Steve Murphy: Steve shows up with a freshly made buffalo chicken dip. Steve *is* a pretty good and diligent cook, he just rarely gets many opportunities to show it off! He’s the most try-hard motherfucker at the potluck. Peña, who brought the tortilla chips for dipping, is laughing at him.
Donald Pierce: He actually thought a *lot* about what he was gonna bring, and then got distracted with work, and then distracted thinking about his outfit, and before he knew it it was too late. Pierce ended up making an emergency trip to the store to get soda. It’s Mexican cola though, so, not the worst!!
Cap Hatfield: Cap made his mom’s mac & cheese recipe! It’s… not great. But it’s pretty filling! Cap was also considerate enough to bring plastic utensils and paper plates to go with, which really makes him the MVP.
Clement Mansell: Clement, generously, brings a little baggie of cocaine and spends the potluck trying to find people to take lines with him. The Corinthian and Ty take him up on it.
The Corinthian: He brings a very lovely charcuterie board, complete with a selection of artisanal cheeses, locally-produced soppressata, and a selection of spreads! Everyone is very weirded out by how enthusiastic he is about the pate. Sure, it’s good, but does he have to eat it by the spoonful?
Eli Klaber: He spent the whole morning baking cinnamon roles from scratch!! Half of them were burned and unsalvageable, but he swears that the five that survived are probably really good. Y’all can just divvy them up, yeah?
Ty Shaw: Ty comes hauling a keg of beer!! Bad news though - it’s Bud Light.

History of National Guacamole Day
While the day itself doesn’t exactly seem to have any particularly poetic origin, National Guacamole Day is a terrific excuse to indulge in the tastiest of dips!
However, guacamole itself seems to have its origins with the Aztec people group at some time before the 16th century. Early guacamole recipes only included mashed avocado and it became very popular due to the excellent health benefits of the avocado. Adding in the tomatoes and onions came later, which was a natural development since those are also native to the Americas. Eventually the lime juice was added, which originated in the Middle East but made its way west with the arrival of Christopher Columbus.
The word, guacamole, originally came from the word “āhuacamolli” which translates literally to mean “avocado sauce”.
Not only is it a great addition to a savoury spread, it’s also good for you! This is because “guac” is made from avocados, which are nutrient dense and packed with healthy fats that help the body lower bad cholesterol, all of which contributes to having a good ol’ time and living as long as possible.
How to Celebrate National Guacamole Day
Celebrating this day is easy and can be filled with fun as well as delicious flavors! Enjoy the day with some of these ideas:

The World Record for Guacamole was over 3 tons. Created by a wholesaler in Jalisco, Mexico, this batch of guac took more than 800 people to make it. It contained more than 25,000 avocados, 3,500 tomatoes and 3,000 lemons.
Remember–it’s not necessary to only indulge in this tasty treat on National Guacamole Day. After all, it’s good for you all year round, this is just an extra special reason to enjoy it!

Long post: trigger warnings for talk about body image, self-worth, and food. Let me know if I missed any.
Man, I shared a recipe I made in my sibling group chat and my younger sister just went off about all the things she would switch to make it healthier. I think it happened when she was diagnosed with celiac disease but she’s become so obsessed with swapping out different foods for “low fat” and “more nutritional value” instead of just enjoying food/recipes for how they are. I was talking about a dipping sauce I got recently to try and how I like it, and she went into “yeah, well I use plain Greek yogurt and some buffalo sauce for lower fat and higher protein” and “you can use low-fat Greek yogurt for a lot of things. Instead of dipping the chicken into an egg, use the yogurt. It’s lower calorie and more protein to keep you fuller” and I appreciate her trying to share new recipes or different methods of cooking, but I hate how she seems to make these suggestions when I talk about cooking something but won’t make similar comments when my (thin and physically fit) brother talks about what he makes. I know I’m fat and it’s been taking me a long time to feel okay about it, but I’m actually starting to. I’m starting to face the fact that I’ll never be thin and that’s okay. My weight/body type/appearance doesn’t really matter. Fat is not synonymous with bad, ugly, gross, terrible, awful or disgusting. Fat is just an adjective, a way to describe myself like short, tall, brown hair, whatever.
This went a bit further than I meant it and turned into a bit of a rant, but I wanted to get that out. Anyways, if you’re interested, two books on the topic that have really shifted my values and the way I see things and people are;

In honor of all the impending Super Bowl parties, here's my take on the famous Buffalo Chicken dip!

Buffalo Chicken Dip Recipe
2-3 cups shredded chicken, fully cooked
1 8oz pachage or cream cheese
1/2 cup of shredded cheese of choice (I used a mix of colby jack, sharp cheddar, and mexican)
1/2 cup hot sauce of choice (Frank's Red Hot is a popular choice; I used Crystal)
2/3 cup of blue cheese (ranch dressing can be substituted)
Salt and pepper to taste
Onion powder or flakes to taste
Mix together in an ungreased quart sized baking dish sized 9x9 to 10x10 or equivalent. Ceramic works best.
Bake in oven at 350 degrees for 20 minutes
Don't forget some tortilla chips!

A Hotel, a Café, and its Must-Try Noodles and Wings

Aside from being the first art hotel in Makati City, U Hotels is home to El Mundo Café which offers two dishes everyone should try: Just Noodles and Buffalo Chicken Wings.
I first experienced El Mundo Café's goodies when the owner, Carter Yu, saw my post about using Chef Decker Gokioco's (of White Flower Tea House and OK, Bob at The Grid Food Market) Ahma’s Chili Sauce and he ended up surprising me with a giant feast that’s good for a small army.

