[Masterpost]
Part 5 of the College Crush AU, which @hiddendreamer67 inspired me to write, but this short story stands alone just fine, and I’m not entirely sure where it falls in the AU chronologically.
Summary: Logan and Patton have been in a qpr for some time. Patton decides to draw an infographic about romantic-type-things Logan (who is aromantic) does and doesn’t like. In crayon. Patton doesn’t know what day it is.
The Infographic
Patton had tried to get the business office people to make it so Logan's key card could open Patton's dorm room as well, but they'd said it was against some sort of policy. Patton had taken to leaving his door slightly open when he thought Logan was going to come over. And even when he didn't, in case Logan wanted to come over unannounced. Logan had managed to convince him to at least close it when he went to class, but if Patton was in his room, the door was always at least cracked.
One day in late winter, almost spring, Logan decided to pay Patton a visit. Patton, he knew, didn't have any classes right now, and while he might be hanging out in some other building, he also might be in his room. Logan could, of course, have simply texted Patton to ask where he was, but he wanted to surprise him.
Patton was one of the third floor Golding Hall RAs (there were two), and thus lived in Golding 314. Logan appreciated that the number was the first three digits of pi, making it easier to remember. When he arrived at Patton's door, it was open about a foot, and Logan could hear soft music coming from inside. Logan knocked to alert Patton to his presence, and then entered without waiting for a response.
Patton was sprawled out on the floor, facing away from the door, but as Logan entered, he pushed himself up on his elbows and looked over his shoulder at him.
"Logan!" he exclaimed happily, bounding to his feet. Logan stepped forward, opening his arms, and Patton crashed into him. Logan wrapped his arms snugly around his qpp, holding him close and smiling fondly into his hair.
"Hi Patt," he said.
"Hi Lo," Patton replied with a giggle, burying his face in Logan's chest, his own arms wrapped as far and as tightly around Logan as he could get them. "I missed you."
"We ate breakfast together less than three hours ago," Logan reminded him gently.
"I know," Patton said. "I still missed you."
Logan smiled. In truth, he had missed Patton too. He looked over at where Patton had been lying, and noticed a piece of paper on the floor, crayons scattered round it. The paper had markings all over, but Logan couldn't see what they were from this distance. He looked down at Patton and opened his mouth to ask what Patton had been drawing, but decided to wait. If he asked now, he would have to stop hugging Patton.
Finally, though, Patton shifted, and Logan loosened his grip. They moved slowly, and Logan rested his hands on Patton's shoulders as they pulled apart. Patton's hands lingered at Logan's waist for a few moments, but then he took another step back, Logan let his hands drop, but Patton caught one before it could reach Logan's side.
"I drew something," Patton said, tugging on Logan's hand with a shy smile. Logan let him lead him across the room. Patton stooped, still holding Logan's hand, and picked up the piece of paper. "It's an infographic," he said, handing it to Logan.
"I like infographics," Logan said, looking at it. It had no title, but he was quickly able to tell what it was an infographic about. There were six crayon drawings of himself and Patton partaking in various activities, and each picture was labeled underneath.
✓ holding hands, said one.
✘ kissing, said another, with several more ✘es around the picture.
A third picture, which looked fairly similar to the kissing picture due to the low level of detailing possible when drawing in crayon, was labeled ✓ hugs.
The fourth, labeled ✓ CUDDLES, had green checkmarks around the picture, like kisses had had ✘es.
The fifth picture, in which Logan was holding what he figured must be a furled rose and Patton was holding a red heart, had four labels: ✓ chocolate, ✘ flowers, ✓ flowers that are actually chocolate, and ~ Heart-Shaped Boxes. Logan figured, based on context, that the golden yellow label meant 'sometimes.'
The final portrait, in which Patton had his arms flung up in the air, Logan was blushing, and they were surrounded by little red hearts, was labeled ✓ HEARTFELT DECLARATIONS OF LOVE and ✘ in public.
A picture of a loaf of bread with green flecks, drawn in the lower corner, was marked, ✓ puns that result in food and ~ other puns. Ah, it was zucchini bread, then.
There was also a zucchini, labeled 'zuccinni' (yes, with two Ns), a pink heart with lines radiating off it, a heart with the aromantic flag in it, and the stripes of the aromantic flag alone. Logan had a feeling Patton had even used a white crayon for the middle stripe, even though it wasn't visible.
"Do you like it?" Patton said softly.
Logan looked up at him, and for a moment, thought that he had accidentally put on Patton's glasses by mistake this morning instead of his own. Patton was blurry. But no, Logan had been able to see fine on the way over. He must have gotten something in his eyes. He blinked it away.
