This gorgeous home, Destrehan Plantation, is one of the plantations we visited in New Orleans. It has been a filming site, most notably, interior scenes from the original Interview With the Vampire movie were filmed inside.

According to a filming location website, Destrehan Plantation is where they filmed the interiors of Louis' plantation in the 1994 movie. It was built in the 1700s and it's closer to New Orleans than Oak Alley. This is now what I'll picture as Louis' House!

Think Tomb Raider meets Indiana Jones meets The Librarians with some Voodoo Princess Archaeologist thrown in. Let me expound a little.

Melania LaVeau is a professor at LSU that comes from an esteemed and established Creole family from New Orleans. From her father's side, they own Meirs worldwide conglomerate. On the surface this is a mercenary type organization that also deals with high-tech weaponry, hence the bombs and the bodyguards.

Her mother is Marie LaVeau, yes that Marie LaVeau. That had been hidden from her for most of her life, and only after a series of tragedies was that revealed when the woman that she had thought was her mother decided to kill her. That is in a long ago story that will be covered in flashbacks.

Using the guise of being a professor, and using her family's enterprises, Melania and her best friend who is also an archaeologist and professor at Cambridge, track down and retrieve powerful artifacts and objects to keep them safe from them falling in the wrong hands. As you know if you've ever watched a show on archeology, not all artifacts come out of the ground in one piece. And that is where the last part comes in.

Now you may ask yourself, why would a team of archaeologists need bodyguards and bombs? Remember that these are not just your average artifacts, and she's not your average archaeologist. She comes from a rich family that is connected in certain circles where mercenaries are required. She a target herself for certain groups who can use her as leverage against her family.

The story that is currently being written takes place as she goes to Serbia to retrieve an artifact that is said to hold great power, but that not much is known about. The team has just arrived in Serbia, so the chapters that are up are the introductory chapters that get you familiar with the characters and kind of their personalities. There will be more characters introduced while they are in Serbia that will be the core characters of the story as it goes along. While there is magic, voodoo, and the paranormal/supernatural in this story, there's a lot of human interaction as well.

So you have archeology, the supernatural / paranormal, some history thrown in, the mob, and some good old down home Louisiana voodoo.

Pour cette dernière journée à la Nouvelle-Orléans, j’ai enfin réussi à attraper correctement un tramway rouge et jaune de la ligne circulant sur Canal Street (photo 1) !

En matinée, nous sommes sortis de la ville pour visiter une plantation établie à la fin des années 1780 à Destrehan. Nous avons pu y visiter la maison principale (photo 2), ainsi que des reconstitutions des habitations réservées autrefois aux esclaves (photo 3). Les environs de cette ancienne plantation ont été grugés petit à petit par l’industrie du pétrole, mais le terrain d’origine conserve encore de magnifiques chênes qui font le charme du lieu. Certains ont plus de 200 ans (photos 4 et 5).

En après-midi, nous avions prévu visiter le Couvent des Ursulines, qui devait fermer à 14h, mais nous nous sommes buttés à des portes closes à 13h. Qu’à cela ne tienne, nous avons finalement visité le Musée historique de la pharmacie, où nous avons pu voir un tas de choses reliées aux médicaments et soins typiques du 19ème et du début du 20ème siècle (photo 6).

Puisque c’était le dernier moment pour le faire, j’ai pris encore plusieurs clichés des plus belles maisons du Quartier français (photo 7 à 10).

Enfin, la soirée s’est terminée avec un dernier bar de jazz, la Maison Bourbon, où nous avons eu droit à quelques classiques du dixieland (vidéo en guise de photo 11). Bien entendu, j’en ai profité pour siroter un dernier Sazerac pendant le spectacle !

Can the smoke ring be enhanced by barbecuing cold meat straight from the refrigerator? In fact, the beautiful smoke ring you see in the sliced brisket photo above was achieved with “hot & fast” cooking, and it’s as nice as any smoke ring I’ve gotten on “low & slow” briskets. But given all the variables at play-the type of meat and its unique characteristics, the type of fuel and how hot it burns, the type of smoke wood and whether it’s green or well-seasoned, and the humidity level in the cooker-it’s hard to offer a definitive answer to this question. Keeping the internal temperature of meat lower for a longer period of time, while also keeping the surface moist, should allow more time for interaction between myoglobin, NO and CO to create a better smoke ring. In theory, “low & slow” cooking should result in a better smoke ring than “hot & fast” cooking. Pulled pork smoke ring Which cooking method results in the best smoke ring: “low & slow” or “hot & fast”? You’re unlikely to get a smoke ring on parts of a brisket covered with the typical 1/8″ – 1/4″ of fat that most people leave on the meat. Since there’s no myoglobin in fat, it won’t turn pink when exposed to NO and CO. NO and CO can penetrate only the thinnest layers of fat to react with myoglobin in the underlying meat. Can NO and CO penetrate fat to create a smoke ring? As a result, they react with myoglobin only within the first 1/8″ to 1/2″ of the surface. Why is the smoke ring just on the outside edge of the meat?īecause the dissolved NO and CO cannot penetrate deeply into the meat. It’s not clear if 170☏ also applies to pork and poultry, but it is clear that smoke ring formation is arrested in all meats at some point. However, the website states that smoke ring development stops at 170☏ because that’s the temperature at which myboglobin breaks down in beef and loses its ability to react with NO and CO. It is commonly thought that 140☏ is the temperature at which the smoke ring stops developing in beef. At what internal meat temperature does the smoke ring stop developing? Just don’t spray too early or you’ll wash the rub off the meat- wait for the crust to setup on the meat before spritzing. Spraying the meat occasionally with water or other flavorful liquids is another way to keep the surface moist. Using water in the pan of the Weber Smokey Mountain Cooker is one way to create surface moisture on meat. Keeping the meat surface moist is one way to promote smoke ring formation. In order for NO and CO to interact with myoglobin, they must dissolve into surface moisture on the meat. Interestingly, in many barbecue competitions, the judges are specifically instructed to ignore the smoke ring when judging meat for appearance because it can be produced chemically using curing agents.īeef short rib smoke ring How does moisture and the use of a water pan or spritzing meat affect smoke ring formation? The smoke ring adds no flavor to the meat, but a good, strong smoke ring is sexy and it’s the look that many people have come to expect from barbecued meats, especially brisket and pork. Does good barbecue need a smoke ring? Does it add flavor to the meat, or is it just for looks?īarbecue does not need a smoke ring to be moist, tender and delicious. These two gasses interact with a protein in meat called myoglobin to produce the pink color, not the visible smoke you see coming out of the smoker. Wood and charcoal give off many gasses when burned, including nitric oxide (NO) and carbon monoxide (CO). It’s most pronounced in beef and pork, less so in poultry. It’s that pink layer, 1/8″ to 1/2″ wide, just below the surface of the meat. It did not take long before staffs were alerted to the empty table when a loud thump was heard. One night, staffs of the restaurant were managing the fully booked venue and had forgotten to set up Pierre’s table with food.
