Apple Oatmeal Raisin Cookies Recipe

Ingredients
1 cup rolled oats
1 cup whole wheat flour
1/2 cup brown sugar
1/2 cup unsalted butter (softened)
1/2 cup apple (peeled and chopped into small pieces)
1/3 cup raisins
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
1 teaspoon vanilla extract
1 tablespoon honey (optional, for extra sweetness)
Instructions
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
In a medium bowl, combine oats, flour, cinnamon, baking soda, and salt. Mix well.
In a separate large bowl, cream together the butter and brown sugar until light and fluffy.
Beat in the egg, vanilla extract, and honey (if using) until fully combined.
Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped apples and raisins into the dough.
Using a spoon, drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie.
Bake for 10–12 minutes, or until the edges are golden brown. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1/4 cup molasses. 2 large eggs. 3 cups all-purpose flour. 2 teaspoons baking soda. 1/2 teaspoon salt. 1 teaspoon ground cinnamon. 1 teaspoon ground ginger. 1/2 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 cup granulated sugar for rolling.
Instructions: In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy. Beat in the molasses and eggs, one at a time, until well combined. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Cover the cookie dough and chill it in the refrigerator for at least 1 hour or overnight. Preheat your oven to 375F 190C and line baking sheets with parchment paper. Roll the chilled dough into 1-inch balls and then roll them in the remaining 1/2 cup of granulated sugar to coat. Place the coated dough balls on the prepared baking sheets, leaving some space between each cookie. Bake the cookies in the preheated oven for 8-10 minutes, or until they have spread and the edges are set. The centers may look slightly undercooked, but they will firm up as they cool. Remove the cookies from the oven and allow them to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely. Once cooled, store the cookies in an airtight container to keep them soft and chewy.