"It is accurate," he said warmly, quite pleased. "Zucchini is misspelled."
"Oops," Patton whispered.
Logan grinned back at him. "I have something for you, too," he said, and Patton's eyes widened. Logan pulled the small package, a little bigger than a softball, from his coat pocket, handing it over. Patton tore the paper off.
Inside was the smallest, reddest teddy bear Logan had ever seen, hugging a bag of chocolate kisses that was as big as itself.
"Awww!" Patton said with a gasp. "He's so cute!!" He hugged the bear happily. Logan felt a peculiar combination of pride and jealousy. "Where'd you get him?"
"There's a table set up in the library," Logan said.
Patton blinked, looking back at Logan with bewilderment. "Why?"
"It's a fundraiser for St. Jude's," Logan explained. "They help kids with cancer."
Patton nodded a little, looking back at the bear. "But… why are they selling teddy bears and candy?"
Logan paused for a moment. "Because it's Valentine's Day," he said at last.
Patton's head jerked up. "Wait, that's today?"

diet that actually works
alright everyone. i'm about to share with you a diet that is super easy to stick to and actually yields results.
now, just a disclaimer, this may not be as fast/extreme as some of you would like, but i can guarantee you all that this pace allows you to be consistent and prevents you from constantly falling into a binge cycle.
within a month of starting this meal plan, i have lost 13lbs. that is an average of 3.5lbs a week.
average daily intake: 800 calories
BREAKFAST
EVERY morning, i drink a profast chocolate shake. they're sold at a local metabolic weight loss center, and they are admittedly pricey, but they are definitely worth it. if you can find a similar/cheaper substitute, even better.
i also ALWAYS drink coffee with a packet of splenda and .25-.5 cup of cashew milk. the foods you eat on this diet are pretty limited so i need my caffeine in the morning, as well as some fat to keep me satiated.
profast shake: 100 calories, 7g carbs, 1.5g fat, 15g protein
1-2 cups of coffee: 20 calories, 3g carbs, 1g fat, .5g protein
LUNCH
for school, i only pack one thing: a very, very basic salad. it encourages me to stick to smaller portion sizes and it also relieves my growling stomach at just the right time of day. if i ever am feeling weak/faint, i will pick up leftover scraps/snacks from my friends and classmates.
chopped romaine (2 cups): 16 calories, 3.2g carbs, .2g fat, 0g protein *2g dietary fiber*
grilled chicken breast (1 oz): 53 calories, 0g carbs, 2.1g fat, 8g protein
sliced cucumber (.5 cup): 8 calories, 1.9g carbs, 0g fat, .3g protein
lite ken's balsamic vinegrette (2 tbsp): 60 calories, 3g carbs, 4.5g fat, 0g protein
it really is essential to have some source of protein—i have struggled for years to implement a plant-based diet in my household. given that i'm an 18 year old living with my parents, i really did not get much of a say in dinner selection. a meat protein, however, has the ideal macronutrients ratio for this diet, and also will keep you the most full throughout the day while also repairing your muscles after heavy workouts.
while you also may assume that you can go without the salad dressing, please know that the dressing often times contains your highest amount of fat for the day. as i'm sure you know, you will be very constipated during this diet and i suggest sticking to natural means of achieving bowel movements—so stick to coffee and keep this portion of fat in your diet.
DINNER
i am very privileged to have a mother willing to work with me on this diet, and i am very grateful for the work she puts into preparing my dinners. while we do switch up the dinner menu every night to avoid monotony, it is ALWAYS a vegetable paired with a meat protein.
typical vegetables: broccoli, asparagus, cauliflower, zucchini, brussels sprouts
typical proteins: chicken, salmon, turkey, pork tenderloin
i try to eat as early in the evening as possible, around 6:30pm, so my body has plenty of time to digest and also burn off any additional calories before i go to bed. to avoid late night snacking, i focus on homework or watch youtube videos, specifically mukbangs or 10,000 calorie challenges. if i really cannot resist the urge, my go-to treat is 1 outshine fruit popsicle. the no sugar ones are 25 calories and they're just the right size to satisfy me. it also makes me think that i'm cheating on the diet, so having just one is enough to keep me from going back.
