Riddle me this. | In the method champenoise or method traditionale, in South Africa, known as the method cap classique a second fermentation takes place in the bottle. The process of 'remuage' or riddling, causes the sediment (which consists of Yeasts and other ruffling aids) to lodge in the neck of the bottle, along the crown cap in preparation for disgorgement. Riddling involves gradually tilting the neck of the bottle (‘ sur pointe’), while rotating it by small increments, clockwise and anti-clockwise. As the angle of tilt increases, the forces of gravity draw the sediment into the neck.
