Gluten free success!! Conversion of my 'avocado only' made cakes (no dairy, no eggs) using gluten free flour and the results are great! Still light , fluffy and taste the same as with normal flour. My cakes are so decidedly different from the ingredients in a normal cake that I have given them the name "Smittens" - a little of what you fancy goes a long way! Choosing a great tasting cake that suits their nutritional needs is a serious business!! But as you will see from my other posting, they were extremely happy to be able to enjoy a tasty treat!!
