I wanted to make a couple of sides to go with the beef wellington Remus and I were making for my family, as they are definitely side people, and this recipe seemed perfect, a classic with a slight twist that I thought would be the perfect compliment here.

I went ahead and halved this using 6 small potatoes and additional butter in lieu of the coconut milk. This was a case of me multitasking, so I will admit that I probably did not give this the attention it deserved.

But in the end, I don’t think it really mattered, as this dish was thoroughly enjoyed by everyone present; Remus even asked me for the recipe a week later, which is how I truly knew that this recipe was a success.

I personally thought that while the onions turned out fabulously, the potatoes perhaps could have used more butter and even double the seasoning, but I’m not a huge potato person and I always lean heavy into my seasonings, so that could all just be me.

At any rate, this is a fabulous side dish, and some of the most delicious mashed potatoes I’ve ever made. If you’re looking to up your mashed potatoes game without exerting too much additional effort, then this recipe is absolutely the way to go.