EXERCISE / WORKOUTS
this is so important for this diet, and i definitely credit it for speeding up my weight loss process. even as someone undoubtedly suffering from body dysmorphia, i am starting to see positive changes in my physical state. my legs are slimmer and have more defined contours, showing off my muscles. my stomach is MUCH flatter than i was at my starting weight, and my hipbones actually protrude out.
i play lacrosse for my school, meaning i exercise roughly 4-5 days a week. practice extends for 2 hours, while games last 50 min, plus our 1 hour warm-ups.
i'm definitely not saying you NEED to pick up a sport in order to do well, but i am telling you that being obligated to teammates and a coach really pushes me to workout every weekday, and prevents me from excusing myself from exercising.
before practice every day, our team runs 1 mile together, with the average pace being 6.5mph. at my weight, 150lbs, that burns me roughly 100 calories.
during actual practice, we do a lot of jogging/sprinting throughout all of the drills, but we also wait in lineups and whatnot, so when i calculate my burned calories in myfitnesspal, i always underestimate the time of my workout. instead of logging 2 hours of lacrosse, i typically log 35 minutes, which burns 320 calories for me. i'd rather underestimate than overestimate.
for those of you that are not committed to a sport: i highly recommend purchasing the p90x package. once my lacrosse season ends, i will be turning to that as my form of exercise. p90x provides a great workout plan for those who are specifically looking to become lean, rather than bulky, while still building defined muscle. i'm pretty sure the average p90x workout burns around 450 calories, and if you pair that with a mile run, that'll give you a total of -550 calories a day.
PLEASE do not skip this aspect of the diet— if you think you can just create a calorie deficit without implementing some form of exercise and strength training, you are not going to get the results that you want. yes, you will lose weight. but that weight will be a combination of fat AND muscle.
the more muscle you have, the higher your BMR is, simply because it requires more energy to maintain muscle than fat. in addition, having muscle will make you look much more toned rather than flabby/one-dimensional. i promise you that you will not bulk up like a body-builder if you eat protein or workout. instead, you're going to achieve a flat stomach/abs and toned arms/legs. the only way you would bulk up is if you eat a caloric surplus, so you have nothing to worry about.
ADDITIONAL POINTERS
cut out oils. this is so so important— oils contain way too much fat and way too many calories. your body needs to be using the fat it already has for energy, not new sources of fat that you put into your body
the macronutrients ratio: 50% protein, 30% carbohydrates, 20% fat. you want to really boost your protein intake in order to repair your muscles after working out. carbohydrates also provide your body easily-accessible energy, but a majority of those carbs should come from vegetables.
NO fruit. fruit contains way too much sugar and while they do contain fiber, you can do without them.
NO grains. grains, such as pasta and bread, are extremely high in calories and, honestly, do not really keep you full. i understand eating a bagel right before an extreme workout in order to get some energy, but grains really do not provide much sustenance and i highly suggest you do not indulge.
gastrointestinal issues. yes, you are going to be constipated. stick to coffee and the salad dressing as natural laxatives, but if you NEED a bowel movement, consider drinking smooth move tea. or milk of magnesia. and a TON of water. as someone who often suffers from painful bloating, i recommend buying gasx chewables— they are so relieving and they actually taste like candy, without having any calories.
buy a lifewater. lifewater is my saving grace. by purchasing a 1L bottle, it encourages me to drink SO much water throughout the day. i normally keep it room temperature and i end up drinking over 3L within 24 hours, and i am TERRIBLE at reminding myself to hydrate. water is so so important for this diet, especially if you are working out often. it also encourages more bowel movements and prevents your body from retaining too much water.
avoiding a binge. i actually keep a list of foods in my notes app. it features a ton of meals/snacks that i am dying to indulge in. for some reason, it helps me. also, try to remind yourself that the primitive part of your brain is fueling your irrational cravings, but your advanced brain is control of your motor functions. YOU are in control of whether or not you grab snacks and feed yourself, NOT your cravings.

So ya girl has had the feeling that’s she’s got food intolerances. And she’s had the feeling for a while.
I used to love crab I ate it all the time, but it didn’t love me back. Same for dairy products.
I didn’t find those out by a medical test, my oldest sister was diagnosed as Lactose intolerant, and a few years ago whenever I ate dairy the things that happened to my sister happened to me, and then it started happening when I had crab. But my dairy tolerance has gotten better I can now eat cereal but I can’t drink the leftover milk.
But now ya girl is confused as fuck, I haven’t had dairy or crab at all today or within the past week. Yet I have my nasty ass symptoms of nausea, abdominal pain, gas, Amoung other things... and I don’t know what the Fock is causing it.
Was it the KFC I had for dinner? Was it the shitty school burger? Flavored water, my cereal, zucchini chocolate chip bread I had for breakfast? WHAT! WHAT THE FUCK IS IT!
And it interferes with a lot of stuff, it happens about a week a month maybe two weeks at most. I sit/stand in the bathroom cause I know it’s gonna happen, and it sucks because I’m hogging the bathroom for a good half and hour, and hour at most just to take a shit. Imagine that during school or a con.
