Food service worker diagnosis
#talk#Mold is safe to remove in some instances but not most any building with unhygienic practices in one corner has it in the kitchen too#You get given food by strangers any time you go to a restaurant it is not the concept of a person you don't know that unnerves you it is a#lack of regulation and confirmed compliance to safety standards#Which is why everywhere is legally required to have their safety score framed in a place visible to customers#Which btw speaking as a food service worker anything under an 85 veers into serious risk territory because restaurants are stricter on#Inspection days. So really you want to be subtracting 5-10 points from any given rating and judging based on that.#Like I'm not saying high levels of disgust boil down to a lack of exposure to the reality of food service and distribution but I do think#most people would be more confident and thus less disgusted by certain things if they just understood them better#Hence my previous post.

Pre-Inspection Assessments: Before any official inspection, it’s important to know where your business stands. Our pre-inspection assessments provide a detailed review of your current operations, identifying areas of improvement and potential risks. By addressing these issues in advance, you can avoid fines, penalties, or closure due to non-compliance.
Regulatory Compliance: Our team is well-versed in food safety regulations and will ensure that your business complies with all local, state, and federal guidelines. Whether it's FDA regulations, NYC health codes, or other standards, we help you navigate the complexities of food safety laws and pass inspections with confidence.

HACCP is a globally recognized food safety management system that focuses on preventing hazards before they occur. At Roar FS Consulting, we offer comprehensive HACCP services designed to help businesses implement and maintain this critical food safety system.
Hazard Analysis: The first step in HACCP implementation is identifying potential hazards in your food production and handling processes. Our experts conduct a thorough hazard analysis, identifying physical, chemical, and biological risks that could compromise food safety.
Critical Control Points (CCPs): Once hazards are identified, we help you establish Critical Control Points (CCPs)—specific steps in your operation where hazards can be controlled or eliminated. We provide guidance on monitoring these CCPs to ensure they remain effective.

What's The Difference Between 'Sell By,' 'Use By,' And 'Best By' Dates?
Here's everything to know about expiration dates — and why they often matter less than you think.
— By Lauren Breedlove | April 4, 2024

It's the middle of the night, and you find yourself in front of the fridge. As you reach for the wedge of cheese or box of treats that lured you out of bed in the first place, you realize there's a tiny date stamped on the label. It's a "use-by" date. No, wait, it's a "sell-by" date. Or is that a "best-by" date? To add to the confusion, the date may not really matter all that much.
How to Understand Food Expiration Dates
Although dating food items is not required by U.S. federal law (except for infant formula and baby food), most manufacturers do it voluntarily. According to the U.S. Department of Agriculture (USDA), "For meat, poultry, and egg products under the jurisdiction of the Food Safety and Inspection Service (FSIS), dates may be voluntarily applied provided they are labeled in a manner that is truthful and not misleading and in compliance with FSIS regulations. To comply, a calendar date must express both the month and day of the month. For shelf-stable and frozen products, the year must also be displayed. Additionally, immediately adjacent to the date must be a phrase explaining the meaning of that date, such as 'Best if Used By.'"
It's up to the grocery stores and markets to stock their shelves with the freshest items displayed behind or under the oldest products. For example, items like eggs typically hit store shelves just a few days after being laid, and cartons with the USDA grade shield are required to include a "pack date," which tells consumers when they were washed, graded, and packaged.
But that's a lot of labels — and oftentimes, food is perfectly safe to eat past its expiration date. Here's a guide to the most common expiration labels you're likely to see at the grocery store.
Use-By Date
Use-by dates suggest the peak quality of a product, and are not safety dates. According to the USDA, “With the exception of infant formula, if the date passes during home storage, a product should still be safe and wholesome if handled properly until spoilage is evident. Spoiled foods will develop an off-odor, flavor, or texture due to naturally occurring spoilage bacteria. If a food has developed such spoilage characteristics, it should not be eaten.”
Best If Used By Date
This label is strictly a quality date, suggesting when the product will have its best taste and texture.
Sell-By Date
This label indicates to stores how long a product should remain on shelves, and products are often safe to consume well after their sell-by date passes. In fact, according to the Institute for Food Safety and Health at the Illinois Institute of Technology, "one-third of a product's shelf-life remains after the sell-by date for the consumer to use at home."
How to Store Dairy Products to Keep Them Good As Long As Possible
Freeze-By Date
Think of this label as the "use-by" date but for freezing. Freezing most food products extends their life, and this date will tell you when to freeze an item at its highest quality.
Expires On/Do-Not Use Date
This label indicates that a product be ineffective after the date listed. Along with baby formula, baking ingredients like cake mixes, baking powder, and yeast may have this label.
When Can You Tell If Food Has Gone Bad?
If expiration dates don't always matter, how do you know when to toss something? Rely on your senses — if the product has an unpleasant odor or feels slimy, it may be spoiled and unsafe to consume.
It's also important to store and handle your food properly once you purchase it. For example, eggs should be refrigerated in their original carton and kept in the coldest part of the fridge (not the door). Once you open an item, its life gets a lot shorter. If you open a package of raw bacon, for instance, you have about a week to eat it before it could start spoiling, according to the FSIS.
Shelf-stable items that can be stored at room temperature, like canned goods (unless otherwise labeled), flour, and pasta, can be good for years, according to the FSIS. High-acid items like fruits and juices can be kept for 12-18 months, while low-acid items like canned vegetables or most soups are fine in your pantry for up to five years. For a more complete list of shelf-stable items and their life span, visit the FSIS Food Safety page.

