Tuccu, Genoese meat sauce for tagliatelle and ravioli
Ingredients:
1 kg. Beef Throat
1 piece celeri
1 carrot
1 onion
1 small rosemary branch
1 leaf laurel
Oil 30 ml
Butter 60 g.
1 glass red wine
Tomato puree 500 gr.
Cut the vegetable in small pieces, then put the butter, the oil, the vegetable and the meat in a saucepan.
And leave cooking until the vegetables will be well cooked. Turn the meat now and then.