I literally was in full cosplay two minutes ago and I was sweating and uncomfortably so I took of my cosplay. I only have my makeup on right now and my room is all set up to film...I took my wig off...I love her but she’s a bitch to get back on.
And I don’t wanna go in to get it checked and before I get stuff saying it’s your health, and your body take care of it. Yes I agree with that but intolerance will not kill me, plus my mom took my and my sister to get strep throat checkups in January....it cost $172 after the insurance took off the bill.....I’m sorry I love my body but not if it means my mom not being able to get gas to go to work.

Breaking bread with Schoon.eating
Last month I was treated to a lovely and inspiring morning as I broke bread with the Schoon family. I have always loved this local foodie brand so to be invited to taste their new winter menu was a blogging highlight for me. We were greeted by a beautiful and bountiful long table tucked into the corner of their Schoon manufactory restaurant & bakery in downtown Stellenbosch. The owners Chanelle and Fritz were the ultimate hosts, taking their time to greet and chat with each guest as we settled into the morning’s gathering. The welcome table was decked with gorgeous coupe champagne glasses ready to be topped up some chilled bubbly or fresh juices and of course there was also freshly brewed coffee for those who needed their morning fix.
We sat down to share not only the delicious feast that was being provided but also to share in the story of Schoon and where the brand is headed, Fritz and Chanelle want to” put bread back on the table.” Their dream is to take their craft national and make well crafted, nutritional bread accessible to all. It was refreshing to hear them speak honestly about the peaks and pits of their journey thus far and incredibly uplifting to hear them affirm their commitment to their dream irrespective. With our hearts full we began tucking into the assortment of new dishes on offer but not before being encouraged by Fritz to literally dig into the breads on the table, “please, don’t be shy, use your hands and tear off your piece”
Round after round of thoughtfully crafted dishes were brought out, each one lovelier than the next. Simple, elemental, each bite was literally a burst with fresh flavor. I’m talking warm roast tomato and brie danishes, open omelette with grilled zucchini and spiced seeds, a soul delight peanut butter granola with milk and fresh banana, an awakening toasted rye with roast tomato, basil and garlic butter with a soft poached egg and my ultimate favorite; the most comforting parmesan mielie pap with a soft poached egg and spiced seed granola!!! And then there were the after breakfast treats, which quite honestly will always be a must when you visit. Schoon makes some of the finest pastries in the dorp and their newest additions are some of the most wonderfully indulgent treats. The sublime chocolate caramel rye tart, a sweet tooth’s dream, is perfect for sharing and the portly apple crumble croissant you’ll want to have on your own.
I just had the best time, I got to meet new people from my home town, engage in fantastic conversation, learn something valuable from a beloved brand, reaffirm my excitement and hope for a holistic future for all and eat plate after plate of delicious and nourishing food in good company. I know, peanut butter and nutella are like the greatest things ever invented. That’s why we just had to create a Nutella Stuffed Peanut Butter Banana Muffins Recipe! It’s the best muffin recipe!
Peanut butter is magical. And not just on it’s own but especially in baked goods. It often creates something extra light and moist and that’s totally true for banana bread. Our peanut butter banana bread is one of our most popular recipes on our blog. It’s one of the most soft and squishy banana bread recipes you’ll ever make. Take that, combine it with nutella stuffed in the middle and swirled over the top of the muffin and these nutella stuffed peanut butter muffins are the best thing you’ll make in 2018.

Nutella Stuffed Peanut Butter Banana Muffins
These nutella stuffed peanut butter banana muffins are made by combining fry ingredients and wet ingredients along with mashed banana and peanut butter.
Make sure you read our Best Banana Bread recipe before you start on this. While the ingredients are a little different because of the peanut butter you’ll still want to understand how to best mix and bake it. See the recipe link above.
To the batter, before you even stir it you’ll add chocolate chips and peanut butter chips. Everything being mixed all at once is key to avoid over mixing, again read the post above.
Nutella is slightly frozen and placed in the center of each muffin and then a little more swirled on top.
How to Swirl Chocolate into Batter
The key to swirling is to use a small toothpick as there isn’t very much chocolate on top. If you use anything bigger you’ll just combine the chocolate and batter which isn’t as pretty.

Don’t these pictures, all of this blog and social media make this whole thing look so easy, effortless and beautiful? I mean, who doesn’t have indulgent nutella stuffed peanut butter banana muffins carefully arranged with perfectly swirled chocolate oozing out the middle?
That’s just not reality.
The reality of this recipe is that I made the muffins the day before and saved them until the next morning to photograph because morning has my favorite light to make the food look all dreamy and delicious.
