Look at that color. Isn't that pretty? Because a global pandemic hit during prime laying season I have an embarrassment of riches in the way of eggs. So I have done what any reasonable person would do. I hard-boiled 36 eggs and pickled them. These are half gallon jars because I like beets and onions in my pickled eggs I had to go big. I'll probably make more soon, I've got a lot of eggs y'all. A. Lot. Of. Eggs. Oh and bonus! These are pickled beets that I put up last summer. Mask time!!! . I made a bunch of masks during the first lockdown. They were okay, but kinda... bland. So for the month october I made these! They look like cute black-and-white polka dot designs, but when you look closer... . (~swipe~) . BOOM! It's skulls 💀 . These are super comfy, and I even made a few for my brother. Since it decided to be winter all over again I had to find indoor things to do today that didn't include day drinking. No one wants to deal with that. So I canned some chicken vegetable broth and made a few more masks before it was time to go take care of the chickens and gather eggs. I think one of the reasons I'm not going stir crazy like so many is because there wasn't anything to do here before the plague. You make your own fun here or you're out of luck. As a result I've gotten very good at keeping myself busy. How are you all passing the time these days? Are you all ok? I hope so. Just like everyone else I'm worried about the people I care about so I sat down at my machine and sewed a few masks. They aren't perfect but they are getting better. I started out with a basic pattern that I found online but it just wasn't big enough for most men's faces so I did what I usually do I threw away the pattern and I winged it. These new ones have a pocket you can put a filter in if you have one and they are big enough for men's faces. They also have ribbon ties because the elastic loops tend to hurt after you've worn it all day every day. Edgar is of course supervising, I can't possibly work on anything without being told I'm doing it wrong. He's now got a ribbon around his neck and although he's super adorable he's also totally sick of my shit. He's the best and he'll probably kill me in my sleep tonight. Don't worry I totally deserve it. I shamelessly bullied everyone here into modeling masks for me. They all did great even if Dad grumbled the whole time and mom gave me the stink eye for telling her to smile for the camera. Regardless of what's going on it's still spring and things are popping up all over the place. I've got daffodils, lilies, rhubarb, chives, basil, strawberries, and garlic. Last fall we planted 138 cloves of garlic and most of them are coming up this spring. With any luck whatsoever there will be a lot of garlic in my future. The plants that I overwintered are doing so well that the roses and the impatiens are still blooming. I didn't even know that was possible. The pussy willows are prolific this year and I have many trays worth of seeds started. Such as cucamellon, hops, catnip, elderberries, tomatoes, peppers and herbs. I have another entire bag of seeds that are direct sow and ill be planted in the garden soon. I've got peas, carrots, onions, radishes, potatoes, and sweet potatoes too. Not to mention the sorrel, lettuce, and lovage. I can't wait to get started I think it's going to be a good year for gardening. Oh who am I kidding? Easter Sunday dinner It was a beautiful warm sunny day. While I wish we could have enjoyed the holiday with family this year there was really nothing we could do about the pandemic so we suffered through it. At least we were well fed while we did. It was a simple meal of ham, cheesy potatoes, home canned green beans, homemade buttermilk biscuits and I even made an emergency cake. Emergency cake is a depression era recipe that I tried for the first time today and while it's tasty it's a bit denser than I like. Everyone liked it but me though so maybe I'm just too picky. Last night's dinner, because it was too good not to share and this is the only way I can do that these days. As most of you are probably aware Pennsylvania has been under a stay at home order since 8pm last night. Hopefully it will slow the spread and allow our healthcare workers to keep up and stay safe themselves. I'm so grateful to all of you in healthcare and I do mean all of you from the people who scrub the floors all the way to the doctors and nurses. Thank you from the bottom of my heart. Anyway. For dinner we had pot roast and gravy with buttered baby peas, sour cream mashed potatoes from my garden, and homemade buttermilk biscuits made from scratch, of course. For dessert I made bread pudding with my homemade bread. I added pecans, raisins and a ridiculous amount of butter. Served with vanilla ice cream because why not? It was pretty darn good if I do say so myself (and I do). I have enough leftovers to get me through the rest of the week. Yay. Oh and this was a pantry meal, except for the meat which came from my freezer. Happy Thursday my friends. Please stay home, stay calm, and stay safe. John tells me it's omelette season I''ve never heard of omelet season before but I'm not silly enough to argue if he wants to make omelets, so I rolled with it. In addition to beautifully fresh eggs from my burbs he added cheese (of course), mushrooms, tomatoes, and ham leftover from Easter that was waiting patiently in the freezer for just such an emergency. Served with toast and grits because there was no point holding back after all that. As much as I enjoy cooking it is nice to be spoiled from time to time. Thank you John, it was wonderful. It's beautiful in Pennsylvania today, the sun is out and it's warm enough here to open up the doors and let the fresh air in.
