My Pot Addiction (WARNING: Satire - Laugh at me or laugh with me.)

Hello, my name is Don, and I’m an Instant Pot’oholic.
I guess it all started when my mom got me wanting one because of all the stories she would tell me about how great they are. I mean, it’s a pressure cooker, right? What do you do with a pressure cooker? My grandmother used a pressure cooker, but all I remember was the tss tss tss tss tss tss sound the little weight thingy made. I can’t even tell you one thing my grandmother cooked in it, but I remember her using one with some frequency. My mom, however, was persistent with her stories of Instant Pot recipes she tried and how good the food tasted. Even so, I tried to dismiss it as just another kitchen gadget fad, but my mom wouldn’t stop raving about her Instant Pot. So, I figured I would check them out.
I started by asking friends where I could get one, but most of them had only heard about them. Even friends who had them were only recreational users. They weren’t serious hardcore users like my mom by any stretch (She was strung out on Instant Pot. Still is.) I thought about asking her, but how could she hook me up from 10 hours away. No, I needed to find where I could get one of these babies on my own. (Looking back, I should have been worried about my mom, but by the time I realized it, it was too late. I had become blinded by the shiny glint of a new kitchen toy.) 
While I was looking into Instant Pots, I had a few other friends talk to me about using Air Fryers. “Air Fryers?” “You mean frying with air, right?” “Frying with air.....” “Frying.....” “Air.....” “What?????” I considered checking them out, but I just couldn’t get my head around frying with air - you need oil to fry, otherwise it’s just convection baking - come on people!
I figured I needed to check Instant Pots out a little before I bought one. At first, I started sneaking a peak at them in the kitchen section at Target. I would take a look when I was there getting some cat litter or deodorant. Seemed harmless enough. Then I went to Kohl’s one time just to see what they offered. Kohl’s has a full display of them. They even show you what the regular price is, and how much you will save by buying at Kohl’s. All the same, I was skeptical that the price might go up after the first one, so I decided not to get one. Then, and I’m ashamed to say it, I started looking at pictures of Instant Pots on the internet. And let me tell you, there’s a lot to see on the internet about Instant Pots. I mean they’re right there in full color with their lids off for everyone to see - no box, no bubble wrap - you can see everything! Even the wire rack! From that moment, I was hooked, but it was a new low for me. But, so what? I really wanted to try one. I just wasn’t sure which size to get. Should I go with the 4, 6 or 8 quart? I was pretty sure that the 4 quart was too small, but maybe the 8 quart was too big. And if I went with the 6 quart, would I wish I had gotten the 8 quart? I was trapped in an Instant Pot decision loop.
In the midst of my Instant Pot conundrum, a couple of my dearest friends got me one for my birthday. The 8 quart. I trusted them because they had introduced me to a few other gateway kitchen novelties in the past. When they gave it to me, I unboxed it like Ralphie opening his official Red Ryder, carbine-action; two hundred shot, range model air rifle on Christmas morning. It was carnage. Unbridled avarice. Oh the humanity!
Realizing that the Instant Pot was no simple can opener or toaster oven, I figured I should read the instructions (a first for me). Then I thought, “I bet there are videos on YouTube I could watch.” I did a quick search. BIG MISTAKE! Still images were one thing, but seeing it in action...I was not prepared for what I would see. The worst part it is, anybody can view that smut!  There are no filters for Instant Pot videos to keep yours or little eyes from viewing all the indulgent, succulent, and, dare I say, steamy videos of this appliance in action. Even so, I felt I had to watch them for educational purposes.
Then I read about the app. Yes, the app. There is an app for Instant Pot users with recipes right at your fingertips. No need to do a search on Google, they have it all right there for you to keep you hooked. So with as much courage as I could muster, I searched for a chicken recipe to make for dinner.  “Ah, Chicken and Dumplings. Rating - 5 stars; Difficulty - Easy. Sounds like an good one to try first.”  I followed the directions to a “T” and the meal was...
FANTASTIC!!!!  We loved it! We all thought it tasted like an “inside out chicken pot pie.”  Since then I have made short ribs, pulled pork, roast chicken, Spaghetti Bolognese, Fettuccine Alfredo, hard cooked eggs, maple glazed carrots, Brussel’s spouts, pot roast and even chocolate lava cakes! Everything has been amazing, but I’ve only been using for two weeks!!!!!! There’s so much more to explore!!!!
