I am filled with gratitude that the Rev. Chili Cilch share her knowledge of the remarkable Harbor Breakfast restaurant a couple years back. The restaurant has never disappointed when it comes to service and amazing breakfast options. This morning I ambled down from La Pensione to the restaurant full of anticipation of a tasty breakfast I would find there. I settled on the “Shrimp Diablo” with 3 Eggs scrambled with Smoked Bacon, Green Onions and Roasted Red Bell Peppers topped with 3 seasoned Jumbo Shrimp and Guajillo Salsa with a side of gravy to go with the biscuit. I kept it simple with a drip coffee and real cream. This was maximum comfort with a twist. Those fat spicy shrimp were TDF. The biscuit and gravy was like a Deep South hug. Biscuits and Gravy Burger, but slightly healthier.

Most unhealthy-ness from biscuits and gravy and burgers is the grease that comes attached to it, which contains saturated fats. While this does contain most of the flavor too, it's not good to eat it in large amounts. So this recipe goes to make something pseudo-keto, pseudo-healthy, pseudo-biscuitandgravy.

What well need is; Hamburger, Tomato, milk, Olive Oil, flour, dried potato flakes, seasoning. I like salt+pepper+cayenne pepper, but you can use garlic and cumin, or parsley, or cilantro, or whatever you enjoy to be your burger seasoned like.

We cook the hamburger in patty form to medium->medium well. Make sure the internal temperature raises to [insert food safe temperature here]

Your hamburger should be pre-seasoned, but what ever you enjoy.

After that's done, we cook a thick slice of tomato in the grease, until the edges reach that golden brown color, and the tomato is nice and hot.

And then throw that on the burger.

Next, we dump the grease, and clean the pan, and mix the seasoning with a little bit of flour, and a little bit of mashed potato flake (or just one or you'd like to go *more keto*) and seasoning and stir well

Black pepper seasoning works best with the roux were making. Since it'll become a white gravy.

Add the milk, it should still look like milk. After mixing, just with seasoning bits. If it becomes to thick, you can add water or more milk.

Pour the oil in your pan, twice the milk mixture to the oil ratio.

Stir gently on low heat until the ingredients amalgamate into a gravy consistency. If it's too liquid at this stage or the oil isn't emulsifying; you can add more starch or flour, just remember it will thicken when you take it off the heat.

Throw some pickle chips or relish on your burger, then pour the sauce over the whole thing.

Remember; I didn't say it was healthy, I said it was "Healthier".
