End of canto 3, cutscene post defeating the final boss. There's a golden bough in the background here, but the way Dante's sprite aligns with it when they speak makes it seem like the bough's light is coming from them instead. I thought it was just a neat coincidence at first, but the more I consider it, the more I think it was deliberate:
1. The background is a different, zoomed out version of this scene during the entire time Sinclair and Demian are talking
2. It changes to this close-up only after Dante becomes the only speaker present at the scene and the narrative shifts back to them entirely
3. It's a pretty important moment for their development as a character, in which they decide to provide their sinners not only with what is stated by their contractual obligations, but with emotional support as well, however unsure in their abilities to do so they might be for now
Tldr: the morning did come. In the form of this guy doubling down on not letting the dystopia crush their empathetic nature

Lifetime Stew is so much darker in hindsight.
Sinclair and Don Quixote both get it, and it’s specifically *Lust*, not *Gluttony*, despite being food-themed. (Although Gluttony in Limbus terms is basically Greed, and Lust very broadly refers to “desire” for things that aren’t material).
So, Lifetime Stew is based on the fable of Stone Soup, wherein a man managed to feed his whole village by bringing each together with a different ingredient, to make a soup that would last forever. He just kept telling each person in the town square, “All it needs is one more ingredient,” and everyone just kept adding to it. Is the gist of it.
Sinclair and Don have voice lines that more or less imply the same thing - the Abnormality (Basilisoup) just wants everyone to try its delicious soup! Cute, silly concept, right?
So what do Sinclair and Don Quixote have in common?
(SPOILERS beyond this point! You’ve been warned)
In Canto 3, Sinclair recalls that once his mother, father, and sister all received full-body prosthetics, they no longer had a need to eat. The table was set and food was placed only for him. It’s one of the things he found so especially heartbreaking, that he was the only one left in his family who could still eat food. It’s such a core memory that it’s plastered on the window-wall of his cell for his base E.G.O., four roboticized humans sitting at the table, with no food present.
He desperately misses getting to share meals with his family.
And in La ManchaLand, the Bloodfiends have been starved of blood for the past 200 years, barely sustaining themselves on hemobars that don’t satisfy them. They can *live* without subsisting on human blood, but they’re utterly miserable doing so. The only one of the First Kindred’s clan who escaped such a fate was of course, Sancho, though she’d long forgotten she is a Bloodfiend, Faust says she still craves blood. She’d been in effect, the only Bloodfiend allowed to sate her cravings, while the rest of her kin starved. Being the only Bloodfiend able to escape their fate was so traumatic for Sancho that she wanted to forget everything about herself.
In other words, Basilisoup/Lifetime Stew is about “the joy of sharing a meal with family,” something both Sinclair and Don Quixote desperately wish for.

Sinclair does get stressed, but it's shown he doesn't let that get in the way of what he's supposed to do. He's not really entirely normal, mostly because of the whole survivor's guilt thing with his parents (although I don't know if it counts as survivor's guilt if he wasn't a target), but he's pretty dang normal and pretty sane. You're right about him being upper class, and about that effecting his reactions to violence, but there's also the fact that most people who grow up in half-decent conditions would still flinch when seeing the type of stuff he sees on a regular basis. Also it's important to note that Hong Lu possibly came from an even richer family and still has no problem handling his job. Something else was brought to my attention in Canto IV as well: Sinclair is intimidated by the size of the K-Corp building. He's not just afraid of bloodshed, he's more afraid of things in general that would concern or intimidate the average person. He acts as an "Only Sane Man," being the only one to actually handle situations in a sane way.
Ishmael's only time being actually afraid or nervous was the slop scene in Canto IV. She's also described as being obsessive-compulsive, and holding strong grudges for very long periods of time. As you have stated prior, Ishmael has a strong focus on staying normal and keeping her composure, which is what's keeping her from assaulting the majority of people on Mephistopheles, so basically Heathcliff but she holds herself to a higher standard. Ishmael also spent half her life on a boat, somewhere that's not a good place to grow up, sure, but also not somewhere that you'd beat witness to obscene acts of violence. Ishmael is more normal than the majority of the sinners, but she's also not right in the head, which I think will become apparent later on. She's not a maniac or completely hollow, but she's, by standards in our universe, not quite right in the head. Definitely has a superiority complex going on.
I didn't expect that I'd write two whole character analysis essays. Hope my reasoning was explained well enough.
Sinclair is the most normal sinner and Ishmael is the least autistic.
Ishmael is the most normalest person on that bus and no one can convince me otherwise, not only is she so obssesed with being normal to the point where it becomes a syndrome, she shows the most sane reaction to the events that unfold: trying to bail out of the company and searching for another job at every given opportunity. Her ID's backstory shows herself capable of properly adjusting herself and triving at a miriad of jobs while keeping her essence , plus, she's the only person with any moral left to be able to give Dante a concerned/judging stare. Also, she's at least somewhere in the spectrum, since her E.G.O's passive is literally hyperfocusing on her revenge and being normal.
Sinclair was literally part the 10% of the City and would never have had seen a corpse or killed someone if Kromer had not show him one. He can barely operate when exposed to the littlest amount of stress, he's the least normal person on that bus according to City's standards.
And now on the point of who's least autistic, I dunno, either Gregor or Rodya I guess?

If Bari really is a bookhunter, it’s heartwarming that she was able to find the father-daughter duo who she can share stories and considered as family after whatever the fuck she had with her supposed guardian bad end angela and more tragic that her stories were the indirect cause for dad quixote co-existence with human project to be failed. And now she left taken care of his schizo daughter.
But where is she after all of this? What is her goal? Is she going to be part of damien’s gang?