It has come at a cost, though. Now I feel like I have to use it everyday. If I don’t use it, I feel on edge - like it is calling to me. If I take my family out to eat, I think of all the money I could have saved by staying home and fixing something alla Instant Pot. My social life has tanked. I don’t see people anymore because I’m at home cooking with my Instant Pot. I’ve had people calling to see if I’m still okay. Occasionally, I’ll go to ALDI to pick up more ingredients, but this Instant Pot habit is getting out of control. I can’t stop. I know I need help, but I can’t get past all the money I’m saving by cooking at home. My wife and my kids are hooked now. I’m even thinking of getting an Air Fryer!!!!! I don’t know where else to turn. Help me Obi Wan Kenobi, you’re my only hope!

Honey Balsamic BBQ Pulled Pork Sandwiches Instant Pot or Slow Cooker
These flavorful honey balsamic BBQ pork sandwiches are so easy thanks to the Instant Pot or Slow Cooker! And wow, that BBQ sauce gets a huge boost thanks to a few pantry staples!
BBQ pork sandwiches are an oft-recurring meal around here. I’ll never be able to take them off the rotation because a) hello, kid pleasing meal and b) they are so easy! 
This recipe has been my go-to BBQ pulled pork recipe for years. It’s an oldie (been livin’ here on the site for almost a decade), but man, it proves that it really doesn’t take a whole lot of ingredients or special tricks to transform a pork roast into a super tender, smoky-flavored, saucy sandwich situation.
Because we eat BBQ pork often…either on sandwiches or salads or burritos or whatever…I’m thrilled to have another variation on the almighty BBQ pork. I’ll never turn my back on that classic first-love recipe, but this honey balsamic recipe is crazy good and perfect if you are looking to put a little pizazz into your BBQ pork sandwiches. 
Here’s What Makes The Recipe So Easy
You literally don’t have to overthink anything. The pork is seasoned with a little salt + pepper + garlic powder action and then thrown in the Instant Pot (oh yeah!) or slow cooker – both of which you can set and forget. While the pork cooks* everyday BBQ sauce gets amped up by the addition of a few pantry staples (honey + balsamic + Worcestershire), and lemme tell you, BBQ sauce never tasted so good. 
*the BBQ sauce can easily be made days (or even a week) ahead of time – just reheat before tossing with the pork! 
The most important part is choosing the right cut of pork (I recommend a pork shoulder or pork sirloin roast) and making sure you are using a BBQ sauce and balsamic vinegar that you already love. Life lesson #243: no amount of additional ingredients are going to change the flavor of a sauce you hate the taste of. 
Here are my preferences: I either use this favorite homemade BBQ sauce or Sweet Baby Ray’s (my go-to store brand). And for balsamic vinegar, I almost always use the Kirkland brand from Costco or the Bari Bari brand (that I order online). 
  Let’s Talk Buns
In the pictures of this post, you may recognize these fluffy whole wheat French bread rolls. They are fabulous with this honey balsamic BBQ pork (or any pulled pork recipe), and I always double or triple the recipe so I can keep some baked rolls in the freezer.
But hey, storebought buns work JUST FINE. If you like your BBQ pork extra sauce, just get a bun that is sturdy enough to soak up that saucy sauciness. 
Also, I happen to love topping my BBQ pork sandwich with coleslaw. Do you?? The contrasting flavors and textures speaks to my heart. Spoiler alert: only 3/7 of my family agree with me. We are a house divided.
If you are a coleslaw + BBQ pork fan, here is my favorite creamy coleslaw recipe. However, in the interest of full disclosure, I must tell you that sometimes I just toss shredded cabbage and carrots in a bowl and sprinkle in vinegar, oil, a pinch of sugar and some salt + pepper for a non-creamy but ultra-yummo coleslaw fix.

Yield: 6-8 servings
Prep Time: 10 minutes
Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Ingredients
Pork:
3 to 4 pounds boneless pork sirloin roast or pork shoulder
1 teaspoon salt (I use coarse, kosher salt)
1/2 teaspoon black pepper (I use coarsely ground)
1 teaspoon garlic powder
2 tablespoons liquid smoke
1 to 2 cups low-sodium chicken broth
BBQ Sauce:
3/4 cup balsamic vinegar
3/4 cup BBQ sauce (my favorite homemade version here)
1/3 cup honey
2 tablespoons Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions
Season the pork roast evenly with salt, pepper and garlic powder (about a teaspoon of each).
