METHODS OF BAKING CAKE
Cakes are basically made from fat, flour, sugar and eggs, with the exception of the sponge, which is fatless. The texture varies according to the method of preparation and the proportion of fat to flour. The richest cakes include equal proportions of the basic ingredients as in a Victoria Sandwich Cake, but additions can be made such as dried fruit nuts and spices as for a Christmas or Birthday Cake. Numerous flavourings can be included and these vary from chocolate and coffee to coconut or orange 
 All-in-One Method
This is a quick and easy way of preparing all types of cakes other than the fatless sponge.
All the ingredients are beaten together with a wooden spoon and air is incorporated into the mixture to form air cells which are stabilised by the sugar. The soft blend of Stork enables air to be incorporated easily and it also mixes readily with the other ingredients. Additional raising agent is required however, as not quite enough air is introduced during the initial mixing. During baking, the fat melts, releasing the air cells in the flour and liquid mixture. The raising agent in the flour reacts with the liquid from the egg to produce carbon dioxide and steam. As pressure builds up inside the cake these gases move to the air cells formed during mixing and cause the cake to rise. At the end of baking, this movement ceases as the proteins in the flour and eggs set. The cooked cake consists of a large number of air cells surrounded by a network of proteins in which the starch granules are held.
The texture of a Sandwich Cake made by this method is fairly open.n etc. 
The Creaming Method
This is the traditional method of cake making.
The Stork and sugar are beaten together with a wooden spoon until the mixture is light in colour, fluffy in texture and the sugar has dissolved. A large number of air cells are produced which are stabilised by the sugar. More air cells are introduced by beating the eggs into the fat and sugar mixture. It is unlikely that any additional air will be incorporated by sieving or folding in the flour, but it must be folded in gently so that no air is lost.
During baking the cake rises for the same reasons as the All-in-One cake. The texture of a creamed cake is a little closer and finer than an All-in-One Cake.
The Rubbing-in Method
This method is not widely used today and only cakes including half or less than half fat to flour are prepared this way. The Stork is cut into fairly small pieces and rubbed lightly into the flour with the fingertips and thumbs. At the same time the mixture should be lifted well above the bowl to help incorporate air into the cake. When ready to add the other dry ingredients and liquid, the mixture should resemble fine breadcrumbs. The texture of a rubbed-in cake is fairly open.
Temperature
Cakes are best made in a warm kitchen with ingredients at a temperature not lower than 65-70°F (20-21 °C). If, therefore, the ingredients and equipment are stored in a cool place, they should be put ready for use at least two hours before preparing the cake. This will also make preparation much easier. The only exception is when the rubbing-in method is used.
Oven
Turn on the oven heat 15 minutes before needed, setting at the stated temperature for the recipe, then when the cake goes in, the all-over heat inside will have reached the correct temperature. Remember, ovens vary, so the instructions given in recipes for gas and electricity settings may have to be varied for individual cookers. Check the position of shelves

The amount of batter you use and the size of the pan will affect how long it takes to cook. It took me about 50 minutes to bake one small cake, which yielded about 10 large-sized cakes. I used a 5 liter premier pressure cooker made of aluminium. You can also use the cooker that you have at home. It will include the recipe for eggless  chocolate cake recipe.
Chocolate Cake Recipe: Ingredients of Chocolate Cake:
250 grams flour
100 gms ghee or butter
100 grams pc sugar (Bura)
200 full cream milk
50 cocoa powder
200 grams condensed milk
1 tsp baking powder
½ tsp baking soda
Chocolate Cake Recipe: To bake the cake

Chocolate Cake Recipe: How to make Chocolate Cake Recipe:
1. Take out all the ingredients used in the cake and keep them on the table.
2. To make the cake, apply oil in the utensil. Grease the utensil for making cake with ghee or spread it, take a small spoonful of all purpose flour and keep it in this lubricated utensil and hold the utensil from outside and rotate it in such a way that a small layer of all purpose flour should be applied. Remove excess flour from the pot, out of control inside the pot.
3. For the cake, add baking powder and cocoa powder to the flour taken and sift it twice. Put ghee and sugar in a big utensil and beat it well with a spoon, pour mixed milk into it and beat it till it mixes well.
4. Slowly add sifted flour to this mixture and keep on stirring, after adding all the flour, whisk the flour for 2-3 minutes, there should not be any lumps in the solution. Add milk gradually to this batter and whisk it, set a fine batter with the same consistency as related to making batter for cakes. The batter for the cake is ready, now you can chop any dry fruits and add them to the batter.
5. To make a cake in a cooker, the bottom of the cake holder should not contact the bottom of the cooker, usually the cake can be eaten from the bottom. For this, a bowl of salt is spread at the bottom of the cooker, so that the bottom of the cake holder does not touch the bottom of the cooker and maintains the temperature even when the salt is hot.
6. After putting a bowl of salt inside the cooker, put it on a high flame for two minutes and cover the lid of the cooker over it. In two to three minutes the cooker will be sufficiently hot to make the cake.
7. Which we prepared by applying ghee flour to the cake pan. Pour the cake mix into the pan and blend the mixture. Spread like this. Place this utensil in a preheated cooker, close the cooker with a lid and remove the whistle from the top of the lid of the cooker. Cook the cake on low flame for 40 – 50 minutes. After 40 minutes, check the cake well, if the cake is not heated well, then by putting a blade inside the cake, the mixture is coming on the blade, then, at that time, prepare the cake more, soon the cake is ready Will be done. ,
8. Open the cooker, you can see that the cake is cooked, assuming you need to test it too, put a blade in the cake and check if the cake does not stick to the blade, then your cake is fully cooked.
9. Now let the cooker cool down, when the cooker cools down, take out the vessel containing the cake. Take out the cake in a plate with the help of a knife.
10. Now you can decorate it according to your choice and cut it into the size of your choice and eat it.

