AOC Gaillac La Croix des Marchands Grape varieties: 100% Mauzac Harvest and vinification : The “Methode Ancestrale” is a sparkling wine production method using yeasts and sugars of the grapes only, as opposed to the "Traditional Method" (Champagne, Cava, Prosecco,…) approach where selected sugar and yeast is added. The first fermentation is slowed down and paused by the cold, retaining a sufficient sugar content. The second fermentation in the bottle, which generates carbon dioxide bubbles in the wine, is practiced using only sugar that remained after the first fermentation. It's always a great experience to watch wines of over 100 years old. Generally yields of vines reduces as they get older, but they produces very concentrate fruit flavours. Very often wines of this age hardly produces any fruit at all but at Chateau Haut Bailly, the yields are significantly good with a remarkable quality of fruits and exquisite flavours.
