Ingredients 1 ½ cups farro
4 cups Water
1 teaspoon Kosher Salt
⅓ cup sundried tomatoes, julienne cut or whole cut into small strips
1 head fresh broccoli, cut into bite size pieces
1 head fresh kale, remove stem and cut into bite size pieces
10 dried apricots, cut into small strips
1 clove garlic, minced fine
1 small shallot, minced fine
2 tablespoons Grey Poupon Dijon mustard
1 tablespoon Honey
1 lemon’s juice
⅛ teaspoons Kosher Salt
5 twists fresh ground black pepper
3 tablespoons extra virgin olive oil
½ cup freshly shredded parmesan cheese
Directions Rinse farro under cold running water. Combine with 4 cups of water and 1 teaspoon of kosher salt in small saucepan. Bring to boil, reduce to simmer, cover and cook until tender & water is mostly absorbed (about 15-20 minutes). Remove from heat, drain and completely chill in refrigerator.
While farro is cooking, prepare vegetables, cut apricots into strips and place in a large salad bowl.
In a separate small bowl, combine minced garlic and shallots with mustard, honey, fresh squeezed lemon juice, salt and black pepper. Mix using a wire whisk and slowly add olive oil until dressing is combined or emulsified. If using an immersion mixer, simply add all ingredients to bowl and blend.
Once farro is chilled, add to vegetables in salad bowl. Pour dressing over top and gently toss. Using tongs or washed hands, place salad on serving dish, sprinkle parmesan over top of salad and serve.

5. what is something you’re proud of?
At this current moment, what I’m most proud of is ... farrout I actually don’t know. Nothing significant really comes to mind. For the sake of answering, I’m just going to say... having the energy to push through life (?) Haha that prolly sounds deeper than it actually is tbh. It’s really not, I swear.
13. are you currently crushing on anybody?
Honestly, I wish my answer was yes, but unfortunately no. Would anyone like to volunteer as tribute so I can have a crush on them? Although can’t promise it’ll last long.
30. name an experience in your life you wish you could do over?
Oh theres so many experiences I could answer this question with. Some of them I’d love to do over and repeat it exactly how it went, and then theres some where I’d completely change the narrative. If my life depended on this question and I really had to choose just one, I’m going to have to choose... the beginning of my university experience. Don’t get me wrong, it all led me to where I am now and I’m greatful for it, however, I really would love to know if I’d end up somewhere completely different had I taken an alternative pathway.

Almond Crusted Chicken Fingers
Kid-friendly chicken fingers made gluten-free! These can also be made ahead, chilled and used for school lunches, or try them for breakfast instead of bacon.
6 servings Preparation time: 30 minutes
Ingredients
1 ⅛ cup Bob's Red Mill Almond Flour
1 Lunds & Byerlys organic large egg
3 tablespoons water
3 tablespoons California Olive Ranch Olive Oil, divided
3 boneless skinless chicken breasts, cut into 1-inch strips, or about 10-15 boneless chicken tenders
2 cups Lunds & Byerlys Farrout Broccoli Kale Deli Salad
Directions
Place almond flour in an 8 x 8 cake pan. Set aside.
In medium bowl combine egg and water; whisk to combine.
Heat half of the olive oil over medium heat in large nonstick skillet.
Take half of the chicken strips and dunk them in the egg batter, then in the almond flour mixture, one at a time.
Place each strip in the hot skillet. Repeat until pan is full. Sauté until golden on each side, about 3-4 minutes; use tongs to flip and repeat on other side.
Remove from pan and let cool on paper towel. Wipe sauté pan out with paper towel, removing any particles of food.
Repeat process with remaining chicken strips.
Divide chicken strips into 6 servings. Portion 1/3 cup of Farrout Broccoli Kale Salad onto each plate. Serve immediately.
