Good morning! Happy Sunday!☀️ . Do you eat a different breakfast on the weekends? . I drink smoothies 7 days a week but on the weekends I like to make a decadent smoothie! It’s nice to have the time to get the right consistency and flavor combinations. My toppings are usually more rich too. . Today’s smoothie was actually quite tame for a Sunday. It’s mostly just fruits and veggies but the colors and textures are 👌🏻. Feel free to add a chocolate drizzle or chopped chocolate for a sweeter smoothie. . Recipe: •1 frozen banana (add more for a sweeter smoothie) •1 1/2 c @wymansfruit frozen wild blueberries •1 c frozen mixed veggies (riced cauliflower, butternut squash and zucchini) •1 c @good_karma_foods vanilla unsweetened + protein milk •1 tbsp @omg_superfoods pea protein . Good afternoon! Happy Thursday! . If you checked out my stories, you already know that the kids and I are down at the beach. I love love love the ocean. As we like to say, “A bad day at the beach is still a day at the beach.”😉 . When we’re down here, I definitely prefer to cook as little as possible so I prepped a few things to come with us like quinoa, tofu, roasted veggies and stewed lentils. Good morning! Happy Monday!🌺 . Does anyone have any great IG accounts they follow that are focused on running? . I love running!🏃‍♀️ I love the personal challenge running offers of pushing yourself harder based on only your goals. Go faster, slower, longer, don’t go...it’s your call. . The pictured infused waters are watermelon, mango and basil. These waters are from yesterday after a 5 mile run. They were perfect as they did double duty as a hydrating water and a delicious snack. I allowed them to sit for about 5-10 minutes and then enjoyed. The mango and watermelon are sturdy enough to take this water to go or allow it to sit in the fridge until you’re ready for it. . Good morning! Friday is here! 🎉🎉🎉 . Check out my stories to see my #instafavs and tell me yours! . Earlier this week @kimrosedietitian asked how you make food fun. I love this question (check out the great comments on her page) and thought about it this week. One way I make food fun is by serving it in fancy glasses (or on fancy plates with fancy silverware, etc). Eating off a paper plate is not very inspirational but pulling out your china and enjoying a salad on it feels great! . I am partial to using crystal for my infused waters. Infused waters, like this honey dew melon & blueberry water, are certainly pretty and delicious but drinking it out of a beautiful glass just elevates the experience. . Good morning! Happy Wednesday! . Do you find inspiration for cooking & eating in unusual places? . My inspiration for these smoothie bowls this morning was my shirt. Totally weird and random but I put on a light purple shirt and thought “that would be a great color for a smoothie” and got to work creating it. This might be a message that I need more art and culture in my life 😄 but I like to believe I can find art in almost anything.😉 . Recipe: •1 pack @sambazon unsweetened açaí •1/2 c @wymansfruit wild blueberries •6 dates, softened •1/4 c frozen riced cauliflower •1/4 c frozen zucchini •1/4 c frozen riced butternut squash •1/2 c frozen organic spinach •1 c @good_karma_foods unsweetened vanilla flaxmilk + protein •1 tbsp @omg_superfoods pea protein •1 tbsp @manitobaharvest hemp hearts . Add ingredients to blender and blender until creamy. Add more liquid if necessary. If you prefer a sweet smoothie, add 1/2 frozen banana or use sweetened milk and protein powder. . Good afternoon fine folks! . Do you have any great leftover tips? . I had quite a few people respond to me yesterday regarding leftovers. It was awesome to hear their advice so I was hoping you’d send some more good tips my way today. . One of my leftover tips regarding infused waters is to use leftover fruit from a fruit tray or salad. We had a big fruit platter from this weekend and the untouched fruits were kiwi, green grapes and honeydew melon. Not only did they create a beautiful monochromatic presentation but their flavor profile was delicious! Good afternoon! Happy Monday! . Do you like leftovers? . I have to admit I’m not a huge fan of leftovers. I’ve “warmed up” to them out of necessity (cooking for a family of 6 is no joke). There are certain foods that work better for reheating and quinoa is at the top of my list. It’s the perfect base for greens and veggies, night after night. And my kids will eat it without complaining 🙌🏻. And let’s be real, at the end of the day if I’ve minimized complaints, then it’s been a good day🙌🏻😂😘 . . Recipe: •1 c cooked quinoa •1 c @olivias_organics baby arugula •1-2 c roasted veggies (red peppers, fennel, carrots, cauliflower and purple sweet potatoes-toss in olive and salt and roast 425 degrees for 30ish mins) •1 tbsp nutritional yeast •1 tbsp @manitobaharvest hemp hearts •optional-drizzle of olive oil, squeeze of lemon and pinch of Himalayan salt . Warm quinoa and veggies. Combine with greens, yeast, hemp and seasoning. Enjoy! . . Good morning! Happy Tuesday! . How do you handle being tired? . I can’t handle caffeine so I’ve had to find creative ways to battle feeling tired (especially after a sleepless night). One thing that I’ve found to help is being properly hydrated. It’s certainly not the same as a big cup of coffee but it does help. On a day like today I like to fill a huge bottle water to cart around with me. Today I’m enjoying his delicious strawberry, kiwi and mango infused water. . (Maybe it’s psychological that the water helps wake me up but at least I have something pretty to admire through my bleary eyes 🤣😴🤣😴) . Good afternoon! Happy Monday!