Then I had a crazy busy toddler who needed a whole lot of attention and love, aka playing with the same set of cars going down a “Little People” car ramp 500 billion times.
Kids are Creepy
And on top of that, when he was finally playing and distracted and I literally ran into the kitchen to hurry and shoot the heck out of these only to turn my back for one minute and being the total creep that he is (more on that in the next paragraph) there he was, licking out the entire center of a muffin as fast as his chubby little hands would allow him so I had to refill the muffin to get the shot.
Yes, refill because Momma is not waisting a peanut butter muffin.
He had it for lunch. Even if it was practically dessert.
But really, kids are kind of creepy. Think about how many times they just suddenly appear at your bedside. Or have you ever had one tell you they were talking to the old man who came in their playroom but you were home alone?! CREEPY!!!

Nutella Stuffed Peanut Butter Banana Muffins Recipe

I know, peanut butter and nutella are like the greatest things ever invented. That’s why we just had to create a Nutella Stuffed Peanut Butter Banana Muffins Recipe! It’s the best muffin recipe!
Ingredients:
1 3/4 Cup Flour
3/4 Teaspoons Baking Soda
1 1/4 Teaspoons Cream of Tartar
1/2 Teaspoon Salt
1/3 cup Butter, unsalted, softened
1/3 Cup Jif Creamy Peanut Butter
2/3 Cup White Sugar
2 Large Eggs
1 Cup Mashed Bananas, ripe (2-3 Medium bananas that have gone freckly)
1 Cup Chocolate Chips
1/2 Cup Peanut Butter Chips
1/3 Cup Nutella plus more for the swirl
Directions:
Place parchment or a silpat on a plate and scoop out small mounds, less than a tablespoon, of Nutella then freeze until set.
Set out the eggs.
Preheat the oven to 350 degrees.
Spray a jumbo muffin tin with nonstick spray or line with paper liners, or use a regular tin.
In a large bowl, whisk together the flour, baking soda, cream of tartar and salt. Set aside.
In another bowl, whisk together the oil and sugar. Add in the eggs and peanut butter and whisk again, but be sure to not over mix.
Dump the dry ingredients, banana and chips on the wet ingredients and switching to a rubber spatula or wooden spoon, gently fold the ingredients together just until a few streaks of flour remain.
Scoop one large spoonful (we actually use a cookie scoop ) into the bottom of the muffin wells and place a dollop of the frozen nutella in the batter. (See note for options) Cover with batter up to 2/3 high in the well.
Place a little nutella on top of the batter and using a small knife, starting at the outside edge of the batter, swirl through and around the nutella.
Allow to rest in the pan for 8-12 minutes before baking. See note.
Bake at 350 for 25 minutes or 12-16 minutes for regular muffins. The muffins are done when lightly golden and the middle springs back up when you touch the top.
Once the muffins are done, open the oven door, turn off the oven and let the muffins rest for 2 minutes, no longer, before carefully setting it on the counter for a few more minutes to cool.

Carrot Spice Muffins – Healthy, Plant-Based, Gluten-Free, Oil-Free, Vegan Baked Breakfast Recipe
Dad’s Carrot Cake
My Dad is irresistible. He’s one of those guys that seems to get along with everyone. If you walk into a party, there’s Bud Simmons, offering you a drink and already telling corny jokes. I inherited his love for learning and adventure – adopting the curiosity for travel that has led both of us across the country on road trips. He has always been a role model for creating time for fitness. He would go for 5am runs while we still slept, coming home in time to shower and take us to school.
If you ask my Dad what his favorite cake is, he’ll tell you “Carrot Cake”. As a kid, I never understood this. Why would anyone throw away their chance for dessert on something as healthy as carrots? Only my Dad would choose this – the same dad who would request a “black bean sub without cheese” at Subway long before vegan was a thing. For me, though? I didn’t comprehend. Get rid of those vegetables and make room for more chocolate and fudge, please.
As an adult, though, I get it. The little bits of raisins, grated carrots, and pecans play together with delightful textures. Warming spices like ginger, clove, and nutmeg comfort you to the core. Plus, all of these healthy ingredients make it much acceptable to enjoy it for breakfast 🙂 Yes, learning from my Dad on this one – a slice of carrot cake, warmed slightly in the microwave for 20 seconds makes the best “Breakfast Dessert” ever.
Re-Making His Favorite Dessert
Well, Dad would be proud of this plant-based version of his favorite treat. Whole grain oat flour replaces refined white for a gluten-free option that also creates a fluffy texture. Dates, raisins, and banana are pureed to replace refined syrup or oil. This makes a batter that is sweet and moist – without all of those empty calories.
