Sharing a simple tofu dish made with delicious @housefoodsamerica firm tofu.🤩 Then, sauté in spicy black bean sauce and sweeten with leek. This dish will be a great complement with a bowl of rice for sure.⁣😋 ⁣ Recipe (yields 2-3 servings)⁣ Ingredients:⁣ ~ 1 pack @housefoodsamerica firm tofu, drain well and pat dry, cut into thin rectangle/triangle (as pictured)⁣ ~ 1 leek (white and green part only), thinly slice⁣ ~ 1 tablespoon spicy black bean sauce⁣ ~ 2 teaspoons soy sauce⁣ ~ 1 teaspoon minced garlic⁣ ~ 1/4 cup diced bell pepper⁣ ~ few handful of chopped scallions⁣ ~ 1/4 cup water/stock⁣ ~ pinch of organic sugar (optional)⁣ ~ oil, sesame oil⁣ ⁣ In a heated non-stick pan with 2 tablespoons oil, pan fry tofu until they turn golden brown on all sides (flip few times). Drain on a paper towel to absorb excess oil. Set aside.⁣ ⁣ Using the same pan (add a little oil if needed), sauté garlic, leek and bell pepper until fragrant. Noodles in spicy gravy is definitely a great combo and slurpilicious.🤩 ⁣ Recipe (serves 3-4)⁣ Gravy ingredients:⁣ ~ 2 small sweet potatoes & 1 small potato – skin removed, cut into cubes. Place in a pot, fill water just enough to cover all potatoes & boil until both potatoes are soft.⁣ ~ 2 shallots, 3 slices ginger, 3 cloves garlic – blend or chop until fine⁣ ~ 1 tablespoon tomato paste, 3 teaspoons tamarind paste, 3 tablespoon coconut sugar⁣ ~ 8 cups kitchen stock⁣ ~ 3 tablespoons homemade sambal (see below or highlights on steps)⁣ ~ oil, salt to taste⁣ ⁣🍃Sambal: Blend together 5-6 red chilis, 2 shallots, 4 garlic, 2 tablespoons chopped galangal, 2 tablespoons chopped ginger, 1/4 cup soaked dried chili with oil until well combined. Cook in a heated non-stick pan until oil starts to separate from the chili mixture. Season with organic sugar and salt. (Be careful, mixture is really hot)⁣ ⁣✔️In a heated pan with 3 teaspoons oil, sauté shallots, ginger &@ garlic (please cook in this order with few seconds apart before adding each ingredient) until fragrant. Add potato mixture, stock and sambal and bring mixture to boil, then lower heat to simmer. Stir in tomato paste, tamarind paste and coconut sugar. Season accordingly. Then, blend mixture until it turns gravy-like. Pour mixture back to the pan and heat, if it’s too thick, adjust with more stock. Serve warm with pairings below and enjoy!⁣ ⁣ Pairings: yellow noodles (used @sunnoodles ramen), lime juice, fried crueller (store bought and baked), pan fried tofu, cucumber, jicama, chili, boiled potatoes (boil potatoes with skin on until tender on the inside. Curry laksa/mee is my favorite hawker's stall dish from Malaysia. Adding belacan (shrimp paste) makes Malaysian curry stands out from others. Although I did not use belacan, the homemade chili paste gives this coconut infused soup a taste that will satisfy your🌶️food cravings.😋 ⁣ Recipe (serves 2)⁣ Ingredients:⁣ ~ Dried noodles of your choice (used udon) - cook based on package instructions⁣ ~ 3 tablespoons chili paste (check highlights too)⁣ ~ handful of curry leaves, 2 tablespoons of each: shallots, garlic, 2 teaspoons finely chopped ginger⁣ ~ 4-5 cups of veggie stock⁣ ~ 1/2 - 3/4 cup coconut milk⁣ ~ salt to taste⁣ ⁣ Chili paste ingredients (used in a lot of my other recipes):⁣ ~ blend together 1/2 lb fresh deseeded red chili, 1/4 cup chopped shallots, 5 cloves garlic, 1 small knob turmeric, 1 small chunk galangal, handful curry leaves, oil (enough to keep blender going)⁣ ~ tamarind juice, sugar, salt - to taste⁣ ✔️In a heated pan with 2 tablespoon oil, pour in blended chili & cook until chili turn dark red & aromatic. Season with salt, sugar & tamarind juice accordingly & continue to stir until the oil starts to separate from chili. Adjust sugar amount to your preference, start with 3 teaspoons & increase gradually. Once cooled, refrigerate or freeze extra for longer shelf life. ⁣ ⁣ 🍃Curry how to: ⁣In a big tall pan with 1 teaspoon oil, sauté shallots, garlic & ginger until fragrant. Add in chili paste & veggie stock, bring it to boil. Lower heat to simmer. Season accordingly & add curry leaves. Finally stir in coconut milk before serving. Using a homemade red chili paste, this creamy coconut broth is flavorful and slurpilicious. ⁣ ⁣ Recipe (serves 2-3)⁣ Ingredients:⁣ ~ Yellow noodles, 2-3 servings, see package instructions⁣ ~ 200ml (about 1 cup) coconut milk, more for a creamier version⁣ ~ 4-6 cups kitchen stock, 3 tablespoons vegan ‘fish’ sauce (check my highlights for recipe), 2 tablespoons homemade chili paste, pinch of organic brown sugar (optional)⁣ ~ salt to taste⁣ ⁣ 🍃Chili paste ingredients (yields ~ 1 cup) – blend together 1lb fresh deseeded red jalapeño, 1/2 cup dried chili (soaked in hot water until soft, seeds removed), 5-6 shallots, 4 cloves garlic, 4 slices ginger, 4 slices galangal with oil. I added enough oil to keep the blender going.⁣ ~ sugar, salt – adjust accordingly⁣ ✔️In a heated pan with 3-4 tablespoon oil, pour in blended chili, and cook until chili turn dark red & aromatic. Once you see the oil starts to separate from chili, it’s done. Season with salt, sugar & stir until sugar dissolves. The amount of sugar needed is based on how spicy you want your paste to be, start with 1 tablespoon and add gradually. Store excess in a jar and refrigerate or freeze (good for stir fries or curry)⁣ ⁣🍃Garnish suggestions: Preserved/pickled mustard greens (got them at Asian market), lightly seasoned pan fried tofu, fried wonton strips, fresh mung beansprouts, red onion slices, fried shallots⁣ ⁣✔️Curry how to: In a heated pan, add 2 tablespoons chili paste & kitchen stock. Let boil and turn heat to low, add ‘fish’ sauce & coconut milk while simmering. Season with salt & sugar (if using). Char kuay teow, famous for its ‘wok hei’ or breath of the wok is a must try street food in Malaysia (popular in Penang and other states). Char kuay teow is a Hokkien word that means stir fry flat rice noodles. Hokkien is dialect that my hubby taught me and how my kids speak to my papa and mama. Wok hei is a Cantonese word directly translates to stir frying in a heated wok. This dish is usually serve on top of a banana leaf for extra flavor. I got my fresh banana leaf from the neighbor’s house again.⁣😆 ⁣ Recipe⁣ (yields 1 serving) Ingredients⁣: ~ 1 serving fresh flat rice noodles (there are fresh ones at Asian market too)⁣ ~ 1/2 cup of fresh mung bean sprouts⁣ ~ 1/4 cup of chopped chives (cut into 2 inch sticks)⁣ ~ 1 teaspoon minced garlic⁣ ~ 1 teaspoon homemade sambal (recipe on highlights)⁣ ~ oil⁣ 🍃Sauce (mix all in a bowl, set aside): 2 teaspoons soy sauce, 1 teaspoon stir fry sauce (aka vegetarian oyster sauce), 1/2 teaspoon dark sauce, dash of white pepper⁣ ⁣ ✔️When using fresh flat rice noodles (if you are in Malaysia, be sure to ask which type is suitable for stir fry as the width of noodles differs for soup version), I love to separate the noodles by strand before cooking. ⁣ ⁣ ✔️In a heated pan with 2 teaspoons oil, sauté garlic until lightly brown, add sambal & noodles and quickly stir to avoid noodles from sticking together. ✔️Then, add in ready mixed sauce and continue to stir and toss. Stir in chives and cook for few seconds, then add mung bean sprouts and give another quick toss until well combined.