Instant Pot Directions: cut the roast in half and place in the Instant Pot. Pour in the liquid smoke and broth. Secure the lid and cook at high pressure for 60 minutes. Let the pressure naturally release for 10 minutes before quick releasing the rest of the pressure.
Slow Cooker Directions: place the seasoned pork roast in a 5- or 6-quart slow cooker and pour in the liquid smoke and 2 cups broth. Cook on low for 8-9 hours.
For the BBQ sauce, combine all the ingredients in a medium saucepan and heat, stirring often, until simmering. Simmer for 15-20 minutes until slightly reduced and thickened. Season to taste with salt and pepper, if needed. The sauce can be made a week in advance and refrigerated. If refrigerated, heat before tossing with the pork.
Shred the pork (I suggest draining some of the excess cooking liquid) and toss with the BBQ sauce. Serve on buns (shredded cabbage/coleslaw optional but delish). The pork (once tossed with the sauce) can be kept warm in the slow cooker or Instant Pot for several hours before serving.
Notes
Choosing a BBQ sauce and balsamic vinegar that you like the taste of is key here. I either use my favorite homemade BBQ sauce or Sweet Baby Ray's brand, and my go-to balsamic vinegar is at Costco.

Pressure cooker came with a mug lavacake recipe in the booklet, so since it’s a snowy Sunday morning I gave it a go.
It’s pretty much the standard mug-cake batter (quarter-cup flour, quarter-cup sugar, tablespoon cocoa powder, half-teaspoon baking powder, quarter-cup milk, two tablespoons oil) though this one also calls for an egg, has you grease the mug first, and specifically has you use olive oil.  (Also, I think when I usually make a mug cake I do it with two tablespoons of cocoa)
and then you put two cups of water in the pot, set the canning rack in there, and set the mug on the canning rack, then pressure cook for ten minutes and quick-release the steam.
I think it cooks more evenly than in the microwave (where usually the bottom half is where all the ‘lava’ is) but on the regular pressure setting, there was only maybe one or two bites that were lava-y in the middle.  If I do it again, next time, I’ll try it on the lower setting to see what that does.

Why I Cooked Every Single Meal for 7 Days (Well, Almost)
In C'mon, It's Just 7 Days, members of the Food52 team share what it was like to take on a personal challenge for one week: skipping caffeine, going plastic-free, and more. (Spoiler alert: We all survived.)
2018 was the year I avoided exercise at all costs, got drinks with friends after work (like, a lot), and ate out multiple times a week (breakfast, lunch, and dinner). Not that I don’t believe we should be partaking in such pleasures—we absolutely should. But everything in moderation and all that, right?
It took staying in my high school bedroom over the holidays, sifting through yearbooks and looking at old photographs of myself, for me to realize that my adult life had been missing the kind of discipline I used to have when I was younger: Younger Me was Homecoming King and Principal Flutist in the county orchestra; Younger Me ate green things like avocados and ran track; Younger Me cooked for himself almost every. Single. Day. And it wasn't even his job.
This might sound ironic considering I’m a food editor now and write about how much comfort and pleasure cooking gives me. And of course it does, and I do a lot of it. But I certainly don't do it every day, for every meal—do you? When it comes down to it, I usually just boil an egg in the morning (if I'm not jamming my feet into my Converses, bolting out the door) and I almost always buy my lunch, or compose an elaborate meal out of snacks I've foraged opportunistically from the Food52 test kitchen. Sure, dinner leaves more room for the kind of slow, measured cooking and eating that bleeds into the night and gives me peace before bed, but even in that arena I could still use a bit more work. So, in an effort to take better care of myself this year, I've decided to do a couple of things: join a yoga studio, and cook more food.
First up? Agreeing to cook every single meal for seven whole days, as part of our C'mon, It's Just 7 Days team challenge. For this, I drew inspiration from David Tamarkin's Cook90 plan, where you cook yourself breakfast, lunch, and dinner every day for 30 days with the idea in mind "that you cannot cook for 30 days straight and not come out a better, faster, healthier cook." I was most encouraged by the "better," and the notion that this kind of cooking would make me more skilled in the kitchen. But...30 days is a lot. So I decided to try seven days first.
