Calabacitas Recipe
Tumblr media
This recipe makes a delicious side dish of zucchini, bell pepper, onion, and corn that is lightly pan-fried in olive oil and butter and topped with Monterey Jack cheese.

Sauteed grey squash
Ingredients:
1 Tbsp oil (I used steak fat)
1 tbsp toasted sesame oil
1 medium onion, diced
2 garlic cloves, minced
salt
2 pounds gray squash or green zucchini
freshly ground black pepper
1 teaspoon soy sauce
Instructions
Set a pan over medium heat, add oil.
Once it begins to shimmer, add onion and garlic. Cook 3 min, stir often, just to bloom fragrances.
Add squash and 2 pinches each of salt and peper, cook for 3 min.
Add soy sauce and cook until tender, 3-5 min.
Transfer to a medium bowl and let cool.

v hanging out at judy’s, listening to shit on the radio, smoking together, giggling over dumb jokes, one of them always laying or leaning on the other, and if not that, then laying near each other. they watch a movie on the tv, order some pizza, maybe get bored and start messing around. vic ends up staying the night (“it’s way too dark to drive right now” she says, and in the back of her head johnny goes “yeah right, fuckin’ night-cruiser”) and she and judy stay up reallll late, either busting out a board game, a puzzle, or dusting off an old console judy’s got buried in her “random stuff” closet. hell, the 2 techies could even take something apart and put it back together again to keep entertained — maybe now’s the perfect time to build that chair that’s been sitting in its box. whatever they decide to do, they don’t finish it, they can’t. they end up stumbling to the bedroom and just crashing into bed, so exhausted from trying to fit everything in one day. but it was a good day, you know? one really good day.

The Hubs’ gig went well tonight! His buddy’s band is definitely more jimmy buffet dad rock sort of vibes but they all had a lot of fun jamming, so that is what matters.
Now i have just enough time to sleep and work on my d&d stuff before going to another marathon session for my bro’s bday tomorrow.