"'OLD TRASH.' NOT BEEF BEING SOLD PUBLIC," Toronto Star. October 2, 1942. Page 10. ---- Food Administrator Claims Meat Not Inspected in Toronto ---- "Toronto is the only city, so far as I know, that allows its people to bring in any old trash without inspection and sell it as beef." So said Federal Food Administrator J. G. Taggart in Ottawa yesterday. He was referring to a state-ment by A. M. Murdock, president of the Toronto Meat Dealers association before board of control that "50 per cent, of beef sold in Toronto is not under government supervision." Mr. Taggart explained that local health laws in most towns made it compulsory for all packing houses to submit to inspections by the department of agriculture. He said he did not believe there was any such law in Toronto, but that most of the large packing houses did have government inspections. Suggest Board Make Study Toronto District Trades and Labor Council last night unanimously approved establishment of a civic board on which labor was represented, to "go into the whole meat situation here." J. W. Buckley, secretary, said the executive council was opposed in "raising the retail price of meat" or subsidization "unless it is certain the cast and spread is not going into the packer or other like-class in the community." Mr. Buckley maintained emphatically that packing house wages were not to blame for the increase in cost of meat. Archie Johnston of the beverage dispensers union charged that Toronto retail butchers had "smashed the price ceiling to pieces." He said various grades of meat were being sold to the public without the latter's knowledge of quality and price. He suggested the government make it compulsory for retail butchers to indicate grades, cuts, and prices. He further charged that "there is more bread and foreign material in meat now than ever before." Saunders Wants Conference Con. Saunders said he would insist on an immediate conference, between Dr. Gordon P. Jackson, M.O.H. representatives of the police commission and board of control to deal with the beef situation. "I am much concerned with certain statements made before board of control to the effect that inferior beef is being sold in Toronto," the controller said in a letter to the M.O.H. and the police commissioners. "It is a matter of great concern to the citizens of Toronto that only properly inspected beef be offered for sale. "After making inquiries, I am told considerable quantities of beet are sold here in contravention of by-law 197 which prohibits the selling, of uninspected beef to the city. Please forward a complete report on this matter." A copy of the letter was sent to Mayor Conboy with the request that his worship call a conference immediately. Health Inspections Made "I am told that every killing within the city is inspected by our health department," Con. Saunders said. "Our inspections are for health purposes only, and allow the beef to be sold anywhere in Ontario. Most of our abattoirs are covered by Dominion inspection. which permits beef to be sold anywhere. Our municipal abattoir is to covered. All other abattoirs are covered by city Inspection. However, according to my information, it is still possible for butchers to go out into the province and buy beef carcasses and sell them in Toronto without inspection, the controller added. "This must cease. We have a by-law which covers this, and I propose to see that it is looked into and enforced if it is adequate." Con. Saunders said he would make inquiries to see what steps had been taken by the police and by health authorities to have the by-law enforced. "I feel sure we shall have meat rationing." Mayor Conboy said, "but that is only my private opinion. Under conditions now affecting the consumers and vendors of beef I do not see how it can be avoided."