Here's how it went:
Day One: Monday
It's New Year's Eve. I feel way on top of it because, according to Tamarkin, nearly 200,000 people are starting the Cook90 challenge...tomorrow. And I've got a 24-hour head start. When I wake up in the morning, I usually can't stomach a full breakfast, so I always have a single six-minute boiled egg with Magic Spice and a cup of coffee, which is what I do today. For lunch, Mom and I make kimchi fried rice together. For dinner, I invite my cousins over for an evening of appetizers: nori deviled eggs, shrimp cocktail, and cheesy breakfast sausage pinwheels.
Favorite Meal of the Day: The kimchi fried rice (duh). How’d I Do?: A+ (wow, the sausage pinwheels were incredible; I'm the best).
Day Two: Tuesday
New Year's Day. I feel encouraged by yesterday's success (this is going to be a walk in the park). Of course, I have another boiled egg this morning and go about my day. Mom, Dad, and my brother Kevin are all super busy tonight, so we decide to meet back at the house for lunch. Guess who's cooking? I make a simple rigatoni alla vodka with some leftover sausage from last night—it's so creamy and comforting. My mom says it's the best pasta she's ever had (she always says this about anything new I cook her). To go with, a huge composed Italian-style salad with a homemade garlicky, oregano-scented vinaigrette, plus Texas toast. Dinner is just me, so I make the cover recipe from Cook90: sweet potatoes with chorizo, mushrooms, and lime cream. (It's so. Good.)
Favorite Meal of the Day: The sweet potaters. How’d I Do?: A (I feel kind of guilty about my lazy breakfasts; does boiling an egg really count?).
Day Three: Wednesday
My mom just bought an army of raw, fresh crabs for one of my favorite Korean dishes ever: gaejang (or soy sauce–marinated crabs). I help her make the marinade, which is just water, soy, sugar, jalapeños, and onions that we bring to a boil, cool slightly, then pour over the crabs. We can't eat these until tomorrow (but I think this counts as cooking). Lunch is leftover kimchi fried rice with a bunch of banchan from the fridge (this doesn't count as cooking). I have to rush out to pick up my boyfriend Scott from the airport. Tamarkin says you're allowed to cheat for three of the 90 meals, so we decide to get ramen for dinner at Ton Ton in Ponce City Market (the tonkotsu is my favorite bowl of noodles in America, so I only feel a little guilty).
Favorite Meal of the Day: The ramen! It fed my soul! How’d I Do?: C- (the only thing I cooked today was an egg in the morning and the crabs, which wasn't one of my three meals).
Day Four: Thursday
A little discouraged from yesterday—but hey, life happens. I skip breakfast because I sleep in, but wake up at noon to my uncle's loud, booming voice downstairs: He's brought us some wagyu steaks from Costco. I cook one in a skillet, carve it, and have it with white rice. It's so fatty, almost too fatty, so I take the steak pieces back to the pan to render more of their fat. Much better. It melts in my mouth. Oh! And the crabs are ready. Their sweet-salty flesh is like ceviche, only softer in taste and texture, and the soy flavor tastes incredible with the rice. Utterly addictive (my friend Irene says her grandmother calls gaejang "rice killer" because it makes you want to keep eating more and more rice). For dinner, I drive over to Scott's and we make Urvashi Pitre's Instant Pot Butter Chicken.
Favorite Meal of the Day: Gaejang. How’d I Do?: B+ (missed a meal, but cooked two other times; plus, reaped the fruits of our crab labor yesterday).

Day Five: Friday
Breakfast is white rice with fried eggs, soy sauce, and sesame oil. For lunch, I want to show my mom how to use the new Instant Pot I bought her for Christmas, so we attempt my beef stroganoff recipe (originally intended for a slow cooker), stupidly don't change a thing, and end up with a mess. The beef and mushrooms produce way too much liquid for the pot, so beefy soup spews out of the pressure release valve and ruins the kitchen. It tastes fine, but we feel dumb. For dinner, I go over to Scott's again and we reheat a frozen pizza from Publix; dessert is an Asian pear galette that I ate happily (but didn't help make).
Favorite Meal of the Day: Our Publix dinner. How’d I Do?: B- (reheating a pizza, according to Tamarkin, doesn't count as cooking, and I didn't make the gorgeous galette).

