The popular Zupas Cafe Copy Cat Recipe is turned into this tasty and creamy low-carb slow cooker Wisconsin cauliflower soup. This low-carb comfort food is made with cauliflower, cheddar cheese, and bacon. It's great for cold days.
Ingredients: 1 head cauliflower, chopped. 1 small onion, diced. 2 cloves garlic, minced. 4 cups chicken broth. 1 cup heavy cream. 2 cups shredded cheddar cheese. 4 slices cooked bacon, crumbled. Salt and pepper to taste. Chopped chives for garnish.
Instructions: In a slow cooker, mix the chopped cauliflower, diced onion, minced garlic, and chicken broth. The cauliflower should be cooked on low for 6 to 8 hours or high for 3 to 4 hours, until it is soft. Smooth out the soup with an immersion blender or put it in a blender and blend it in parts. Add the heavy cream and cheddar cheese shreds and stir the soup until the cheese melts and the soup is smooth. Add pepper and salt to taste. Put bacon crumbles and chopped chives on top of the hot soup to serve.

Day 4
Today I worked in the morning. I'm a barista and I had to be at work at 5:30 am. So, I didn't have time to eat till I got there. I quickly made myself a breakfast bowl and an iced matcha latte for breakfast and then worked till 11. Since I was working, I was far more consumed with my work performance than my food consumption. Instead, I put my energy and time into my job. Later in the day, I went out with my best friend to Cafe Zupas and had grilled cheese and tomato soup. Then I went to my boyfriend's apartment and we had bagels late at night. Today, I was much less consumed with my food consumption, and instead, my energy went into my job and relationships.
I also briefly engaged in social media today, far less than the previous days. I watched a couple short YouTube videos when I was getting ready for work. It helps me wake up a little bit and makes the morning a tad more fun.

Journal - Monday, December 10th, 2018
Goals for today. Finish up budget. Get bonus cashed/deposited. Try to finish October writing. Laundry and clean. Stretch before bed. Read some. Play piano a bit. Clean laundry and spare room. That will be good for today. No weed after work to make sure I stay productive. I do want to get some coffee, so maybe I’ll swing up to Mothership and pick up a bag and a coffee. Nah, I’ll wait till the weekend. It’ll be easier. I can live without till then. I should swing by the store and get milk and yogurt. So I can make overnight oats for breakfast and some quinoa and veggies for lunch. I really don’t like the whole skipping lunch think. I like eat more that once a day. but today I will skip lunch cause I’m to lazy to get anything ready. Dinner will be left overs from Friday. I’ll have mashed potatoes all week I’m okay with that. they tasted delicious. Bob wants to make a space rock album together and I’m so down. I would be a lot of fun. Get it written then meet up somewhere and rent a studio for a weekend and get it recorded. It would be awesome! Probably release it under Stocksmile.

I was bad today and went to lunch. but its okay. Got some ramen and It’ll be delicious. Pulled and audible and come here instead of Cafe Zupa. I feel I just wanted soup and this is basically noodle soup. Michi Ramen is pretty tasty. Not quite as good as the place I went to with Luna, but still good. I still forget that I went to Japan/Philippines. It feel so long ago. It’s crazy. I’m definitely passing on the Bali trip and will go to Europe in the summer. Take a couple weeks

January I’ll start looking into Flights and stuff like that and a long weekend to Boston to see Bob and Emily. Probably around Marchish. We’ll see. I know I’m taking the two days to go to the film festival. I’ll pay her the money this weekend. have G-Ma stay with me and go to the festival together. Plus it’ll give Mom and dad a little break from her for a weekend. I have to hit up Marshall and then today and see if I can actually Play the show with them. Give him an easy out just so he doesn’t feel bad if he doesn’t want to do it.

