Dining Virtually
The way we purchase food from restaurants has changed considerably in recent years. The standard dine-in or takeaway, and sometimes a pizza delivered to your doorstep, have been rattled by the arrival of third-party delivery services like Uber Eats, DoorDash, Grubhub, and more. DoorDash leads the roster with 66% market share.
But it is not just delivery that has changed the landscape, all fueled by mobile apps and digital marketing. Restaurants have added their own twist to the saga with virtual brands. These show up on apps as nearby restaurants, but you would be hard-pressed to find them in real life, because there are no signs announcing their presence.
No, they exist only online and in a kitchen known by a different name.
Many of the big chains are doing it, like Chili’s (Brinker), Hooters, Outback (Bloomin’ Brands), Applebee’s, and Wingstop. Even children’s party palace Chuck E. Cheese does it, with their Pasqually’s Pizza.Imagine learning the next day that the pizza you had delivered last night actually came from Chuck E. Cheese. Yuck.
Denny’s has also ventured into these waters with Banda Burrito, The Melt Down, and The Burger Den. And now it has inked a deal with third-party facilitator The Franklin Group to expand these concepts across 250 franchisees in the Denny’s system.

To be fair, there has been a small shakeout in the virtual brands sector of late, with Red Robin terminating its concepts and sticking solely to its main brand. But that is not unusual in any industry for weaker concepts to be shed, and new ones to replace them.
Virtual brands allow a restaurant chain to make better use of under-utilized facilities, especially during parts of the day in which customer traffic may sag. Having complementary products can help fill out those peaks and valleys.
They also allow restaurants to test new menu items or concepts, as well as serve different markets. But in many cases, the product is pretty much the same as if you went to Hooters or Chili’s. It’s just in a different package.
Some might consider it disingenuous, even misleading, for a restaurant to employ virtual brands. Essentially, it could be considered as smoke and mirrors, and perhaps problematic if different pricing strategies are used for identical products. Imagine if CPG (consumer packaged goods) companies did that. There would be riots.
The range of food items falling into the virtual brands category is somewhat narrow, typically limited to pizzas, burgers, and wings. These travel well with readily available packaging. While the courier services will attempt to deliver just about anything—including menu items that might seep, spill, or swish around en route—it just makes matters easier if there is some standardization.
Virtual brands are not to be confused with ghost kitchens, although there could be an overlap in some instances. Essentially, a ghost kitchen is a commercial-grade kitchen at which multiple brands are prepared on shared facilities. There are variations on this as well, such as the one in Atlanta owned by Inspire Brands, and featuring the brands under its corporate umbrella, including Arby’s, Buffalo Wild Wings, Jimmy John’s, and Sonic Drive-In. DoorDash also owns ghost kitchens, which it typically leases to local mom-and-pop operators, and with whom it has exclusive delivery rights.
And if you are wondering, a food hall is kind of the same concept as a ghost kitchen, with shared food prep facilities among numerous small food service operators. It’s just that it is all visible to consumers.
Meanwhile, virtual brands continue to proliferate, much like craft breweries. They satisfy our urgings for something different. In the case of Denny’s and its burrito, burger, and patty melt brands, the food may be much the same as what you would order off the standard menu, but at least it sounds different.

Bypasses provide an alternate route around portions of road that are prone to heavy traffic congestion, such as city downtowns. While going around a city usually means a longer distance to travel, it can still be faster to avoid all the other cars on the road, especially during rush hours.
When a bypass fully encircles a city's center as a ring road, it is sometimes referred to as a "beltway" or "loop". These are sometimes used to define a split between what's considered "inside" the city and what's "outside", even when urban spread after a beltway's construction means that the area well past the beltway is just as built up as the inside of it.
The most famous US beltway is probably I-495 surrounding Washington D.C. with the phrase "inside the beltway" being synonymous with the nation's capitol and federal government. Other notable beltways are I-270, which is Columbus, OH's "Outerbelt" and Atlanta, GA's I-285 "Perimeter". For that last one, it connects to its parent interstate I-85 in two places, the northern one of which is called Spaghetti Junction, an interchange memorialized in song on Outkast's Stankonia album.

So even if you don't know anything about where interstates are, just by looking at the numbers you can tell that I-5 is the westernmost North-South Interstate, I-95 is its counterpart on the east coast, I-10 is the southernmost east-west interstate, and so on.

