カレー粉 / Kare ko (Japanese curry powder)
Kare ko is a spice blend that spread to Japan in the late Meiji era as a result of British imperialism. The blend (like curry powder in general) originates from a British approximation of a range of South Asian spice profiles. Domestic manufacture and sale of kare ko began in 1905 with Hachi; S&B, who began production in 1923, currently hold the major market share.
Kare ko is adapted to Japanese tastes, and is usually not very spicy. It is dominated by coriander, turmeric, and cumin, but also contains spices such as fenugreek, cardamom, clove, and star anise, as well as dried herbs including sage and dill. Popular comfort dish kare raisu ("curry rice," a pairing of rice and a curried stew featuring carrots and potatoes), uses kare ko as its primary source of flavor; kare ko is also used to make curry ramen and curry udon.

1 Tbsp (3.5g) coriander seeds
1 tsp (2.6g) turmeric

Instructions:
1. In a dry skillet on medium, toast large whole spices (cinnamon, star anise, green cardamom, cloves, allspice) for a few minutes until fragrant and set aside. Repeat with smaller seeds (coriander, cumin, fenugreek, mustard, and fennel) and bay leaf. Set aside and allow to cool.
2. Remove skillet from heat. Toast ground spices and dried herbs, stirring constantly, for about 30 seconds until fragrant. Remove from skillet.
3. Grind all spices and herbs in a spice mill or mortar and pestle and strain through a fine mesh sieve. Store in an airtight container in a cool, dry place.

It's funny how a lot of savory foods can benefit from cardamom and no one ever adds it.
Mushrooms? 100% need cardamom. Personally I just fry them with cardamom, chili and sesame oil/sesame seeds and add to rice noodles, it's my "ready under 15 minutes" food. Works in soups and sauces too (just don't add thyme in that case).
White fish. Coriander seeds+cardamom+garlic is the perfect seasoning, imo. Or cardamom overdose+ginger powder+sambal mixed into coconut milk (I can sing odes to white fish cooked in coconut milk).
Most kinds of meat too (anywhere you would add a mix of peppers without adding herbs). Works great in marinades.
I'm always so surprised it's considered a sweet spice. It's so versatile.

Hello V I have a food question and I thought more people would benefit from this 😊: I'm meal prepping and I can't find the slaw recipe you gave me, so this is me asking for it (or anything else yummy you want to share 💖)
Oooh, okay!! Well the TL;DR of it all is multiple kinds of shredded cabbage, fat, acid, salt, and a generous amount of seasoning, tossed vigorously. Then top with something crunchy. 
Here��s the full recipe, which we’ll call ‘Auntie Em’s Shredded Slaw:’
Always start with at least 2 kinds of cabbage, like white and purple, cut thinly on a mandolin, or shredded into thin strips with a knife. Usually at least a few other cruciferous veggies too, like Brussels sprouts, broccoli, kale, etc, also cut small.
Add some other crunchy veggies: shredded or matchstick-cut carrots, radishes,  celery, jicama, beets, whatever you’ve got. Bonus points if it makes things colorful.
Add little oil/fat
Add whatever vinegar or acid goes with the rest of the meal (IE balsamic, red wine, apple cider, or rice vinegar, harissa, or lemon/lime juice, even hot sauce)
Optional: If you want a creamy coleslaw, add a spoonful or two of Greek yogurt or sour cream
Season LIBERALLY, with whatever spices or fresh herbs go with the meal. Always include salt, pepper, a little chili powder, and garlic & onion powders, but everything is optional. 
STIR AGGRESSIVELY UNTIL THE LIQUIDS AND SPICES HAVE EMULSIFIED AND COATED THE VEGGIES. TASTE AS YOU GO AND ADD SEASONING IF NECESSARY.
(Examples: an Italian meal might mean: olive oil, balsamic vinegar, lemon juice, fresh basil, fresh parsley, fresh minced garlic, a few spoonfuls of pesto, dried oregano or rosemary, etc. A stir-fry might get peanut oil, rice vinegar, soy sauce, fresh Thai basil, green onions, cilantro/coriander leaves, star anise, cloves, etc. Mexican food might get lime juice, fresh cilantro, cumin, cayenne, ancho, chipotle, hot sauce or Tajin.)
Also optional: add-ins like tomatoes, olives, peppers, artichoke hearts, capers, cucumbers: things that are juicy or more delicate. They get mixed in now, more gently.
Finish by sprinkling something crunchy on top: toasted nuts or seeds, croutons, fried noodles/onions, etc. Et voila. Auntie Em’s Shredded Slaw.
(Which stores brilliantly, btw, because the flavors only get better as they all marinate together and because the base is hearty and crunchy things, it doesn’t get soggy and gross like most leftover salad.)
One more tip: you can do a lot of veggie prep ahead of times and then just store the already-cut ones in your vegetable bin to make it go even faster.

While it was earlier believed that anxiety and depression can cause constipation, nausea, and other gastrointestinal symptoms, recent studies have shown that an upset gut can in turn result in anxiety and depression as well.
Hippocrates once said, "Let food be thy medicine and medicine be thy food,” a sentiment that resonates strongly with our Indian traditions of Ayurveda. While diet alone can't replace medicines, it can certainly complement their effects, thanks to the intricate relationship between our gut and brain.
Several scientists are now exploring the impact of diet on PD symptoms. While no specific diet is a “PD diet”, there are dietary interventions that can address specific bothersome issues.
In general, research suggests that some aspects of a diet can alter the severity of the symptoms and their progression rate. The main suggestions that these studies have provided are as follows-