Find something good for Makayla. I may get her possibly some anime stuff and then influence her to go in that direction in life. Like I have that much influence. there’s Tiff, Trav, Andy, Jake and Nathan. I can swing that ad dget them stuff off amazon and have it gift wrapped. I’m pretty sure I have her address in my maps. I’ll ask her for some gift Ideas. Probably get Travis a new pipe or something like that. I wander if this waitress really talks like that. Maybe its a family trying to make a business out here. Nah. I feel there’s enough people that they could just be from here. Learned the native language first? or they are here with a visa or something? I have no clue. I’ll definitely get this week done plus some more. Finish up these rails and then after work head to Costco. Get some stuff there. See if Gma wants to go. She might be down or I’ll go the store by myself for an easier time.

My quinoa tabbouleh may not turn out so great. I forgot the lemon, but I used some pickle juice in stead. Hopefully it’ll be all right. I’ll start heating up dinner after I get done with this day. I did get some stuff for the over night oats so I’m pretty excited about that. Got some maple syrup and banana and cinnamon! Should be delicious! I did pretty good today. Sucks I have to work Saturday but its a good excuse for taking it easy on Friday. I have to do something about this washer. This is just ridiculous. I need to ask my folks if I can take the set at G-pas. or just find a cheap washer at least then I can wash and dry at the same time. Something has to happen. I may go say hi to Vivian after the Skating Polly show. Would be nice to se her. I know she’ll be busy so maybe I’ll just go home after. I still want to ask Luna, but we’ll see how Friday goes. Maybe I will schmooze someone. I know I know I have a chance with Brittany. I’m just not stoked on her. So I feel that will be a lost cause on my end I’ll end up hurting her.

Leftovers should be good. the pierogies and stuff I’m down for. Cut up a couple slices of cheese. I’m down! I am only disappointing myself when I eat too much or do it do what I should be doing. Like how I’m sitting here watching it’s always sunny in stead of doing what I should. I’ll definitely clean the kitchen before I go to bed. I wonder if everything thinks I’m an alcoholic. Probably cause its right. I’m definitely not drinking a lot anymore. I have to be better. I will be better. I mean. I had 2.5 beers on Friday and and had 5 drinks all of Saturday. I’ll do even better this weekend. Friday I will have very little, I’m even second guessing eve going to the party. Maybe I’ll just stay home. Nah. I will go but I won’t participate in the gift exchange or I will. I’ll get a bottle of booze. Can’t go wrong there or maybe get something off amazon that's cool. We’ll see. I’m going and I’m bringing a gift. No drinking and home early tomorrow. I’ll get the Christmas cars and stamps and start working on the cards. I am excited to get them sent out. It’s going to be great. I’ll get the list of names all done tomorrow and get some addresses.

Falling in Love with Adventure

Saturday Oct 10, 2020 
I arrived at Tiffany's apartment in the early afternoon, after a tour of the apartment we headed out to lunch at Cafe Zupas in Menomonee Falls, Wisconsin. I ordered the combo Pesto Chicken Sandwich with Clam Chowder Soup which is served with a baguette roll and chocolate covered strawberry. As past college roommates we did our typical round of shopping at TJ Maxx, Ross, Home Goods and Costco all local to the Cafe Zupas restaurant. 
We headed into some local fall activities. We started out at Cedar Creek Farm in Cedarburg Wisconsin. It was a bit more packed during the COVID-19 pandemic than we preferred so we headed straight to the back of the grounds to explore some pumpkins before heading back out onto the next adventure. http://www.cedarburgcreekfarm.com/

Appleland Farm Market in Fredonia, WI was the fall lovers dream. We took some shots with the pumpkins before heading out into the apple orchard. We were able to purchase a bag to fill with apples and had the opportunity to explore the large orchard. It was so fun to go into the depths of the orchard while enjoying the fall weather. After gathering our apples we headed into the corn maze where we inevitably got lost with the hope to find ourselves at the entrance or exit, we ended up finding ourselves outside of the exit, making it a complete success. Of course we popped into the shop to find some homemade goodies and household decor. In true Hanna fashion, I was persistent we needed to find a bubble tea location when I discovered online Le’s Pho in Cedarburg, Wisconsin. I ordered a Taro smoothie with boba, which was a bit too earthy for my taste. Tiffany ordered the Tango Mango smoothie with lychee jelly and enjoyed it. https://lespho.com/

