I typically found some forgotten green beans at the bottom of the fridge drawer.  I had to trim some end off but made a Filipino dish I had often eaten in my childhood. Ginisang Sitaw at Baka - Sautéed Green Beans and Ground Beef
Recipe:
Ginisang Sitaw at Baka – Sautéed Green Beans & Ground Beef
3 Garlic Gloves – chopped
1 Onion – sliced
1 Tomato – cubed
250g Ground Beef
250g Green Beans - trimed and sliced
2 Tablespoon Vegetable Oil
2 Tablespoon Soy Sauce
150m Water
Salt & Pepper to taste
Jasmine Rice to serve
Method:
Heat oil and fry onion and garlic till soft and fragrant.
Add chopped tomato and sauté until soft and well combined
Move onion, garlic and tomato mixture to the edges of the pan and add beef in the centre to brown
Once well brown mix beef together with garlic, onion and tomato mixture
Add and mix in the trimmed and sliced green beans
Add soy sauce and water and simmer till beans are soft and liquid reduced
Serve over steamed rice
Optional Forgotten Food:  I also found one forgotten mushroom in the fridge, I chopped this up and added this same time as the green beans.  It’s not traditional, but this page is all about those salvageable foods that don’t have to be thrown out.

Penang Rojak
Maccallum Street Hock Seng Rojak, Penang
Watching rojak being made at Maccallum is a performance on it’s own: fruits are chopped into bite sized pieces, and the special sauce - heavily thickened with malt and palm sugar, and - is taken up with a spoon, akin to taking up honey with a honey dipper,  carefully layered atop the fruits. When probed about the sauce, Maccallum’s owner merely shrugged and said "like that, lah”.
Believed to have it’s origins in Java, rojak in Malaysia, and in Singapore, is a far cry from its predecessor. The addition of shrimp, crunchy toppings, crullers and vegetables such as jicama, is a tell tale sign that one is having rojak outside of Indonesia. Nonetheless, it is only in the regions here that one can find a combination of myriad flavors, that explode in one’s mouth.

9 hour shredded beef enchiladas and pico de gallo (with avocado)
Tumblr media Tumblr media Tumblr media
Forgotten food - Avocado
Here in Oz, whenever I buy Avocado it is always raw and hard and needs at least 2-3 days to get ready.  So in those 2-3 days, I more often than not, forget that it’s in my fridge or fruit bowl, becoming an expensive forgotten food.  Happy to say, since I move house and bought a new fridge I have a little more time to play with, and this avocado despite being in the fridge for more than a week, was still perfectly fine to use.
Beef was rubbed in Ancho Chilli Powder, Cumin, Smokey Chipotle, Onion and Garlic Powder, Smoked Paprika before being cooked in a slow cooker with salsa for 9 Hours.

Bak Kut Teh, 肉骨茶
Old Green House, Georgetown, Penang
A humble dish that traces back to the Hokkien and the Teochew Chinese populations in the Straits, Penang’s ‘Meat - Bone - Tea’ follows the Hokkiens Chinese, adopting a style said to originate in Klang, where the broth is herbal and dark, consisting of spices such as star anise, clove, cassia, and fennel seeds.Just before serving, enoki mushrooms and lettuce are placed on top of the claypot, and the dish is served with a steaming bowl of rice, fried crullers and soy sauce on the side.
There is also an excellent piece tracing the origins of Bak Kut Teh, in Malaysia.