Christmas Fruit Cake
More popularly known as Kerala Plum Cake. This plum cake is very popular because it is easy to make.  
Ingredients:
1 cup plain flour
1/2 cup chopped cashew nuts
Few black raisins
Few mixed dry fruits (dates, cherries, etc)
1/2 cup white sugar (for sugar syrup)
2/3 cup unsalted butter, at room temperature
3/4 cup white sugar (for cake batter)
3 eggs, a pinch of salt
1/2 tsp cinnamon powder
1/4 tsp clove powder
1 tsp baking powder
1 tsp vanilla extract
INSTRUCTIONS
Melt sugar slowly in a frypan on medium heat while continuously stirring until it turns into a deep dark caramel colour.
Turn off heat and add about 1/4 cup water to harden the sugar. Slowly heat the mixture for around 10 mins till the time the sugar crystals dissolve. Keep it aside to cool.
Pre-heat oven to 180°C.
Take dry fruits and nuts, and coat it completely with 3 Tbsp flour, and set it aside.
Combine the remaining flour, baking powder, spices, and salt nicely. Now, beat the butter and 3/4 cup sugar until fluffy (for ~10-13 mins). Add vanilla extract and mix until it is completely combined.  Add 1 egg and beat. Then add a tiny bit of the flour mixture and fold. Alternate between the eggs and flour mixture until it’s all used up. Add the cooled caramel and coated dry fruits and gently fold in.
Grease the cake pan and pour the batter into it. Bake for ~50-55 mins until the top layer turns dark brown in colour. And Viola! the cake is ready!
Carrot Cake
This incredibly moist and utterly delicious cake will make you fall in love with carrot cakes. Most of the ingredients for this cake would probably be in your kitchen already.
Ingredients:
2 cups all-purpose flour
2 tsp baking soda
1 ½ cinnamon
Salt
1 ¼ cup oil
Vanilla extract
1 cup sugar
4 large eggs
3 cups hand grated carrots
INSTRUCTIONS
Assemble all the dry ingredients in one bowl and wet ingredients in another. Whisk the dry and wet ingredients in their respective bowls until they are well blended. Fold the dry and wet ingredients together with the help of a spatula or a large spoon until you don’t see any streaks of flour. Add the carrots. You can also add nuts and raisins as per your taste and preference.
Heat the oven to 176°C. Now divide the batter between two buttered and floured cake pans and bake until done. It would take ~ 35 to 40 minutes to bake in an oven. Let it cool down, layer the cake, and then apply your favourite frosting on top of it. Remember, carrot cakes taste scrumptious and delicious even without the frosting!
Red Wine Cake
This super moist red wine cake is a perfect treat for self-indulgence on the Christmas Day.
Ingredients:
¾ cup all-purpose flour
½ cup cocoa powder
½ tsp baking powder
Salt, 1 tsp vanilla essence
1 ¼ cup oil
¼ tsp cinnamon powder
½ cup unsalted butter
¾ cup sugar & ¼ cup brown sugar
¾ cup red wine
1 egg
INSTRUCTIONS
Start with preheating the oven to 180°C. Take a parchment paper to line a loaf pan. Set it aside.
Now whisk together butter, sugars, vanilla in a bowl till it’s really creamy. Add the egg, cinnamon, salt, flour, baking soda and fold the ingredients well. Mix in the red wine and fold gently again.
Pour the mixture in the loaf pan and bake for ~30 to 40mins. Remove the loaf pan and let it cool down. To make it more delicious, mix the chocolate sauce, melted butter and chocolate chips together until its completely smooth. Pour the mixture over the cake and smooth the top. Chill the red wine cake for some time. The soft, moist and chocolate filled red wine cake is ready to be served!
