Simple dinner tonight but the family #loved it!!! Pan seared honey/lime/coconut amino chicken. It's not Tuesday but.... #tacos🌮 Mediterranean ones to be exact. Today I had an actual day off, like a real one. No work, at all, whatsoever! So, I got to create. Which is my happy place. A lot of people assume that Chefs 1. Eat whatever they want because they cook all day, and 2. That they get to cook things that they are passionate about. The truth is, you spend most days cooking what other people want, and then by the end of the day you're so tired you end up binging on snacks in your bedroom. So today after deep cleaning my kitchen for hours (I need a house keeper 😩) I just started making things. First I shaved some asparagus and tossed them in some red wine vinegar and oil with San Marzano tomatoes and red onions, and let em marinate. Then I simmered some of my home made Veggie stock and threw in some forbidden rice. Grilled up some mahi mahi that I spiced with Mediterranean seasoning. Slathered corn tortillas with red pepper hummus, put on the mahi, topped with the asparagus concoction. Added feta and roasted chickpeas that I spiced with smoked paprika and #voila!! The internet in an interesting place. A few months ago I get an email about catering a dinner for some ladies who are traveling to the Bay Area for vacation. I book a lot of gigs and I always go in without expectation, just the intention of giving the client my best. I always wonder where they found me, and she said she clicked the hashtag #blackwomenchef and I popped up 🤷🏽‍♀️ So on Sunday when I arrived to San Mateo to cater this intimate dinner for 9 lovely ladies. I was smacked right in the face with all the #blackgirlmagic in the world when i walked through the door. I’m not gonna lie, I expected an older crowd. Not nine 28 year old women. Who were educated, out spoken, fun, and beautiful! This party was the most fun I’ve ever had catering!