The spices have been simplified to a blend of Pumpkin Pie Spice. I kept all of the bits and pieces he loves – healthy carrots, raisins, pecans. However, you can add your own beloved variations here. Grated zucchini, dried currants, and sunflower seeds would all work well. There’s even room for vegan chocolate chips.
Portioned into muffins, you can enjoy one or share some – it’s up to you. This batter also works great as a traditional cake. Simply pour it into a 9-inch round cake pan that’s been lined with parchment. Increase the baking time to 50-60 minutes, until it passes the toothpic test.
Slather these with Cinnamon Cashew Cream for dessert. Or make a batch to bring for brunch. Whatever you do, make extra. Just like Dad – they’re irresistible.

These gluten-free carrot muffins are incredibly moist and deliciously sweet. You won’t believe how healthy they are – no refined sugar, syrup, flour, or oil! Warming pumpkin pie spices like cinnamon, ginger, and cloves combine with texture from raisins and pecans. These will take you back to your childhood – with memories of carrot cake and spiced bread. Ingredients
1 ½ cups (12 oz) unsweetened almond milk
1 ¼ cup (125g) pitted dried dates
¾ cup (120g) raisins, divided
1 ripe banana (1/2 cup, mashed, about 110g)
1 teaspoon vanilla extract
1¾ cups (157.5g) oat flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons Pumpkin Pie Spice
¼ teaspoon salt
1½ (100g) cups finely shredded carrots
½ cup (2 ounces) pecans pieces + 12 pecan halves, for garnish
Procedure
Preheat oven to 350F. Line a 12-count muffin tray with Parchment paper liners**. If using traditional paper liners, you will need to spray them with oil to prevent sticking
For the wet mixture: In a blender or a deep bowl, combine the almond milk, dates, ½ cup (80g) of the raisins, the banana, and vanilla. Use the blender or use an immersion blender to puree the mixture until completely smooth, scraping down the sides of the bowl as needed. Be sure the mixture is completely smooth – let your blender run from 45-60 seconds to ensure the dried fruits are well-blended.
For the gluten-free dry mixture: In a medium bowl, whisk together the oat flour, baking powder, baking soda, Pumpkin Pie Spice, and salt.
To make the Gluten-Free Carrot Pecan Spice Muffins: Pour the wet mixture into the dry. Whisk together until well-combined. Add the remaining ¼ cup (40g) raisins, the shredded carrots, and the pecan pieces. Fold together until well-incorporated.
Portion the batter evenly between 12 muffin tins, filling each one nearly to the top. Garnish each muffin with a pecan half, pressing the pecan into the batter lightly.
Bake the muffins 30 minutes, until golden brown and a toothpick can be inserted and come out clean.
Let cool 10 minutes before serving or storing.
Chef Katie’s Tips
Nut-Free Tip: If you need to keep these muffins nut-free, you can swap out the almond milk for a nut-free plant-based milk. Soy milk and oat milk work best to maintain a light, fluffy texture for this recipe. Omit the pecans or substitute with sunflower seeds.
Oil-Free Tip: Parchment muffin liners require no oil spray. You can find them in the baking aisle of most healthy grocery stores. You can also use a re-usable silicon muffin mold for an oil-free muffin.
Grate your own carrots: If you prefer to grate your own carrots, 1 grated carrots yields about ½ cup grated. You’ll need about 3 carrots for the 1 ½ grated carrots in this recipe.
Other dried fruits: Instead of raisins, you can use other dried fruits like currants, golden raisins, or chopped apricots.
Inspired by Susan’s Fat Free Vegan Kitchen recipe on Forks Over Knives: This recipe was inspired by the Easy Vegan Carrot Cake recipe I saw on the Forks Over Knives’ site. You can pour this batter into an 8-inch square or round baking pan for a cake version. Top with Vanilla Cashew Frosting and decorate with chopped pecans. No one will believe it’s gluten-free, oil-free, and vegan!

Nutella Stuffed Peanut Butter Banana Muffins

Nutella Stuffed Peanut Butter Banana Muffins Recipe

I know, peanut butter and nutella are like the greatest things ever invented. That’s why we just had to create a Nutella Stuffed Peanut Butter Banana Muffins Recipe! It’s the best muffin recipe!