Tracking air pollution disparities -- daily -- from space
Studies have shown that pollution, whether from factories or traffic-snarled roads, disproportionately affects communities where economically disadvantaged people and Hispanic, Black and Asian people live. As technology has improved, scientists have begun documenting these disparities in detail, but information on daily variations has been lacking. Today, scientists report preliminary work calculating how inequities in exposure fluctuate from day to day across 11 major U.S. cities. In addition, they show that in some places, climate change could exacerbate these differences.
The researchers will present their results at the fall meeting of the American Chemical Society (ACS).
Air pollution levels can vary significantly across relatively short distances, dropping off a few hundred yards from a freeway, for example. Researchers, including Sally Pusede, Ph.D., have used satellite and other observations to determine how air quality varies on a small geographic scale, at the level of neighborhoods.
But this approach overlooks another crucial variable. “When we regulate air pollution, we don’t think of it as remaining constant over time, we think of it as dynamic,” says Pusede, the project’s principal investigator. “Our new work takes a step forward by looking at how these levels vary from day to day,” she says.
Information about these fluctuations can help pinpoint sources of pollution. For instance, in research reported last year, Pusede and colleagues at the University of Virginia found that disparities in air quality across major U.S. cities decreased on weekends. Their analysis tied this drop to the reduction of deliveries by diesel-fueled trucks. On weekends, more than half of such trucks are parked.
Pusede’s research focuses on the gas NO2, which is a component of the complex brew of potentially harmful compounds produced by combustion. To get a sense of air pollution levels, scientists often look to NO2. But it’s not just a proxy — exposure to high concentrations of this gas can irritate the airways and aggravate pulmonary conditions. Inhaling elevated levels of NO2 over the long term can also contribute to the development of asthma.
The team has been using data on NO2 collected almost daily by a space-based instrument known as TROPOMI, which they confirmed with higher resolution measurements made from a similar sensor on board an airplane flown as part of NASA’s LISTOS project. They analyzed these data across small geographic regions, called census tracts, that are defined by the U.S. Census Bureau. In a proof-of-concept project, they used this approach to analyze initial disparities in Houston, and later applied these data-gathering methods to study daily disparities over New York City and Newark, New Jersey.
Now, they have analyzed satellite-based data for 11 additional cities, aside from New York City and Newark, for daily variations. The cities are: Atlanta, Baltimore, Chicago, Denver, Houston, Kansas City, Los Angeles, Phoenix, Seattle, St. Louis and Washington, D.C. A preliminary analysis found the highest average disparity in Los Angeles for Black, Hispanic and Asian communities in the lowest socioeconomic status (SES) tracts. They experienced an average of 38% higher levels of pollution than their non-Hispanic white, higher SES counterparts in the same city — although disparities on some days were much higher. Washington, D.C., had the lowest disparity, with an average of 10% higher levels in Black, Hispanic and Asian communities in low-income tracts.
In these cities, as in New York City and Newark, the researchers also analyzed the data to see whether they could identify any links with wind and heat — both factors that are expected to change as the world warms. Although the analysis is not yet complete, the team has so far found a direct connection between stagnant air and uneven pollution distribution, which was not surprising to the team because winds disperse pollution. Because air stagnation is expected to increase in the northeastern and southwestern U.S. in the coming years, this result suggests uneven air pollution distribution could worsen in these regions, too, if actions to reduce emissions are not taken. The team found a less robust connection with heat, though a correlation existed. Hot days are expected to increase across the country with climate change. Thus, the researchers say that if greenhouse gas emissions aren’t reduced soon, people in these communities could face more days in which conditions are hazardous to their health from the combination of NO2 and heat impacts.
Pusede hopes to see this type of analysis used to support communities fighting to improve air quality. “Because we can get daily data on pollutant levels, it’s possible to evaluate the success of interventions, such as rerouting diesel trucks or adding emissions controls on industrial facilities, to reduce them,” she says.

The band didn't think that they were releasing a "brighter" record when they were creating it; didn't hit that their pink album was so much more upbeat until after everyone else said that. Josh thinks that it really just sounds more like their Vessel stuff.
Tyler gives a very Tyler explanation for his creative approach to writing "Choker" and returning to the older songwriting mindset. Can't really capture it in words, but he conveys his meaning in the delivery. Same with "Mulberry Street", with a great insight into how he fights against the internal drive to speed up songs to "show off". He also compares the making of the song to its topic and how them being on Mulberry Street and getting signed was completely a "right-place-right-time" thing.
Tyler geeks out about Ben Folds a bit and confesses he's the one famous person that he's never met. Josh cuts in and reminds him that they saw him at an airport once, but Tyler was too shy to go up and say anything.
Tyler believes that there will be (and already is) a pretty clear delineation between "pre-" and "post-pandemic" bands and artists.
Tyler gets kinda down towards the end by talking about "The Outside" and how the band has a shelf life that might be winding down; when the interviewer points out that they just released a pretty great album that's been pretty successful, Tyler says that's where Josh comes in to even him out and Josh gives a cheery sales-pitch for Scaled and Icy.
While describing how he and Josh have been in complete control of the creative process from start-to-finish, Tyler makes some allusion to also being in control of "how this ends", and while the question is about the whole DEMA story, it sounds like Tyler is alluding to something beyond that. I weep.
That's all for now, I think? "Saturday"'s making it's way onto radio, including AC, leaving Tyler to have an existential crisis. We'll see if it is able to make that crossover leap that "Shy Away" never managed, but until then we're just twiddling our thumbs hoping shows can happen. Go get vaccinated, folks!
EDIT: Whelp, figures; a few minutes after I posted this, the band decided to announce the openers for the Takeover Tour. half.alive will be opening all American dates; alt-rapper Arrested Youth will be the opener in Denver, LA, and Chicago, while Boston, Atlanta, and Columbus will have... Jay Joseph. Oh boy! It's happening, kids.
