There's a potluck after church this weekend, and I volunteered to bring cole slaw and pasta salad. But then when I was looking through Bravetart a few days ago (unrelated reasons), I saw a recipe for "DIY banana pudding," with only four ingredients:
8 Bananas
1 recipe vanilla mousse (page xxx)
1 recipe homemade Nilla wafers (page xxx)
1/2 recipe marshmallow meringue (page xxx)
(optional) malted barley butterscotch (page xxx)
So obviously I had to try that. I made the Nilla wafers a few days ago (easier than I expected!). Tonight I made the mousse (a two-part process: first vanilla pudding, then fold in whipped cream) and the butterscotch. That just leaves the meringue and assembly tomorrow after work, along with the cole slaw and pasta salad.

bravetart week 3 pt 1: honey roasted peanut butter cookies
where i come from, america, the mother land, peanut butter is a staple diet. children eat it almost daily and i know outdoorsy folk who will go hiking and camping and live off a jar of peanut butter for their entire trip (although i think that says more about the calories in peanut butter). in the uk though, this is not the case. peanut butter is an incredibly divisive food so much so that i had a coworker retch when i told her what type of cookies these were. but brits have bad taste. this is nothing new nor is it somthing up for debate. another thing that isn't up for debate is that these cookies turned out fantastic. i think they're my favorite bravetart recipe so far. crisp on the outside, chewy on the inside. structurally sound and pair nicely with a glass of milk
bravetart week 3 part 2: glossy fudge brownies
brownies are a point on contention in my home. i am team cakey brownies while my girlfriend is team fudgy brownies. think of "the butter battle book" but something even unhealthier. personally, i think fudgy brownies are an awful in between of cakey brownies and brownie batter - the worst of both worlds. however, since this recipe is for fudgy brownies, i will be taking a step back and leaving the judgement to my girlfriend. here are her thoughts:
"10/10 fudgy brownies aka the superior type of brownie. lovely and moist but they still hold their structure really well. it's easy to undercook brownies in the quest for fudginess and just end up with warmed brownie batter but that didn't happen! although don't get me wrong i would also devour uncooked brownie batter"

Blankets by Craig Thompson Beautiful graphic novel about coming of age in the midwestern US.
Bravetart: Iconic American Desserts by Stella Parks It’s a damn good cookbook and a wonderful history of American desserts. Parks’ research and introductions to the foods are as worth reading as the food is worth making.
Cat’s Eye by Margaret Atwood Probably the reason I imprinted on narratives of middle-aged protagonists reflecting on their pasts.
The Fifth Form at St. Dominic’s by Talbot Baines Reed The platonic ideal of my interest in the public school novel.
I Love Dick by Chris Kraus Absolutely perverse recounting of a woman’s sexual obsession with an uninterested man, and I mean that as high praise. Makes the private into the public in a way that seared me.
The Little Schemer by Daniel P. Friedman A textbook written like a children’s picture book, complete with illustrations, about one of the most beautiful programming languages of all time.
Middlesex by Jeffrey Eugenides A formative exposure to gender identity as changeable and imperfect.
Pond by Claire-Louise Bennett Quiet, mundane, wonderfully descriptive recounting of a life in rural Ireland.
The Sandman (collected series) by Neil Gaiman and various artists Nostalgia in a 10-volume series.

Trail Mix cookies from Bravetart.
Recipe:
Dry mix:
3 oz AP flour, sifted
2 1/2 oz oat flour (I measured out an equal weight of rolled oats and ground them in my spice grinder)
6 oz rolled oats (not instant)
1 1/2 oz steel-cut oats
5 oz pecan pieces, toasted
6 oz dried cherries or cranberries
6 oz M&Ms
Combine all dry ingredients and set aside.
Wet mix:
6 oz butter, softened (1 ½ sticks)
2 oz peanut butter
5 oz light brown sugar
3 ½ oz white sugar
1 ½ tsp kosher salt (recipe calls for Diamond Crystal, but I use Morton's without changing the amount)
1 ¼ tsp baking soda
½ tsp ground cinnamon
1 tbsp vanilla extract
1 egg, straight from the fridge
Add all of the wet mix ingredients except the egg to the bowl of a stand mixers. Mix on low to moisten, then turn it up to medium and beat for 30 seconds. With the mixer running, add the egg and beat until incorporated, stopping to scrape down the sides of the bowl if necessary. Reduce the speed to low and add the dry mix, and mix until a stiff dough is formed.
Arrange 32 1-ounce (2 tbsp) portions onto two baking sheets lined with parchment paper, leaving 2 inched between portions. Flatten them into ½-inch thick disks. Finish by sprinkling on coarse salt or pretzel pieces. Bake at 350°F until the edges are just golden and the middles are pale and steamy. Remove from oven and cool on the baking sheets for 10 minutes.

bravetart week 2 pt 1: triple oatmeal cookies
a bold choice to go with a bland choice but i made the oatmeal cookies and they actually turned out pretty good. they toe the line between "pretty good for an oatmeal cookie" and "an actually pretty good cookie". the original recipe used cranberries and pecans but i substituted those for apricots and pistachios and theres not a doubt in my mind that that was the right choice. this is just very unhealthy granola at its core. if you do make these though please be aware that the dough does looks like shit from a butt
bravetart week 2 pt 2: snickerdoodles
now since i am bringing these into the office, im not dumb enough to only bring oatmeal cookies. what a buzzkill thatd be. although these snickerdoodles spread out and were thinner than most are, i was still impressed by them. my boss, this grown women, actually asked me what a snickerdoodle was though. "now what did you call these?" it was just very bizarre to me that they werent more known, but it could be an american vs scottish thing. but i would use some variation of this recipe in the future (like a cream or tartar one according my gf, the all-knowing praise be) because this recipe is heavy on the coconut oil and you can taste it.
anyway, ive been watching a lot of what we do in the shadows (tv series) and playing a lot of dead cells lately. theyre not bad

As a Texan, I can think of 3 desserts that are quintessentially Texan
The Pecan Pie. The Pecan tree is the state tree of Texas. My neighbor growing up had pecan trees in his front yard, but he was too old to go pick the Pecans up himself. So my little brother and I would pick them up, my mom would bake them into pies, and we would make sure to give the neighbor and his family some.
Sopapillas. These delightful Tex-Mex treats are little squares of fried dough, topped with cinnamon sugar and served with honey, Dulce de Leche, or vanilla ice cream (preferably Blue Bell homemade vanilla).
Texas Sheet Cake. This is a chocolate cake, flavored with cinnamon, and topped with an icing that’s basically boiled fudge. Bravetart has my preferred recipe

sorry, I didn't see about you not eating ham when I recommended a Cuban. That's valid. I mostly just had fun writing about sandwiches for a bit instead of working on my thesis.
If you wanted to explore more, there's a cookbook called Bravetart that explores classic American baking recipes and the history behind them. I am both a baker and a historian, so it's my jam (pun intended).
