The Númenóreans and Gondorians embalm their dead (this presented as a symbol of the false priorities, "tombs more beautiful than the houses of the living")... They are said to have tried hard to find a way to stop death, or return the dead to life, but to only have succeeded in embalming bodies.

Possibly, they might have invented the "I want my body frozen so when they find a cure for mortality they can revive me" trend.

Now, creepy idea, but what if the embalming looked less like the Egyptians did it (though this was an inspiration), but rather that they managed to preserve the dead perfectly... what if they looked as if they were sleeping in their tombs?

This might be actually supported by the text. The crown of Gondor was said to have been left by Eärnur "in the lap of Eärnil, his father" where it lay until the end of the Third Age. It might refer to a statue. It might not.

There Pippin, staring uneasily about him, saw that he was in a wide vaulted chamber, draped as it were with the great shadows that the little lantern threw upon its shrouded walls. And dimly to be seen were many rows of tables, carved of marble; and upon each table lay a sleeping form, hands folded, head pillowed upon stone. But one table near at hand stood broad and bare.

Again, no mention of statues.

Note that the rulers of Gondor do not even die in their homes; they lay down on the stone to die.