☕️ . Do you prefer hot or cold foods? . Based on my feed, I appear to like cold foods better than hot. Stewed lentils are definitely the exception. I love a warm bowl of sweet & spicy lentils, served with quinoa and veggies. As it continues to warm up outside, my dishes inside get cooler so I figured I’d enjoy this dish before summer hits and it gets retired until fall. . Is there anything you’re enjoying now that will get retired for the summer? . Recipe: Stewed Lentil: •1 c French lentils, rinsed •1 can coconut milk •1 small can tomatoes •2 c @olivias_organics fresh baby spinach •1 bulb fennel, thinly sliced •seasoning: about 1/4-1/2 tsp each: salt, garlic, fennel seeds, turmeric, ginger, black pepper . Add all ingredients to saucepan and bring to a boil. Reduce heat to medium and cook 20-30 until lentils are soft and sauce has thickened. Add water if necessary. . Serve with @earthlychoice quinoa and roasted @olivias_organics butternut squash. Good afternoon! I hope you are having a positive and productive Thursday! . Do yo eat the same thing everyday? . I rarely eat the same thing on a daily basis. I have some meals or snacks that make a weekly appearance but I generally change things up everyday. . This apple snack is an exception. I made it for the kids over school break and I can’t stop eating it! It’s so simple and so delicious! It’s definitely going into my weekly rotation of regulars.😉 . Recipe: •1 Apple (any variety), washed, cored and sliced •1-2 @eatingevolved salted caramel coconut butter cups, melted (or half chopped and half melted) •2-3 dates, chopped •1 tbsp pumpkin seeds •1 tbsp sunflower seeds •1 tbsp unsweetened flake coconut . 1.Mix together dates, seeds and coconut. 2. Layer apple slices and granola mixture. 3. When finished layering, drizzle entire dish with chocolate. 4. Good afternoon! . Are your kids home on school break this week? . My kids are home and I love it. I love sleeping in (a little, like 7 am instead of 6 am), having lazy mornings, long walks and eating all day. The common theme in our menu this week is strawberries. All four kids love strawberries, in everything and anything. . This strawberry, cucumber, lime and thyme infused water was a crowd pleaser this week. It was light, refreshing, earthy and slightly sour. I usually prefer sweeter infused waters but this was a nice change. You can easily leave out the lime & thyme for a sweeter water.😉 Cheers! . Good afternoon! I hope you are enjoying this lovely Saturday! . Do you have a go to dish that your whole family loves? The lovely and talented @rosenfeldhelen taught me how to make a delicious sauté that my family loves. It’s tomatoes, spinach, corn and warm spices sautéed until the flavors develop. . Well I couldn’t leave well enough alone....I added chick peas and avocado to the dish (and switched the spinach to kale) and you would think the world ended! Lots of whining and complained ensued. I used my “selective mom hearing” and sat back and enjoyed this delicious dish all by myself 😉 . Recipe: •1 tbsp olive oil •2 ripe tomatoes, diced •2 c @olivias_organics baby kale •1 can chick peas, drained •1 c corn •seasoning: 1/2-1 tsp Himalayan salt, black pepper, garlic, cumin, turmeric •1 avocado, diced . 1. Heat a sauté pan. Add olive oil to warm then add in tomatoes and seasoning. Cook about 5-10 mins until tomatoes begin to form a sauce. 2. Add in kale, corn and chickpeas. Cook another 5-10 mins until kale has wilted and corn & beans are hot. 3. Adjust seasoning as needed. Spoon into bowls and top with avocado. Enjoy! . Good afternoon! 🌷 . I love eating salads but if I don’t have everything at arms reach to prepare one, then I move on to chocolate. 😉 can you relate?! . This salad is a great example of #raidyourfridgeanyday by @bnutritionandwellness . I had baby kale & shredded carrots waiting in the fridge for me. I grabbed a can of @delallofoods mixed beans in the pantry. Then I stole one of my sons @eatwholly Guac cups (he brings in his lunch-sorry buddy!) for the dressing. Finally I had a bowl of quinoa with nutritional yeast and hemp hearts already prepared from a previous dish. The entire salad took less than 5 minutes to put together. 🙌🏻 I love when healthy, easy and colorful all come together in one dish! . Good afternoon!🌸🌼Is it starting to feel like spring where you live? 🌸If I look past the snow piles I can see signs of spring here and there. 🌷In the meantime, I continue to bring spring inside with bright, colorful dishes.🌼 . This dish is so simple and the colors are perfectly spring. I combined frozen mango & fresh blueberries and drizzled it with @eatingevolved strawberry coconut butter. The coconut butter formed a “candy shell” over the dish due to the frozen mango. It was perfectly sweet and provided a great balance of textures. You could easily make this dish ahead of time and let the mango thaw as it sits. This could make a great side dish for your Easter brunch or perhaps grace the dessert table as a healthy option.🐇🐇🐇 .