Ingredients:
1 3/4 Cup Flour
3/4 Teaspoons Baking Soda
1 1/4 Teaspoons Cream of Tartar
1/2 Teaspoon Salt
1/3 cup Butter, unsalted, softened
1/3 Cup Jif Creamy Peanut Butter
2/3 Cup White Sugar
2 Large Eggs
1 Cup Mashed Bananas, ripe (2-3 Medium bananas that have gone freckly)
1 Cup Chocolate Chips
1/2 Cup Peanut Butter Chips
1/3 Cup Nutella plus more for the swirl
Directions:
Place parchment or a silpat on a plate and scoop out small mounds, less than a tablespoon, of Nutella then freeze until set.
Set out the eggs.
Preheat the oven to 350 degrees.
Spray a jumbo muffin tin with nonstick spray or line with paper liners, or use a regular tin.
In a large bowl, whisk together the flour, baking soda, cream of tartar and salt. Set aside.
In another bowl, whisk together the oil and sugar. Add in the eggs and peanut butter and whisk again, but be sure to not over mix.
Dump the dry ingredients, banana and chips on the wet ingredients and switching to a rubber spatula or wooden spoon, gently fold the ingredients together just until a few streaks of flour remain.
Scoop one large spoonful (we actually use a cookie scoop ) into the bottom of the muffin wells and place a dollop of the frozen nutella in the batter. (See note for options) Cover with batter up to 2/3 high in the well.
Place a little nutella on top of the batter and using a small knife, starting at the outside edge of the batter, swirl through and around the nutella.
Allow to rest in the pan for 8-12 minutes before baking. See note.
Bake at 350 for 25 minutes or 12-16 minutes for regular muffins. The muffins are done when lightly golden and the middle springs back up when you touch the top.
Once the muffins are done, open the oven door, turn off the oven and let the muffins rest for 2 minutes, no longer, before carefully setting it on the counter for a few more minutes to cool.

Ask Angela: A protein-packed lunch idea, tomato-free Cozy Stew, family meal times, and more
It’s spring, it’s spring!! I was outside the other day when it hit me that I can now officially say that winter is behind us (according to the calendar, anyway…I think it’ll be a while before it actually feels like it here). The winter of ‘18–’19 was a challenging one for me, and I feel so ready for a fresh start (I think I’ve said this about ten times so far in 2018!)
I’m popping in a day early with Ask Angela because I just couldn’t wait to share this week’s fun questions. I hope you enjoy this batch as much as I did, and please keep those questions rollin’ in…they give me something to ponder when I’m up in the middle of the night, lol.
Q1. Hi there, your Cozy Butternut, Sweet Potato, and Red Lentil Stew sounds absolutely delicious. I am trying to adapt a week’s worth of meals for a lady who is allergic to vegetables in the nightshade family. (So no tomatoes.) Have you ever tried making this without the tomatoes?
Hey Georgie, Your question came at just the right time…I was planning on making a batch of this stew for dinner that very night! (We’ve been on a huge Cozy Stew kick this week!) So, after receiving your question, I decided to give it a spin, and held off adding the canned tomatoes and tomato paste until the very end. I tasted the stew without the tomatoes and it’s still quite good! I do think you can get away without using tomato products, however since there’s no acidity from the tomatoes it’s especially important to add the apple cider vinegar called for at the end to balance the flavours. You may even want to use a bit more vinegar to up the acidity (I’d recommend adding slowly to taste). You’ll find the stew will be thicker without the liquid from the canned tomatoes, so you may also want to add a bit more broth as you cook it…although a super thick and hearty stew never hurt anybody, I suppose. :) I’d love to hear how it goes if you try it out, Georgie!
Q2. Hi Angela, My husband and I as well as our family of five boys really enjoy your recipes—Oh She Glows is my go-to site for plant-based yummy food =) We just tried the Salted Avocado Chocolate Pudding Bowls and they were a hit. I’m wondering if you ever made pudding pops with that recipe, and if so how the avocado held out…I have never frozen avocado myself.
Hey Sarah, Wow, five boys!! How do you even have time to make this pudding? Heh. I’m so happy to hear how much you all enjoy the recipes! My kids love popsicles, so I tried out your avocado pudding pops idea and the frozen version worked pretty well—the pops came out chewy, dense, and fudgy! I did find it a bit tricky spooning the pudding into molds as it is quite thick, and you may need to push the pudding down a few times to get the air bubbles out as you go. Not a big deal, though! The popsicles were also a bit challenging to remove from the molds (I had to put the mold under hot water for a while to loosen them up), but in the end they tasted great and I didn’t find the avocado flavour (which is subtle) changed due to freezing. Also, if you happen to have the Bonus Recipe Bundle from my Oh She Glows Every Day pre-order promotion, you might want to give my Dreamiest Dark Chocolate Fudgsicles recipe a try too. Those pops are made with a decadent base of melted dark chocolate, coconut milk, and banana…obsession-worthy!
