oil, the vegetable and the meat in a saucepan.