We headed out to dinner at Stilt House in Cedarburg, Wisconsin. When we arrived there was a 30 minute wait, and in the hopes to stay warm by moving we headed down the street to Amy’s Apple another MUST stop location when in the area. https://www.amysgourmetapples.com/

We scooped up our favorite caramel covered apples and headed back to the restaurant. Dinner was a great opportunity to catch up on work, family and life itself. We shared the Spinach Dip Wontons, I ordered the General Tso’s Chicken Sandwich and Tiffany ordered the Shaved Beef Sliders both with a side of Truffle Parmesan Fries. https://www.stilthousegastrobar.com/

During our dinner we realized that the two of us are no longer in our college days and truly are aging into boring adults both with our hearts set on heading home, hopping into comfy clothing and settling in for the night. We were in the apartment by 9pm in our sweats, wine in hand and a documentary on Netflix. We ended the night before midnight, all experiences we only shared after college graduation.

In a chance to reminisce about our college days together we headed to our favorite breakfast spot of PJ Pipers in Cedarburg. Tiffany ordered a Skillet with Crepes, and I had the Cowboy Cakes. http://www.pjpiperwi.com/

As we walked past our favorite shops awaiting their opening for the day we ended up down the street at the Oil Sprig https://theolivesprig.com/ and Cedar Creek Winery https://cedarcreekwinery.com/. Since the pandemic has kept festivals shut down, I was able to score a few bottles of Strawberry Blush which typically sells out each year at Strawberry Fest in Cedarburg.

It is wild to see how we change from our years of college into adulthood. As I reflect on our college years I wish we would have explored the area more, going to local establishments and parks. Thankful for the opportunity the two of us have to explore the area still as adults. It is so fun to have nostalgic moments and create new adventures together. 
Next we set ourselves out to locate some beautiful fall colors in local areas as we kept seeing them from the roadside. Cedarburg Covered Bridge didn’t have a lot of colors on the grounds but we did get to capture some pictures of history.  https://www.co.ozaukee.wi.us/2241/Covered-Bridge-Park

Our adventure moved us to the back of an apartment complex after we saw the colorful trees from the highway. We pulled in and walked behind the construction area to a quiet wooded area nestled in the back.

As our day was coming to an end I was insistent I was stopping at Trader Joe’s before leaving the area. On our way to Bayshore, Tiffany brought up the potential for us to stop at Milwaukee’s Original Oktoberfest in Glendale, Wisconsin. I searched online to find out the Sunday special was free admission and half off liter bier. We are two girls who can’t turn down good beer, so we headed that way. Once we finished we headed to Total Wine and Trader Joe’s where I picked up all the staples that I had longed for. In true CUW alumni fashion we ended up having dinner at the Highland House with the monumental chips, dip and margaritas. We shared the Chinese Tootsie Rolls, Tiffany ordered Shrimp Tacos, and I tried the Crispy Taquitos which were outstanding and I have been craving since. https://highlandhouse.com/

In case you don’t know, Tiffany and I met our freshman year of college, lived together our junior year and will continue to be lifelong friends. I reminisce on our past years of friendship and look forward to the many more to come. Over the last few years we have visited each other in each location of our lives, but it was so fun to be back in our old territory together experiencing the new and cherishing the old. I am so thankful for friends like Tiffany, where we can go a few months without talking, get together and all things fall right back into place. When you find these people in your life, hold on tight and don’t let go.

went to cafe zupas with my coworker ava and got this kale and quinoa salad which was surprisingly delicious considering it had kale. I ate it with this veggie soup and also drank this pomegranate, honey and green tea infused water. 10/10

We found heaven on earth and it's called Cafe Zupas. We always wanted to try it over at Arrowhead and they just built a new one over here in Avondale. I suggested checking out the new shopping area across from Costco. I'm so glad we did. It was the last day of their fall seasonal menu. We had delicious turkey cranberry and brie sandwiches with German sausage potato soup and a pumpkin spice creme brûlée. #yummy #cafezupas