Q3. Do you feed the kids first and then eat after they are in bed? I struggle with this and am wondering if you have any suggestions. (Note from Angela: A little context—Jess’ question came in after I did a couple Insta Stories showing me making my Cozy Butternut, Sweet Potato and Red Lentil Stew early evening, and then finishing off the cooking process after my kids were tucked in for the night.)
Hey Jess, I can so relate to your struggles with this! We tend to play it by ear schedule-wise and change it up depending on the day (weeknights and weekends are vastly different around here), how the kids are feeling (are they hangry, happy/content, etc.), and what dinner foods we have on hand. Adriana and Arlo tend to eat quite early (we call it the 5 o’clock Seniors’ Special, hah), so during weeknights Eric and I will often eat a bit later after they go to bed. Occasionally, I’ll be hungry enough when the kids are ready to eat and I’ll eat with them at the same time…it just depends! On weekends we always try to eat together since I tend to have more time to plan and cook special meals. In sum, we pretty much fly by the seat of our pants most days, but I’ve come to realize that’s what parenthood is all about (at least for us).
Q4. Love to make your Lightened Up Spring Stuffing for Easter, but since it’s an older recipe, I’m wondering if there is anything you’d change to update it. Or is this one of those tried-and-true Oh She Glows recipes that is just as awesome today as a few years ago?
Hey Sue, Oh yes this is an older recipe from 2012! Somehow it feels like just yesterday that I posted it too. It’s been a while since I’ve made it, but I remember really loving this lightened up take on stuffing. I’ll put this on my list of recipes to revisit this spring as it would be a great one to re-test and add to the app. The crusty seed & cranberry raisin loaf that I used in the recipe added so much to the overall dish, so I would suggest using a similar loaf as the base if you can. The pops of cranberry and raisin were really nice (if you’re into that!), although I’m sure sourdough would be nice too and you could always add dried cranberries separately if you use a different variety of bread. I’d love to hear what you think if you try it…maybe a test run is in store before the big day?
Q5. Hi Angela, You posted a tasty looking lunch idea on Insta Stories yesterday and it was gone from your story before I could screenshot the ingredients you listed. Do you mind sharing what was in it and how you made it? I need more green in my life this spring!
Hey Becca, Absolutely! It was such a great lunch that I was actually debating whether to turn it into a recipe on the blog and app. For this dish, I was lucky to have some leftover cooked quinoa on hand—I find it always helps a meal come together quickly, so I used that as my starting off point for a fast lunch. I added a tablespoon or two of avocado oil to a large skillet along with some stemmed and chopped curly kale, diced bell peppers, spiralized zucchini and carrot (sometimes I use this julienne peeler if I don’t want to pull out the spiralizer), my leftover cooked quinoa, as well as some drained and rinsed canned pinto beans. I stirred it all together and sautéed the mixture over medium heat while adding fresh lemon juice, salt, red pepper flakes, garlic powder, and pepper, all to taste. Once the veggies were tender, I portioned it into bowls and topped it with sliced avocado, a generous dollop of hummus, and a handful of nuts and seeds (like hemp hearts, sunflower seeds, chopped walnuts, etc.). It was sooooo tasty and left us feeling energized without being weighed down.
Q6. Hi Angela, I’ve made your Enchilada recipes many times, but this time I want to free up my time just before serving so I have a chance to catch up with my guests. Can I make the Enchilada Sauce a few hours in advance (or even the day before)? How about the other enchilada sauces you drizzle on top, like the Avocado Cilantro Cream Sauce, or Cilantro-Lime-Garlic Cashew Cream? Love every recipe I have tried from both of your cookbooks!
Hey Beth, Thank you so much for your kind words and support for my cookbooks…that means the world to me. You can definitely make the Enchilada Sauce in advance (it should keep in the fridge for several days). If you’re planning to whip up the Avocado Cilantro Cream Sauce from my Vegan Enchiladas, I’d say it’s probably best made fresh whenever possible as avocado spoils quite fast and this sauce contains over a cup of it. When it comes to advance prep, you might have a bit better luck using the Cilantro-Lime-Garlic Cashew Cream (from my Next Level Vegan Enchiladas) as that recipe contains much less avocado (only 2 tablespoons). If you do make the Avocado Cilantro Cream Sauce ahead of time, I’d suggest keeping the sauce in an airtight container and pressing a piece of plastic wrap on top of the sauce before sealing with the container’s lid—this should help prevent it coming into contact with air. You may need to scrape off and discard any discoloured avocado sauce on top just before using. I hope you have a great time hosting, and please let me know how things work out if you do make either of the sauces in advance!