I really love Just Noodles, a Fookien-style house original recipe from the Carter’s family. It’s got chewy, bouncy noodles and fragrant shallots topped with lots of minced pork. It's crowned with a crusty fried egg with a gloriously jammy yolk, adding another layer of creaminess and flavor to the already delicious platter. It’s a hearty noodle dish that goes so well with chili sauce and we (yes, the café and I) are highly recommending homemade Ahma’s Chili Sauce by Chef Decker. It’s not crazy hot, so you can still enjoy the actual flavors of the chili while also feeling a little bit of the heat.
Since he sent me a giant tray of Just Noodles, I share some with my sister and she told me how much she enjoyed it... and how Papa would’ve also liked it if he’s still with us (which is so true because Papa loooves great noodles).

They also sent a tray of their signature Buffalo Wings. Their version of this famous bar chow features crispy fried chicken wings tossed in house-made buffalo sauce until every nook and cranny of the wings are glistening with fiery goodness. It looks ominous with all those red chili bits, but it’s actually not super spicy! You can still enjoy a little bit of acidity, a little bit of sweetness, lots of savory flavors. The wings are served with their garlic ranch dip that cools and flavors the chicken at the same time. This is literally finger-lickin' good.

And since it’s a café, of course they also sent their cold Mocha and Latte brews! It’s made from Dark Happy Soul, El Mundo Café’s house blend that’s composed of Arabica beans from Brazil and Vietnam. It’s smooth, rich, not too sweet, and it doesn’t have that weird sour aftertaste that some coffees tend to have (which I find off-putting). These babies are perfect for me because I work the graveyard shift and it’s too hot to drink coffee, so iced coffee is per-to-the-fection.

History of National Guacamole Day
While the day itself doesn’t exactly seem to have any particularly poetic origin, National Guacamole Day is a terrific excuse to indulge in the tastiest of dips!
However, guacamole itself seems to have its origins with the Aztec people group at some time before the 16th century. Early guacamole recipes only included mashed avocado and it became very popular due to the excellent health benefits of the avocado. Adding in the tomatoes and onions came later, which was a natural development since those are also native to the Americas. Eventually the lime juice was added, which originated in the Middle East but made its way west with the arrival of Christopher Columbus.
The word, guacamole, originally came from the word “āhuacamolli” which translates literally to mean “avocado sauce”.
Not only is it a great addition to a savoury spread, it’s also good for you! This is because “guac” is made from avocados, which are nutrient dense and packed with healthy fats that help the body lower bad cholesterol, all of which contributes to having a good ol’ time and living as long as possible.
How to Celebrate National Guacamole Day
Celebrating this day is easy and can be filled with fun as well as delicious flavors! Enjoy the day with some of these ideas:
Eat Guacamole
Even if there’s no particular reason, other than it being an awesome day, go ahead and celebrate National Guacamole Day by picking up some at the store! Don’t forget to grab something to put it on, such as a bag of tortilla chips, a selection of veggie sticks (carrots, celery or cucumbers), or a piece of tasty toast. Eat it with french fries, slather it on a quesadilla or use it as a filling or garnish for tacos. The options for eating guacamole are virtually endless!
Learn to Make Guacamole at Home
Freshly made guacamole is the most delicious part of this day! All it takes is buying some ripe avocados and making it from scratch at home. Blend the avocado, season with salt and it’s done!
Of course it might be even tastier to add a bit of flavor to it, such as lemon or lime juice for some zesty citrus notes. Or perhaps some tomato, garlic and onion to expand the palette, the choice is completely personal.
Find Creative Ways to Eat Guacamole
Many people associate guacamole only with corn tortilla chips. But there’s so much more to it than that! For those who are trying to get a bit healthier and forego the chips, or for those who are just looking for a bit of adventure, guacamole has a lot of creative ways it can be used for snacks and meals. In addition to using it as a dip, try out these ideas for guacamole:
Spread It On a Sandwich. Guacamole makes a great sandwich condiment. Simply pile it on top of a hamburger or chicken burger for a tasty treat. Guac is also tasty when used as a healthy addition to a grilled cheese sandwich.
Top a Pizza With It. That’s right! A boring pizza can be made delicious with guacamole. Some people like to combine it with Buffalo sauce and chicken as well.
Stuff Mushrooms with It. Keep it vegetarian by filling hollowed out mushrooms with guacamole and topping with a spicy Buffalo sauce. Yum!
Make It Into a Salad. Guacamole can make a healthy and delicious base for a salad. Create a Greek fusion by adding feta cheese, or turn it a bit sweet by piling it up with chunks of watermelon or peaches.
Have a National Guacamole Day Party
Invite friends and family over for a little get together with the intention of celebrating National Guacamole Day. Give a nod to guacamole’s origins by decorating and dressing up in costumes that channel Central American culture.
Of course, the table of refreshments will need to center around the guest of honor–guacamole! But it can be filled with all sorts of other south of the border treats as well. Try offering some tostadas, chips & salsa, taquitos or quesadillas. Toss in some churros or flan for a delicious dessert.

Hass Avocados were banned in the US. In an effort to control pest problems, the beloved Hass Avocado was once banned in the United States. From 1914 to 1997, it was illegal to import these delicious fruits. Everyone is much happier now that they are legal again.
The World Record for Guacamole was over 3 tons. Created by a wholesaler in Jalisco, Mexico, this batch of guac took more than 800 people to make it. It contained more than 25,000 avocados, 3,500 tomatoes and 3,000 lemons.