Day Six: Saturday
It's my last day in Atlanta. I decide that going to one of my favorite lunch places on Buford Highway with my parents is worth it. I want to treat my family for dinner, so I cook them a Sunday roast with Yorkshire puddings; Nigella's minty pea and avocado salad; my warm eggplant and mint salad; and these clementine chocolate lava cakes. My brother is in charge of the dessert and he forgets the olive oil, so they come out more lava than cake. -_- My parents appreciate all the vegetables, because they love vegetables. (Am I really related to these people?)
Favorite Meal of the Day: The last supper. How’d I Do?: C+ (I may have only cooked once, but I cooked A LOT).
Rise, my children, RISE!
Day Seven: Sunday
Today I'm on the road with my dog for 13 hours, driving from Atlanta back to New York. I didn't cook anything in advance or pack myself breakfast or lunch, so I eat a few clementines when I stop for gas and later scarf down a drive-through chicken sandwich with French fries. (Have I failed you, C'mon It's Just 7 Days challenge?) Even though I should be exhausted, I come home to my Manhattan apartment and feel inspired to cook again—finally, in my own kitchen for a change. I take a giant sheet pan, roast a whole chopped head of cauliflower, plus Italian sausage, red onion, and fennel seed, and toss this with some cooked fusilli and a huge smattering of freshly grated Parmesan. It really hits the spot, as does a glass of the single-malt Scotch that Scott gave me for Christmas. And, belly full and seven days of cooking under my belt, I lay me down to sleep.
Favorite Meal of the Day: The Scotch. How’d I Do?: C (I didn't totally fail today...right?).
Cooking every meal, every day was a lot harder than I thought it'd be. I figured, "Hey, as long as I do this after the holidays, after all the family reunions and parties, then it should be fine." But I still found myself needing breaks and wanting to just go out for a meal instead of cooking it from scratch. And don't even get me started on breakfast! I had to force myself to wake up early enough to have breakfast at all.
Still, I appreciated the exercise and caught myself occasionally noticing the act of my cooking that much more: every stir of the pot, every cracked egg, every little movement in the kitchen that fed my soul and gave me peace. I even caught myself thinking, "I forgot how much I love this." In this way, like Tamarkin said, I do believe the seven days of mindfulness actually made me a better cook—or at least a more thoughtful one. But the thing I loved most was that, at the end of the day, this kind of cooking wasn't about anything other than feeding my family and myself, a challenge primarily for sustenance.
As Nigella Lawson writes in Simply Nigella, "If cooking isn't hinged on necessity, it loses its context, and purpose. I cook to give pleasure, to myself and others, but first it is about sustaining life, and only then about forging a life." So, I've started to make good on at least one of my New Year's resolutions—and just as soon as I can find an inspiring Nigella quote about joining a yoga studio, then I'll be on my way with the next.

Instant Pot Chocolate Lava Cakes
Makes: 4 individual cakes
Ingredients
1stick (4 ounces) unsalted butter, plus more for the ramekins
6ounces bittersweet (65% to 74% cacao) chocolate, chopped (or use chips)
3/4cup confectioners’ sugar
1/8teaspoon fine sea salt
3large eggs, plus 1 egg yolk
1tablespoon bourbon or vanilla extract
6tablespoons all-purpose flour
Flaky sea salt, for serving
Crème fraîche, sour cream, or ice cream, for serving
Directions
In a microwave-safe medium bowl, melt the butter with the chocolate (or do this in a small saucepan over low heat). Meanwhile, butter four 6-ounce ramekins.
To the bowl with the butter/chocolate mixture, add the confectioners’ sugar and salt and whisk until cool to the touch. Whisk in the whole eggs and egg yolk, followed by the bourbon and flour. Distribute the mixture evenly among the four ramekins. Cover each with aluminum foil.
Pour 1 cup water into the pressure cooker pot. Place a steamer rack/trivet at the bottom of the pot. Stack the ramekins on the rack. You should be able to fit three on the bottom with the fourth placed on top in the center.
Lock the lid into place and cook on high pressure for 9 minutes. Manually release the pressure.
With tongs, remove the ramekins from the pot and allow them to sit for 3 minutes, still covered with foil. Then remove the foil and run a knife around the edge of each cake. Flip each cake onto a serving plate. Sprinkle with sea salt and top with crème fraîche or ice cream, if you like. Serve immediately.
