great-grandma's norwegian meatballs and gravy recipe
y'all remember that post about the person who fell out w their mom and posted her meatloaf recipe as revenge? well,

^ THIS is my mom's copy of my family's christmas eve norwegian meatballs recipe. i don't even celebrate christmas anymore, lol
don't worry, i transcribed and edited that mess into something more legible. here it is, under the cut:
recommended tools:
2 mixing bowls
whisk/beater
frying pan
spatula
ingredients:
12 tbsp very finely chopped onion
8 tbsp butter
2 lb ground beef
3/4 lb ground pork
1 cup bread crumbs
1 cup milk
2 eggs
4 tsp sugar
2 1/2 tsp salt
1 tsp nutmeg
1/2 tsp allspice
steps:
premix sugar, salt, nutmeg, and allspice
beat eggs
brown onions in half the butter
in a separate bowl from the sugar, mix the browned onions with beef, pork, bread crumbs, milk, and eggs. don't overmix, or the meat will become tough.
add sugar mixture to meat mixture, still taking care not to over-mix
shape meat mixture into 1 inch balls
heat the rest of the butter at a low temperature
add meatballs and brown over medium heat. shake the pan to keep meatballs round and ensure even cooking. serve alongside mashed potatoes, lefse, and søtsuppe!

Among the Nordics who loves Christmas the most, after Finland of course lol
I think it has to be between Norway or Sweden for this one. They are both very involved with Christmas celebrations, in their own ways.
Sweden is very big on his Lucia celebration and has several more modern traditions that make up rituals during Christmas for him. Ofc he loves watching Disney on the 24th, and he makes huge yearly celebrations, like Gävlebocken for example.
Norway treats the whole of December like its own season and has very much ingrained old folk traditions into the ritual that is Christmas for him. He is obsessed with advent calendars on TV and goes out of his way to decorate in the cosy country style.

When I was little we left treats for Santa Claus (nuts and milk), you know delivery can make him hungry on the way (speaking about it with my coworkers and I was the only one to do it, so curious to know if others ppl did it)
That's so adorable! and was some of it gone the next morning?
When I was little and we visited my grandmother on her farm, we sometimes left out rice porridge with cinnamon, sugar and butter (typical christmas food in Norway, may be eaten at other times as well) in the barn. It's for the farm elf/goblin, a magical creature from folk myths (it helps out on the farm if you´re good to it). I don't think this extended to santa (our name for santa claus is the same name we use for the elves/goblins from folk myths, making them related). But there definitely was a tradition about leaving porridge for the farm elf during christmastime.
