A variation of the #fattoushsalad from @eatingwell. I'm in a FB group for vegan Persian food. It all looks amazing! So I Googled, #lowcarbvegan #persianrecipes and this came up. I substituted 1/3 C. of #greenolives for the toasted pita in the original recipe. I used a bag of mixed salad VS the lettuce that was in the recipe. I have less food waste when I do that. That's it!
